HUNGARIAN BEEF GOULASH WITH SOUR CREAM AND CHIVE DUMPLINGS (COOKING FOR 2)
Tender cubes of beef are cooked in a hearty sauce of onions and peppers, seasoned with sweet Hungarian paprika and topped with dumplings rich with sour cream and chive flavor.

Steps:
- In 10-inch skillet, heat oil over medium-high heat. Season steak with salt and pepper; add to skillet. Cook 2 to 3 minutes, turning cubes, until lightly brown on all sides. Transfer to plate; reduce heat to medium.
- Add bacon to skillet; cook and stir 2 to 3 minutes, until just beginning to brown. Add onion, bell pepper, tomato paste and garlic; cook about 5 minutes, stirring occasionally, until vegetables soften. Add paprika; cook about 1 minute or until fragrant. Add broth; reduce heat to medium. Cook 5 minutes.
- Meanwhile, in small bowl, stir Bisquick™ mix, 1/3 cup sour cream, the milk and chives.
- Add browned beef to goulash. Drop dumpling dough in 6 generous tablespoonfuls on top. Reduce heat to medium-low; cover. Cook 8 to 10 minutes or until dumplings are cooked through. Serve with 1/4 cup sour cream on the side.

HUNGARIAN GOULASH (WITH DUMPLINGS)
I used to make this for my roommate and myself, and she loved it - now, it's my comfort food, especially in the wintertime. Remember to use a stock-pot - this makes a lot.

Steps:
- Warm the oil in the stock pot over medium heat.
- Add the onions and the garlic, stirring for about five minutes.
- Add the beef, and cook until mostly brown (it'll continue to cook in the stew).
- When the meat is mostly brown, add the can of tomatoes, the paprika, the water, and cubes of beef bouillon (I suggest crumbling it before hand).
- Cover and increase heat until it boils.
- When it boils, decrease heat to a simmer, cover, and let simmer for 1.5-2 hours.
- Add the bell peppers and potatoes.
- Let the stew continue to simmer for 20 minutes.
- In the meantime, mix the flour, baking powder and salt in a mixing bowl.
- Add the milk, and stir thoroughly.
- Flour your hands and roll the dough into half-inch balls. It will be sticky!
- Drop the balls into the simmering stew, and wait until they rise to the surface.
- Enjoy!

HUNGARIAN GOULASH
This is my mother's recipe for goulash but I've made a couple of alterations to improve it, such as using beef broth instead of water and real Hungarian paprika instead of Spanish paprika. You can use Spanish paprika if Hungarian is unavailable, but it tastes much better with Hungarian paprika. It is also nice made with stewing veal. When I was a child, I liked this so much that I used to eat it for breakfast if there was any left over from supper!

Steps:
- Heat oil in a large Dutch oven and add stewing beef.
- Saute until nicely browned.
- Remove meat from pan with slotted spoon and put to one side.
- Add onions and cook until slightly softened and caramelized.
- Return meat to pan.
- Sprinkle meat and onions with paprika, salt and pepper.
- Add broth and bring to a boil.
- Cover and simmer for 1-1/2 hours or until tender.
- Mix flour with water to make a smooth paste and add to simmering goulash.
- Bring back to a boil and cook until the sauce thickens.
- Add sour cream and heat through.
- Serve over potato dumplings or egg noodles.

There are a lot of different recipes for Hungarian Beef Goulash, but this is our version -- we've made it many times over the years. I'm glad I can store the recipe here now -- my tattered old recipe card has seen better days.

Steps:
- Combine flour, sweet paprika, salt, hot paprika and black pepper in resealable plastic food storage bag. Add 1/2 of beef. Seal bag; shake to coat well. Repeat with remaining beef.
- Heat 1 1/2 tablespoons oil in Dutch oven over medium heat. Add one-half of beef; brown on all sides. Transfer to large bowl. Repeat browning with 1 1/2 tablespoons oil and remaining beef; transfer to same bowl.
- Heat remaining 1 tablespoon oil in same Dutch oven; add onion and cook 8 minutes or until tender. Add minced garlic cloves and cook for 2-3 more minutes, stirring often.
- Return beef and any juices to Dutch oven. Add broth, tomatoes with liquid, water and marjoram. Bring to a boil over medium-high heat. Reduce heat to medium-low; cover and simmer 1 1/2 hours or until meat is tender, stirring once.
- When meat is tender, stir in noodles and bell pepper; cover. Simmer about 8 minutes or until noodles are tender, stirring once. To serve, ladle into 8 soup bowls. Dollop with sour cream.

HUNGARIAN GOULASH
Rib-sticking comfort food. Nice and creamy. Make sure you have the mild sweet Hungarian paprika. It works out best. :)

Steps:
- Preheat oven to 325 degrees F.
- Dredge meat in enough flour to coat.
- Heat 3 tbsp.vegetable oil in large skillet and brown meat on all sides; drain and set aside.
- Spray 2 1/2qt.casserole dish with cooking spray.
- Combine meat, onion, bell pepper, garlic, pepper, paprika, thyme, and bay leaf in casserole, mixing well.
- Stir in tomatoes.
- Cover with lid or foil and bake at 325 degrees for 1 1/2 hours.
- Place sour cream in bowl.
- Stir some of goulash sauce into sour cream, mixing well.
- Stir blended sour cream back into goulash, stirring to incorporate.
- Bake 30 minutes more, or until meat is tender.
- Serve with cooked egg noodles.
