SAUSAGE AND EGG CASSEROLE RECIPE

Steps:
- Grease a 9" square baking dish then set aside.
- Place a large skillet over medium heat then add sausage. Cook sausage, crumbling until evenly browned and cooked through. Drain excess grease then set aside to cool.
- In a large mixing bowl, beat the eggs together with salt and half-and-half. Add green onions and cooked sausage then stir to combine.
- Cut the bread into 1" cubes then stir the bread cubes and shredded cheese into egg mixture.
- Spread mixture into prepared baking dish, cover with aluminum foil and chill in the refrigerator for at least 8 hours, or overnight.
- Preheat oven to 350 degrees and bake, covered, for 60 minutes. Remove foil and continue to bake until completely set, about an additional 15-20 minutes.

Steps:
- Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
- In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
- The next day, preheat the oven to 350 degrees F.
- Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

- Place croutons on bottom of greased casserole, top with 1 1/2 cups of cheese.
- Brown and drain sausage, put on top of cheese.
- Beat eggs with milk and seasonings, pour over top.
- Refrigerate overnight.
- Next Day:
- Dilute soup with 1/2 cup milk.
- Pour over and spread remaining 1/2 cup of cheese on top.
- Bake at 300 F. for 1 1/2 hours.

- Butter bread lightly.
- Place bread into 13x9x2" baking dish, butter side up, set aside. Cook and drain sausage, crumble. Spoon over bread.
- Sprinkle cheese over sausage. Combine eggs, half and half, and salt. Mix well and pour over cheese. Chill overnight.
- Remove from refrigerator for 15 minutes before baking.

OVERNIGHT CHEESE AND EGG CASSEROLE
This is a recipe from the wall of our old home. Which means, I have no idea where it came from after 7 years. I'm posting these because they are my favorites if they made it to the wall.

Steps:
- Place sausage in large, deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble and set aside.
- In a lightly greased 9x13 inch baking dish, arrange the croutons in a single layer. Layer with all cheeses and top with cooked sausage.
- In a large bowl, beat together the eggs, half-and-half, milk, mustard, onion, salt, and pepper. Pour into the dish over the sausage.
- Cover, and refrigerate overnight.
- The next morning, bake in an oven preheated to 350°F for 45 to 60 minutes.
- Let sit for 20 minutes before serving.

- Coat nonstick skillet with cooking spray at medium-high heat for 1 minute.
- Add sausage, fennel, oregano.
- Cook until brown, then transfer to paper towel and set aside.
- Coat an 8-inch square baking pan with cooking spay and line the bottom with cubed bread.
- Sprinkle meat over bread.
