My great-grandma's recipe. Always a favorite at Thanksgiving dinner. Worth using fresh onions instead of frozen.

Steps:
- Bring water and salt to a boil in a small saucepan; cook onions in the boiling water until just tender, 5 to 10 minutes. Drain, reserving 1/2 cup water in saucepan, and return onions to pan. Add butter to onions.
- Mix milk and quick-mixing flour together in a bowl; add to onion mixture. Cook and stir over medium-low heat until thickened, 10 to 15 minutes. Stir in more quick-mixing flour if mixture is too thin.

CREAMED VIDALIA ONIONS
Steps:
- Preheat the oven to 350 degrees F. Melt 4 tablespoons butter in a stoveproof gratin dish over medium-high heat; add 4 pounds Vidalia onions (cut into wedges) and cook 5 minutes. Add a pinch each of nutmeg, cayenne, salt and black pepper, then add 3 tablespoons white wine and simmer 2 minutes. Whisk 1 1/4 cups half-and-half and 3 tablespoons flour; stir into the onions and bring to a boil. Mix 2 tablespoons melted butter, 1 cup panko (Japanese breadcrumbs), 2 tablespoons chopped chives, and salt and pepper. Sprinkle over the onion, cover with parchment paper and bake 30 minutes. Uncover and broil until golden, 5 more minutes.

- Peel onions, and drop into boiling water. Cook until tender. Drain, reserving liquid. Set onions aside while you make the sauce.
- Melt butter or margarine in a saucepan over medium heat. Whisk in flour to make a paste. Mix together cooking water and milk. Add milk mixture slowly to the saucepan, stirring constantly, and cook until thickened. Add salt and pepper to taste. Add onions, and transfer to a serving dish.

CREAMY BAKED ONIONS
Parboiled onions are baked in heavy cream with fresh thyme, salt and pepper.

- Preheat the oven to 350 degrees Fahrenheit. Use the butter to grease the baking dish.
- Peel the onions and remove the tops and tails using a sharp knife.
- Add water to a large saucepan and lightly salt the water. Bring to the boil. Add the onions and bring back to boiling point. Reduce the heat and allow the onions to simmer for 20 minutes until tender.
- Remove the onions from the heat and drain. Allow to cool slightly before cutting the onions in half. Arrange the onion halves flat side down or cut side down in the greased baking dish.
- Place the thyme sprigs in different places between the onions in the dish.
- Pour the cream over the onions and top with a light dusting of freshly ground black pepper.
- Bake in the oven uncovered for 20 to 25 minutes until bubbling and turning slightly golden brown. Remove the thyme sprigs. Garnish with fresh parsley and serve warm from the dish.

- Saute red and sweet onions in 1 T. butter, stirring often, in a nonstick over low heat until softened, about 30 minutes, then transfer to a bowl and set aside.
- In same pan, saute leeks in 1 T. butter until softened, about 30 minutes, then add to onions.
- Saute pearl onions and shallots in 1 T. butter until softened, about 15 minutes, then add to onion mixture.
- Saute garlic in 2 T. butter for about 30 seconds, then add heavy cream. Cook until thickened, about 15 minutes.
- Combine onion and cream mixtures; pour into a 2-quart baking dish.
- Mix panko, parmesan, parsley, pepper and melted butter and sprinkle over onion mixture. Bake in a preheated 375-degree oven for 45 minutes to 1 hour until brown.

- Place the pearl onions into a medium-sized stockpot and add enough chicken stock to cover. Boil until tender, 8-10 minutes.
- Drain, saving 3/4 cup of the chicken stock to use later in the sauce.
- In a medium saucepan, melt the butter. Stir in the flour, salt and pepper until smooth. Cook, stirring, for 2-3 minutes until the flour has browned and starts to smell nutty.
- Gradually whisk in the cream, then add the reserved broth, whisking to keep the sauce smooth.
- Bring to a boil; cook and stir for 2 minutes or until the sauce starts to thicken.
- Add in 1/2 to 1 cup of the cooked onions, then take an immersion blender and quickly puree until smooth.
- Add in the rest of the onions and cook, on medium heat, until they are heated through.
- Stir in the nutmeg, season again with salt and pepper if desired, then place in a bowl and garnish with fresh parsley to serve.

CREAMED ONION GRATIN
This Creamed Onion Gratin is one of those timeless recipes that will always have a place at the Southern holiday table. If you've planned ahead, you already stored your surplus of spring Vidalia's to enjoy throughout the year. If not, any sweet onion will do. First, the onions are slowly caramelized to bring out (even more of) their ultra sweet flavor, and laced with sherry to add another dimension of taste. The tender onions are then tossed in a rich and creamy cheese sauce and topped with buttery panko crumbs. The results are baked into a bubbling golden brown casserole so good you'll want to eat it straight from the pan with a spoon.

- Preheat the oven to 375 degrees. Lightly grease a gratin dish or medium casserole.
- Cut off the root and tip of the onions. Slice in half length-wise and peel. Lay the cut-side of the onion down and slice length-wise into thick wedges.
- In a Dutch oven or heavy pot, melt two tablespoons of butter over medium heat. Add the onions and cook, stirring occasionally, until soft and caramelized, about 40 minutes. Add the sherry and simmer until it evaporates. Remove the onions from the pan and pour through a fine mesh sieve. Let them drain while making the bechamel sauce. (Draining the onions prevents a runny gratin because the onions will continue to release more liquid in the oven.)
- In the same Dutch oven, melt 3 tablespoons of butter over medium heat. Stir in the flour and cook for one minute. Add the scalded milk and cook, whisking constantly, until the sauce is very thick. Remove from the heat. Fold in the Gruyere and stir until completely melted. Season with salt and pepper, to taste. Add the onions to the cheese sauce and toss to thoroughly coat. Pour the onion mixture into the gratin dish.
- Melt the remaining tablespoon of butter and toss with the panko crumbs. Sprinkle over the top of the onions and bake until bubbly and golden brown, about 30 minutes. Serve warm.

- Fill a large stock pot with water and heat to a rolling boil.
- Add unpeeled onions and blanch for about 3 minutes.
- Drain and allow onions to cool.
- Re-fill stock pot with water and again heat to boiling temperature.
- Peel each onion by cutting the root end, not the tail end) and then squeezing the onion from its skin.
- Add the onions to the boiling water and cook until fork tender but not mushy.
- Meanwhile, stir together all remaining recipe ingredients in a medium saucepan and cook over medium heat, stirring constantly, until boiling. Continue to cook and stir about one more minute, until sauce has thickened.
- Combine the fork tender cooked onions with the sauce and sprinkle with paprika.
