1 pound fresh shrimp, peeled and deveined
3 tablespoons olive oil
1 tablespoon garlic salt
1 tablespoon dried parsley
1 teaspoon ground black pepper
¼ stick butter

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Arrange shrimp in a single layer in a stoneware baking dish. Drizzle olive oil over shrimp.
  • Combine garlic salt, parsley, and pepper and sprinkle over shrimp. Cut butter into small pieces and scatter over shrimp.
  • Roast in the preheated oven, watching carefully, until shrimp turn pink, 5 to 10 minutes.

1/4 pound (1 stick) unsalted butter
2 tablespoons good olive oil
2 tablespoons minced garlic (6 cloves)
2 teaspoons minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 large lemons
2 pounds (8- to 10-count) shrimp, peeled with the tails on
1 teaspoon coarse sea salt
4 slices country bread, toasted

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
  • Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.

I decided to try baking it in a marinade to see if it was as good as grilled and was pleased with the results. It was very quick, easy and delicious. 1 lb large shrimp, peeled & de-veined but with the tails on.
3 Tbsp unsalted butter
1/2 tsp salt
1 tsp black pepper (you may add red pepper if you like it spicy)
1 1/2 tsp minced garlic
2 Tbsp olive oil
1 tsp cajun seasoning (i used tony cachere's)
1 Tbsp lemon juice
1 Tbsp worcestershire sauce
1 tsp parsley flakes

Steps:

  • 1. In a large microwave proof bowl melt 1 Tablespoon unsalted butter. Add salt, pepper, olive oil, garlic, Cajun seasoning, lemon juice and Worcestershire sauce. Mix well
  • 2. Drop in all the shrimp and stir, coating the shrimp with the seasonings. Let shrimp marinate for 10 minutes.
  • 3. Spread shrimp on a baking sheet. Cook on 425 degrees for 15 minutes turning 1/2 way through the baking process.
  • 4. While shrimp are cooking, melt 2 tablespoons of butter with parsley. When shrimp come out of the oven, drizzle the butter/parsley mixture over shrimp.

1 1/2 teaspoon ground coriander, divided
1 1/2 teaspoon kosher salt, divided

  • Preheat oven to 425 degrees Fahrenheit. Line two baking sheets with parchment paper.
  • Cut the potatoes in half (or into bite-sized pieces if using larger potatoes). Shuck the corn and cut it into 2-inch pieces.

Remove the sheet from the oven and turn the corn. Add the shrimp and bake an additional 10 minutes until shrimp is cooked through.
  • Serve garnished with chopped parsley or chives, and a hearty squeeze from the lemon wedges. Allow to cool slightly. If desired, spread butcher paper or newspaper over your table and pour the shrimp boil on top - or serve right from the cooled baking sheets or a large platter. Enjoy by eating with your hands!

2 pounds jumbo or extra jumbo shrimp (16-21 ct) (peeled with tails left on and deveined)
2 tablespoons unsalted butter, (divided)
2 tablespoons olive oil, (divided)
1 tablespoon olive oil
1 tablespoon lime juice
1 tsp EACH chili powder, ground cumin, onion powder
1/2 tsp EACH smoked paprika, ground coriander, salt, pepper
1/4 teaspoon cayenne pepper
3 tablespoons unsalted butter
6 cloves garlic, minced
1 cup fresh cilantro, chopped ((measure before chopping))
3-4 tablespoons lime juice

Steps:

  • Add marinade ingredients to a large bowl and whisk to combine. Add shrimp and marinate at room temperature for 15-30 minutes or in the refrigerator for up to 60 minutes (no more!). Note, this is a wet rub marinade and will be thick without extra liquid.
  • Melt one tablespoon butter in one tablespoon olive oil in a large skillet over medium-low heat. Increase heat to medium-high. Once very hot and sizzling, add half the shrimp in a single layer and cook approximately 2-3 minutes per side, or just until opaque and cooked through. Transfer shrimp to a plate and repeat with remaining shrimp.
  • To the now empty skillet, melt 3 tablespoons butter over medium heat. Once melted, add the garlic and cook until fragrant, about 1 minute. Remove from heat and add the cilantro and lime juice and stir to combine. Add shrimp back to the skillet and stir to evenly coat. Taste and season with salt, pepper, cayenne and/or lime juice to taste.

1 tablespoon freshly-squeezed lemon juice (from about 1/2 small lemon)
1 pound shrimp
Canola or vegetable oil for the grill

Steps:

  • Preheat an indoor grill pan or outdoor grill to high. To cook the shrimp in the oven, preheat the broiler. If broiling, line a sheet pan with foil and coat with nonstick spray.
  • In a large mixing bowl, stir together the seasoning ingredients: garlic powder, salt, Italian seasoning, and cayenne. Drizzle in the olive oil and lemon juice and stir into a paste.
  • Add the shrimp and toss to coat. If using smaller shrimp, thread them on metal skewers or wooden skewers that have been soaked in water for at least 1 hour. Brush the grill or grill pan with canola oil. 1 medium red bell pepper
1 medium yellow bell pepper
1 medium sweet onion
12 or more raw shrimp, peeled deveined & tails removed
1 medium zucchini
12 to 15 cherry tomatoes
some vegetable oil
louisiana brand cajun seasoning (or your fave)

Steps:

  • 1. Gather all ingredients. Thaw shrimp if using frozen. Rinse and dry vegetables. Line a rimmed sheetpan with aluminum foil. Preheat oven to 425 degrees F.
  • 2. Prep vegetables: Remove stem and seeds from bell peppers; cut into 1 to 1 1/2 inch squares. Remove dry outer skin and root from onion; cut the onion into 1 inch chunks (approximately; see photo.) Slice off blossom end and stem of zucchini; cut into 1 inch chunks (approximately; see photo.)
  • 3. Insert flat stainless steel or bamboo/chopstick skewer into centers of the vegetables and through the head end and tail of shrimp, beginning with a square of bell pepper, then onion, shrimp, zucchini and cherry tomato, ensuring at least 3 shrimp per skewer; place on prepared sheetpan; repeat until all skewers are full (see photos.)
  • 4. Brush kabobs with oil to thoroughly coat each piece on all sides.
  • 5. Sprinkle all sides of kabobs with Louisiana Cajun Seasoning (contains salt, so extra is unnecessary.)
  • 6. Roast in preheated 425 degree F oven for 15 minutes; Turn kabobs over and roast for additional 12 to 15 minutes or until vegetables are tender to your preference (I usually go to 15.) If, at any point, you think they are getting too brown, reduce the heat to 400 degrees until done.
  • 7. **NOTE: If skewers are long enough, and your oven is large enough, place both ends of skewers up on the rim of the baking sheet; if not, lightly oil the foil in pan. There may be a little smoke from the vegetable juices on the foil when the oven is first opened. Sometimes, a couple of the tomatoes will fall off the skewers...oh well, they still taste good! :-) If grilling, follow steps 1 thru 5, allowing time for soaking bamboo/chopstick skewers in water for 15 to 20 minutes, if using; cook over indirect heat until veggies are tender and shrimp are pink and no longer translucent, carefully turning kabobs several times, then over direct heat just long enough to add a little char, if desired.
  • 8. Use a fork to slide the shrimp and vegetables off of the skewers. Serve as soon as possible. Great with just about anything! Try serving over rice or buttered noodles. Delish!
