- Preheat oven to 450 degrees F. Spray nonstick baking sheet with nonstick cooking spray.
- In large bowl, combine potatoes, 1/4 tsp salt, and sugar with cold water to cover. Soak 15 minutes; drain and blot dry.
- In another large bowl, toss potatoes with oil and paprika. Place in single layer on baking sheet. Bake, turning potatoes as they brown, until cooked through and crisp, about 45 minutes.
- Sprinkle with remaining 1/2 tsp salt. Serve immediately.

- Preheat the oven to 450 degrees F, lightly spray a baking pan with nonstick spray.
- Combine the potatoes and olive oil in one bowl.
- Combine the cumin, garlic powder, paprika, salt, cayenne, and cinnamon in another bowl.
- Sprinkle the spice mixture over the potatoes and toss well.
- Arrange the potatoes in a single layer on the pan.
- Bake 20 minutes, then turn the potatoes, and bake until crisp and cooked through, 8-10 minutes longer.
- For a little extra crispness, finish cooking the fries under the broiler.

- Soak cut potatoes in cold water for at least 30 minutes or up to an hour; drain.
- Preheat oven to 425 degrees.
- Coat a nonstick cookie sheet with cooking spray.
- Arrange fries on prepared pan, packed tightly together; drizzle with oil and turn potatoes until fries are well-coated with oil.
- In a small bowl, combine chili powder, turmeric, salt and sugar.
- Sprinkle half of spice mixture over fries; flip fries and sprinkle with remaining spices.
- Turn fries over several times to make sure spice mixture is evenly distributed.
- Spread fries out and bake, turning once or twice during baking, until desired degree of doneness, about 25-32 minutes.
- Serve with lime wedges and extra salt on the side, if desired.
- Yield 1/4 of potatoes per serving.

ZUCCHINI FRIES - 2 PTS. WW
If you like crispy, battered zucchini, this is the lowfat alternative for you!! I could not believe it, but they came out crispy!! The egg whites are the secret. The recipe below is straight off the WW website. The flour definitely needs MORE seasoning though - garlic? Cayenne? Salt after they're out of the oven? I will be perfecting this for our family's tastes, but these zukes are going into our regular rotation!! Like I said, if you are looking for a lowfat batter alternative that's is NOT like the "corn flake baked" variety....this is for you!

- Preheat oven to 500ºF. Coat a baking sheet with cooking spray. In a small bowl, mix together Italian seasoning, flour and salt. Place bread crumbs in another small bowl.
- Dredge a zucchini fry in flour mixture and then dip into egg whites; dredge in bread crumbs. Place coated zucchini on prepared baking sheet and repeat with remaining ingredients; liberally coat with cooking spray.
- Roast, turning once, until desired crispness, about 10 minutes.
- Serving size: about 8 fries.
- Variations.
- Use this technique with any summer squash or even eggplant. Works great with thick-cut onion rings or even green tomatoes.
