3-4 tomatoes (unripe, green)
1/4 cup all-purpose flour (or all-purpose gluten-free flour)
2 eggs (large, beaten)
1 tbsp lemon juice (lemon juice)
1/2 cup parmesan cheese (grated)
1/2 cup panko bread crumbs (or gluten-free panko)
1/2 tsp dried basil
1/2 tsp salt
1/2 black pepper
1/4 tsp dried oregano
1/4 tsp dried thyme
olive oil (for misting)

Steps:

  • Preheat oven to 400°
  • Prepare a rimmed baking sheet by spraying with cooking spray, or lining with parchment paper
  • In a small bowl, combine beaten eggs and lemon juice
  • Put the flour Into another small bowl
  • In a larger bowl, whisk together the panko, parmesan cheese, basil, oregano, thyme, salt & pepper.
  • Cut tomatoes into 1/4 inch slices
  • One by one, dredge each slice in flour, shaking off excess
  • Dip each flour-dredged tomato slice in the beaten egg mixture
  • Put the flour and egg coated tomato slice in the panko mixture, turning and pressing to coat with crumbs.

1 cup all-purpose flour
1 1/2 teaspoons fine sea salt
1 1/2 teaspoons Cajun or Creole seasoning
2 cups panko breadcrumbs
1 cup buttermilk
3 large unripe (green) tomatoes, sliced into 1/4-inch-thick slices
Nonstick cooking spray, for the tomatoes
1 clove garlic, minced
Fine sea salt
1 large egg yolk (from a pasteurized egg)
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1/3 cup extra-virgin olive oil
1/4 cup neutral oil, such as canola
1/2 teaspoon Cajun seasoning

Steps:

  • For the tomatoes: Preheat the oven to 375 degrees F. Line 2 sheet pans with parchment paper.
  • In a large flat bowl or pie plate, whisk together the flour, 1/2 teaspoon of the salt and 1/2 teaspoon of the Cajun seasoning. Put the breadcrumbs into a second pie plate and season with the remaining 1 teaspoon salt and 1 teaspoon Cajun seasoning. Pour the buttermilk into a third pie plate. Pat the tomato slices dry with a paper towel. Dredge them first in the flour mixture, shaking off any excess, then in the buttermilk, and then finally in the panko, patting to coat completely. Place onto the lined sheet pans, spaced about 1 inch apart. Spray the tops lightly with nonstick spray.
  • Bake for about 15 minutes, then flip the tomatoes, spray the tops lightly with nonstick spray, rotate the pans and bake until golden brown, an additional 15 minutes.
  • For the Cajun-spiced aioli: Meanwhile, sprinkle the minced garlic with salt and use the back of a knife to press it into a paste. Add the garlic and egg yolk to a stainless steel bowl along with the lemon juice and Dijon mustard; whisk to combine. Combine the oils in a container with a spout that will allow for easy controlled pouring. While whisking constantly, slowly add the oil in a slow steady stream (see Cook's Note). Stir in the Cajun seasoning and add salt to taste.
  • Serve the tomatoes on a platter with a bowl of the Cajun-spiced aioli.

1/2 teaspoon salt
pepper
4 cups fresh okra
nonstick cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • Spray a cookie sheet or jellyroll pan with non-stick cooking spray.
  • Combine corn meal, salt and pepper.
  • Wash okra; drain.
  • Trim ends and cut into 1/2 inch slices.
  • Dredge in corn meal mixture to coat well.
  • Okra should be moist in order for corn meal to adhere.
  • If necessary, rinse okra again in water before dredging.
  • Spread okra in a single layer in prepared pan.
  • Bake for 30 to 40 minutes or until crisp, stirring occasionally.

12 oz frozen cut okra, thawed
1 large green tomato, chopped in large pieces
3/4 c buttermilk
all-purpose flour
vegetable oil for frying
salt

Steps:

  • 1. Put the thawed okra and chopped tomato in a bowl and stir in the buttermilk. Cover and put in the fridge for at least 1 hour. When ready to fry, remove from the fridge and drain off the buttermilk.
  • 2. Put about a cup of flour in a Ziploc bag. Add a couple of handfuls of okra & tomatoes to the bag and shake to coat.
  • 3. With a deep fryer heated to 350 degrees, use your hand to get the okra & tomatoes from the bag, shaking off excess flour and carefully dropping in the oil. Fry just until golden and remove to a paper towel lined pan (make sure the pan is big enough so the okra doesn't lay on top of one another, this is key to the okra remaining crispy). Continue frying (adding more flour to the bag as needed), in batches. Once done, sprinkle lightly with salt before serving.

1 cup buttermilk
1 (16-ounce) bag frozen okra, thawed
2 cups peanut oil
1 (8.5-ounce) box corn muffin mix (recommended: Jiffy)
1 (10-ounce) can diced tomatoes and green chiles (recommended: Ro'tel)
2 tablespoons tomato paste
1 tablespoon Creole or Cajun seasoning
2 tablespoons heavy cream
Salt and freshly ground black pepper

Steps:

  • In a large bowl combine buttermilk and okra and let sit for 5 minutes
  • In a large cast iron skillet, heat peanut oil over high heat to 375 degrees F.
  • In a large bowl add the corn muffin mix. Using a slotted spoon remove the okra from the buttermilk and place it into the bowl with the corn muffin mix. Gently toss making sure all okra is well coated.
  • Carefully add half the breaded okra to skillet and fry for about 6 minutes, or until golden brown. Use a slotted spoon to remove okra to the paper towel lined plate. Fry remaining okra.
  • While okra is frying, in a large saucepan, combine diced tomatoes and chiles, tomato paste and Creole seasoning. Heat through over medium heat. Stir in heavy cream, season with salt and pepper and bring to a simmer. Remove to plate and top with fried okra. Serve immediately.

I got this recipe from my a neighbor who grows his own tomatoes and okra and he said his wife just came up with this one day when she got tired of eating plain okra. The ingredients can be modified to accommodate your tomatoes and okra.

1 cup green tomato, chopped small
1 cup okra, sliced into 1cm rounds
2 -3 tablespoons yellow cornmeal
1/2 teaspoon salt (to taste)
1/2 teaspoon fresh ground black pepper (to taste)
3 tablespoons olive oil

Steps:

  • Preheat oven to 400°F.
  • Pour about 1 Tablespoon of olive oil in the bottom of a caste iron skillet,enough to cover the bottom, may need more depending on the size of your skillet. Place the skillet in the oven while it is preheating.
  • Mix the first five ingredients together and add to the skillet once the oven has preheated.
  • Sprinkle with a little more oil and stir to coat all pieces.
  • Place skillet back in the hot oven.
  • Allow to cook 30-40 minutes, stirring occasionally and adding oil as needed.
  • When the okra and tomatoes have reached your desired crispness remove from the oven and place in serving dish. Skillet will stay hot and continue to cook if you do not remove food.

1 pound okra, rinsed and trimmed
3 tablespoons olive oil
1 1/2 cups finely chopped red onion
1 1/2 teaspoons kosher salt
1 tablespoon minced garlic
2 cups peeled and chopped tomato
1 tablespoon minced fresh ginger
1 teaspoon freshly ground grains of paradise* or black pepper
1/2 teaspoon freshly ground cardamom

Steps:

  • Cut each okra pod in half lengthwise and set aside. If there are any pods longer than 4 inches, cut them in half crosswise and then lengthwise.
  • Heat the olive oil in a 4-quart saucepan over medium heat until shimmering. Add the onions along with the salt and cook until they begin to turn golden, approximately 4 minutes. Add the garlic and cook for 1 minute longer. Add the tomatoes and bring the mixture to a boil. Decrease the heat to low and add the ginger, pepper, cardamom and okra. Stir to combine. Cook, uncovered for 20 minutes. Remove from the heat, taste and adjust the seasoning as desired. Serve immediately.
  • *Cook's Note: Grains of Paradise are available online and in specialty spice markets. They have a zesty flavor reminiscent of pepper, coriander, and cardamom.

1 lb fresh okra
2 large potatoes
1 medium onion, finely chopped
1/2 cup cornmeal
1 teaspoon salt
1/4 teaspoon ground pepper
1/4-1/2 cup bacon drippings (or you can use vegetable oil, but it won't taste as good!)

Steps:

  • Wash okra and cut off stem ends. Cut in about ½-inch pieces. Peel potatoes and chop into ½-inch dice. Put okra and potatoes in large bowl. Add chopped onion to mixture. Sprinkle cornmeal, salt and pepper over mixture. Stir until cornmeal is evenly distributed throughout mixture.
  • Heat drippings or oil in large skillet over medium heat (oil should be hot, but not smoking hot). Carefully spoon okra/potato mixture into hot oil. Fry, turning mixture occasionally, until potatoes are done and mixture is nicely browned, about 10 to 12 minutes. Drain on paper towels. Makes enough for 4 or 5 hungry people.

One of our summer favorites is fried okra. Years ago a friend told me to add chopped potatoes to okra when frying it, especially if I didn't have enough okra to fry for the number of people I'm cooking for, because the potatoes stretched the dish. Now I just add it because it's good. Sometimes, I substitute chopped green tomatoes for the potatoes.

- sliced okra
2 -3 - chopped potatoes
4 -5 tablespoon(s) cooking oil (i use coconut oil and some extra virgin olive oil)
- meal for breading
- salt and pepper

Steps:

  • Preheat oven to 425 - 450 degrees. Put oil in cast iron skillet and heat in oven enough for okra to sizzle. Meanwhile, slice okra into bite-sized pieces. Chop potatoes and add to okra. Sprinkle meal on potatoes and okra to coat. Add salt and pepper, to your taste. Let okra/potatoes set for a few minutes. Some moisture that comes from the veggies will help the meal adhere to the okra/potatoes. Stir a couple of times to better coat. Add okra/potatoes to hot oil, cook in oven until tender and crispy, about 20 minutes. Toward the end of cooking and the okra and potatoes are getting tender, if okra/potatoes are not browned and crispy enough for you, turn up heat and cook for a few more minutes, not long or it will burn. With a slotted spoon, remove okra from skillet and drain on paper towels. Immediately season with salt and pepper.

  • Slice green tomatoes into slices about 1/4 inch thick. In a bowl beat eggs with a whisk. In another bowl add salt and pepper and garlic powder to meal or flour whichever you decide to use for breading. There is really not much difference. The tomatoes in the picture have been done with both.
  • I usually have a bowl of flour and a bowl of cornmeal and I do about half the tomatoes in flour and half in meal. You can do the okra the same way or just use either one. Dip the tomato slices into the egg then the meal or flour. Have your oil hot and deep enough in the skillet to cover about half the tomato slice. Cook on one side, turn and continue cooking until a golden brown. Drain on paper towel.
