OVEN-FRIED CHICKEN
You'll swear this chicken, lower in fat and calories but still crunchy and delicious, was made in the frying pan. Using skinless chicken lowers the fat content by almost half and the calories by about a third. Whole-wheat breading adds a little fiber to an already-healthier oven-fried chicken.

Steps:
- Using a paper towel to grip, remove skin from chicken. In a large bowl, toss chicken with buttermilk, garlic, 2 teaspoons salt, and teaspoon pepper. Marinate at room temperature 30 minutes (or refrigerate up to overnight).
- Preheat oven to 425 degrees. In a food processor, pulse bread until coarse crumbs form. Transfer to a rimmed baking sheet and toss with oil. Bake crumbs until golden brown, 8 to 12 minutes, tossing twice. Transfer to a large bowl. Set a wire rack over sheet.
- Working with one piece at a time, lift chicken from buttermilk mixture (letting excess drip off) and dredge in breadcrumbs, pressing firmly to adhere. Transfer chicken to rack.
- Bake, without turning, until cooked through, 30 to 40 minutes, tenting with foil if browning too quickly.

Steps:
- Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
- Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.

Steps:
- In a small bowl mix together all the spices together, set aside.
- Then, using a large bowl, add in the almond milk, heavy cream, vinegar, eggs, and half of the spice mix. Whisk well until combined.
- Now add the chicken pieces into the marinade. Cover the bowl and place it into the fridge. Allow to marinade for 4-12 hours. The longer the better.
- When you're ready to begin cooking, preheat 2-3 cups of any high smoking point oil in a frying pot, or Dutch oven on medium heat. The oil should be deep enough to cover the chicken. You can also use a deep fryer. You must maintain an oil temperature of around 300 F. Use a food thermometer.
- Meanwhile, in a flat tray, mix the protein powder with the remaining spice mix. Add 1-2 tbsp of the marinade liquid and mix using a fork to create small lumps. These lumps will create more crispy edges when fried.
- Working with 2-3 pieces at a time, remove the chicken pieces from the marinade using tongs, and place in the coating mix, turn around to make sure they are completely covered with the protein powder mix.
- Check the temperature of the oil, and start frying when the temperature is about 300 F. Once you add the chicken, the temperature will drop to around 280 F. Maintain the temperature between 275-300 F. Anything more will cook the coating before cooking the meat on the inside.
- Chicken strips will take from 8-10 minutes. Chicken drumsticks will take between 15-18 minutes, and thighs around 17-20 minutes. You can measure the internal temperature of the chicken, it should be at least 165 F. Once cooked, remove from the oil and place on a dish with paper towels.

Steps:
- Clean the chicken gizzard and trim the excess fat and gristle. (Make sure to clean them one by one and remove any leftover dirty part.)
- Cut each gizzard into 2 pieces. (As each gizzard is cut open in the middle so it's naturally 2 connected parts in one gizzard.)
- Add the cleaned gizzards in a saucepan with water. Bring to boil, then lower the heat. Cover with a lid and cook for about 1 hour until tender. Then drain the water. (Check from time to time and make sure there's enough water. Add more if needed)
- In a small bowl, combine batter ingredients and whisk until combined.
- In another bowl, mix together Panko breadcrumbs and garlic powder.
- About 15 minutes before the gizzards are ready, heat oven to 400°F (200°C).
- Add the gizzards into the batter and toss to coat.
- Take each piece of the chicken gizzard with tongs and place it into the breadcrumbs mixture.
- Sprinkle with more breadcrumbs to cover completely. Then press down to adhere. Repeat until all pieces are coated.
- Arrange gizzards on the baking sheet and lightly spray with cooking oil spray.
- Bake for 15 minutes. Flip halfway through. (Broil in the last 1-2 minutes for a golden crispy crumb! Watch very carefully as it can be burned easily.)

Steps:
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
- In a small bowl, combine all ingredients for the tartar sauce and refrigerate until ready to serve.
- Cut filets into small pieces, if desired.
- In a shallow dish, combine the flour, salt and pepper. In two more separate shallow dishes, place the beaten eggs and the panko bread crumbs.
- To coat the fish, first dredge each piece in the flour mixture, then dip into the egg, and finally dredge in the panko, making sure the fish is coated on all sides. Place on the parchment lined baking sheet. Repeat this for each piece of fish.
- Drizzle the tops of the breaded fish with the olive oil. Bake at 375 degrees for about 20 minutes, or until the fish flakes easily with a fork. If you desire a more golden brown crust, once done, increase the heat and place the fish under the broiler for a couple of minutes.
