BAKED BEEF TACOS
This taco recipe takes classic taco ingredients and gives them a fresh approach by baking the shells upright in refried beans and tomatoes. The bottom gets soft, and the top stays crisp and crunchy. -Patricia Stagich, Elizabeth, New Jersey

- Preheat oven to 425°. In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning and 1 can of undrained tomatoes; heat through., Meanwhile, in a bowl, mix beans, 1/2 cup cheese, cilantro, remaining can of undrained tomatoes and, if desired, pepper sauce. Spread onto bottom of a greased 13x9-in. baking dish., Stand taco shells upright over bean mixture. Fill each with 1 tablespoon cheese and about 1/3 cup beef mixture. Bake, covered, 15 minutes., Uncover; sprinkle with remaining cheese. Bake, uncovered, 5-7 minutes or until cheese is melted and shells are lightly browned. Sprinkle with green onions.

Steps:
- Brown ground beef and drain.
- Add taco seasoning, refried beans and tomato sauce.
- Heat until blended.
- Preheat oven to 375 degrees.
- Spray a glass 9x13 pan with oil.
- Spoon taco filling into taco shells and stack them side by side in pan.
- When shells are filled, top each with shredded cheese.
- Bake for approximately 15 minutes, watching so they do not brown too much.
- Top with remaining ingredients, if desired.

Found this on Facebook. This taco recipe is the basic recipe using ground beef, beans, onions, tomatoes and cheese. These made 12 tacos, using corn tortilla shells. You can always substitute, ground chicken or ground turkey for the beef.

- Preheat oven to 400 degrees.
- In a large skillet, heat oil and add onion and garlic - saute for about 5 minutes until soft. Add beef and taco seasoning, cooking until meat is browned. Add beans and salsa. Mix well and let cook for a couple of minutes so that the flavors can meld and the mixture can thicken.
- In a large 9×13″ baking pan, line up all the taco shells. Fill each one with a couple of scoops of the beef mixture and pack down into the shell. Repeat until all the shells are filled. Add olives and tomatoes.Top each taco with shredded cheese.
- Bake for 8-10 minutes (or until all the cheese is melted).
- Serve with your favorite taco toppings (tomatoes, lettuce, olives, sour cream, guacamole, pico de gallo , hot sauce, or whatever you like!).

EASY OVEN BAKED SPICY CHICKEN TACOS
I added a bunch of hot peppers from the garden and skipped the taco seasoning. I also doubled the refried beans (it meant I had some filling leftover for more later, but I wanted more beans). I also used Ro-Tel. Really delicious. Glad I doubled this recipe before they disappeared. Recipe posted as written.

Steps:
- Preheat oven to 400. Spray 9x13 inch baking dish with cooking spray and set aside.
- Heat olive oil over medium heat in a medium skillet. Add onion to skillet and cook for 2 to 3 minutes, or until the onion is translucent and fragrant.
- Stir in the chicken, taco seasoning, tomatoes, and green chiles. Stir to combine fully. Reduce to simmer and allow to cook for 5 to 8 minutes.
- Place the taco shells in the baking dish standing up. Spoon a tablespoon of beans into the bottom of each taco shell.
- Top with the chicken mixture, almost to the top of each shell.
- Sprinkle each shell generously with shredded cheese.
- Bake for 12 to 14 minutes or until cheese is fully melted and the edges of the shells are browned.
- Remove from the oven and top with jalapenos, sour cream, cilantro, and salsa.

OVEN TACOS
I found this recipe on Pinterest and tried it with my family tonight. They loved it, but I must warn you. I don't use canned refried beans, I use http://www.food.com/recipe/simple-and-easy-homemade-refried-beans-460636. In addition, I didn't mix them in because only 1/2 of my family likes them. I layered them into 1/2 the tacos and because I put them on the bottom, those shells ended up a bit soggy. If you choose to separate them like me, I suggest you layer them on top of the meat! Optional Condiments- Lettuce (shredded) Tomato (diced) Salsa Guacamole Sour Cream Olives, sliced

Steps:
- To make taco seasoning, mix all of the ingredients together. Store in an airtight container.
- Preheat the oven to 400 degrees.
- In a large skillet brown ground beef and onion over medium-high heat. Drain off any excess liquid. Return to pan, add chilies, refried beans, tomato sauce, and taco seasoning. Mix well and cook for a few minutes if mixture seems runny.
- Spoon the taco meat mixture into the taco shells and place into a 9 x 13 inch baking dish, standing up. Sprinkle cheese over the top of the taco meat in each shell. Place into the oven and bake at 400 degrees for 10-12 minutes or until the cheese has melted and the tacos are heated through.
- Remove from the oven and top with any optional condiments for serving.
