CRISPY ZUCCHINI FRIES (KETO + LOW CARB)
These Crispy Zucchini Fries are breaded with almond flour, parmesan and spices and baked until perfectly crispy! The perfect keto, low carb side dish! Only 3 net carbs per serving!

Steps:
- Prehat oven to 400 degrees
- Slice two zucchini into fry shapes (as shown in video)
- Pat the zucchini dry
- Set up your breading station by setting up two shallow bowls and a baking sheet with a silicone baking sheet or sprayed well with cooking spray.
- In the first bowl combine the egg and the ranch dressing, mix until completely combined
- In the second bowl combine the almond flour, spices and paremsan, mix well.
- Dredge the zucchini in the egg then the almond flour crust and place on the pan.
- Lightly spray the breaded zucchini fries with cooking spray to help crisp them.
- Bake 15 minutes, turn carefully with a fork and bake for 10 minutes more or until golden brown and crisp.
- Dip in ketchup or ranch dressing!

- Preheat the oven to 200°C/390°F and line a wide baking pan with baking paper.
- Slice the zucchinis and cut long strips to make fries.
- Whisk the egg in a plate and season with salt and pepper. Be frugal with the salt since the parmesan cheese is already sharp and salty.
- Add the grated parmesan cheese in another plate.
- Dip the zucchini sticks in the egg to coat evenly and then toss into the grated parmesan. Press to coat evenly on all sides.
- Place the fries on the baking pan and drizzle with the olive oil.
- Bake in the preheated oven for 15-20 minutes, rotating the pan half way through, until golden brown and crispy. Serve warm.

- Preheat the oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.
- Slice the zucchini in half crosswise. Then, cut again lengthwise into sticks.
- Crack the egg in a shallow bowl and lightly beat it with the salt.
- Add the almond flour, parmesan, garlic, and herbs to a separate shallow bowl and stir to combine.
- Using one hand, dip a piece of zucchini in the egg wash, let excess egg drip off, and transfer to the almond/parmesan mixture. Using your other hand, press the zucchini in the almond/parmesan mixture to coat. Place on the baking sheet in a single layer. Repeat this process until all zucchini pieces are coated. Spray with olive oil.
- Bake for 25-30 minutes, flipping halfway through. Serve immediately.

KETO ZUCCHINI FRIES
Steps:
- Preheat your oven to 220C/420F. Line a cookie sheet with parchment paper and set aside.
- Slice the zucchini into fries. We find it best to cut them in half, then cut each half lengthwise into 2 or 3 slices, and each slice into 2-4 thick matchsticks.
- In a small bowl, whisk together the egg and cream.
- In another bowl add the almond flour, parmesan, garlic, herbs, and salt. Mix well.
- Bread each of the zucchini fries but first dipping in the egg mixture and then pressing into the almond flour mixture.
- Place the breaded fries onto your prepared cookie sheet and spray generously with olive oil.
- Bake for 25-30 minutes, turn over about halfway through.
- Serve hot with a side of Garlic Aioli, or Feta Cheese Dip!

ZUCCHINI OVEN " FRIES"
These are really good and have the added bonus of very little fat! We eat these often during the summer, sometimes in place of oven "fries" made with potatoes. You can add some cayenne pepper for a kick if you want. Give them a try and tell me what you think! EDIT!: Given some reviewers advice, I tried them again. 45 minutes was way too long for us, we just ended up with a crispy shell and no zucchini left. But 30 minutes was very good, keeping the taste of the zucchini, with one turn. The problem with the "flouriness" not cooking away, I've found that if you spray them VERY well with cooking spray it resolves this problem for me. I'm editing the recipe to reflect this.

- Lightly coat baking sheet with cooking spray.
- Trim zucchini and cut in half lengthwise, then slice into 1/4 inch wide sticks resembling french fries.
- Beat egg white with electric mixer until soft peaks form.
- Add zucchini sticks, tossing to evenly coat.
- In paper bag, thoroughly shake flour, cornstarch, salt, and garlic powder until combined.
- Drop in the zucchini sticks, 5 or so at a time, and shake gently to coat.
- Place all on baking sheet, spray all sides very well with cooking spray to moisten the flour, and bake about 30 minutes, turning once, or until golden brown.
