4 boneless, skinless chicken breasts
2 cups buttermilk
2 cups crushed herb-seasoned stuffing mix
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper
1 egg
1 tablespoon water
2 tablespoons peanut oil

Steps:

  • Place chicken breasts and buttermilk into a large resealable plastic bag, knead several times to coat chicken with buttermilk, and squeeze air from the bag. Seal and refrigerate at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Placed crushed herb-seasoned stuffing mix into a shallow bowl. Mix flour, salt, and black pepper in a separate flat dish. Beat egg with water in a bowl. Pour peanut oil into the bottom of a 9x13-inch baking pan.
  • Remove chicken from buttermilk, shake off excess buttermilk, and discard used buttermilk marinade. Dredge chicken breasts in seasoned flour. Dip each floured breast in egg, then press gently into stuffing mix to coat. Place coated chicken breasts into the pan with peanut oil.
  • Bake in the preheated oven for 25 minutes. Turn each chicken breast over and continue baking until chicken pieces are no longer pink inside and the coating is crisp, about 25 more minutes.

12 chicken thighs
3 eggs
1 cup all-purpose flour
1 cup Italian seasoned bread crumbs
salt and pepper to taste
1 teaspoon paprika
½ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
  • Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. Add the chicken to the dish and sprinkle with paprika to taste. Bake in the preheated oven for 30 minutes, then turn pieces over and bake for another 30 minutes. 1 1/3 cups rice-corn crispy cereal, such as Crispix
1 tablespoon canola oil
2 teaspoons kosher salt

1/2 teaspoon sweet paprika
1/2 teaspoon freshly ground black pepper
1/2 cup light mayonnaise
1 teaspoon Dijon mustard
4 bone-in, skinless chicken pieces, about 6 ounces each (see Cook's Note)

Steps:

  • Preheat the oven to 400 degrees F. Set a rack on a foil-lined baking sheet. Spray the rack generously with cooking spray.
  • Finely grind the bagel chips and cereal together in a food processor. Transfer the crumbs to a gallon-size plastic bag. Add the oil, salt, cayenne, paprika and ground pepper and toss to mix thoroughly. Whisk the light mayonnaise and Dijon mustard together in a medium shallow bowl.
  • Add the chicken to the mayonnaise mixture and turn to coat all the pieces evenly. Drop the chicken into the plastic bag, seal and shake until each piece is evenly coated. Place the coated pieces on the prepared rack. Spray the chicken pieces evenly with cooking spray.
  • Bake until the coating crisps and browns and an instant-read thermometer inserted in the thickest part of the pieces registers 160 degrees F, 35 to 40 minutes.

4 cups cornflakes
2/3 cup buttermilk
2 tablespoons Dijon mustard
1/4 teaspoon cayenne pepper
1 1/2 teaspoons paprika
3/4 teaspoon ground sage

Steps:

  • Preheat the oven to 425 degrees. Place a rack in a roasting pan or on a baking sheet.
  • Rinse the chicken in cold water; pat dry. In a wide bowl or on a plate, season the flour with salt and 1/4 teaspoon pepper. Dredge each chicken piece through the flour so it's fully coated, tap against the bowl to shake off excess flour and set aside. Discard the flour.
  • Here comes the part kids like best: Crush the cornflakes by placing them in a big resealable plastic bag, carefully pressing the bag to push out the air. Seal up the bag (with as little air inside as possible) and run over the flakes with a rolling pin. Open the bag and pour the crushed flakes into a wide bowl or onto a plate.
  • In a large bowl (big enough to dredge the chicken pieces), mix the buttermilk, mustard, cayenne pepper, paprika and sage. Give each floured chicken piece a good buttermilk bath and then roll in the cornflake crumbs.

1/2 cup kosher salt
1/2 cup brown sugar
4 cups hot water
4 cups ice cubes
10 chicken pieces, skin removed, pierced (breasts, thighs, legs)
3 cups all-purpose flour
2 -3 tablespoons black pepper
1 tablespoon kosher salt
1 tablespoon paprika
4 egg whites
1 cup buttermilk (can be reduced fat)
3 tablespoons vegetable oil

Steps:

  • Preparation:.
  • Dissolve salt and sugar for the brine in hot water in a large bowl or container. Add the ice and stir to cool the mixture. Prepare the chicken pieces by removing skin and piercing with a meat knife. Add to brine and refrigerate for 1 1/2 - 2 hours.
  • Preheat the oven to 400 degrees. Coat a 4-quart Pyrex baking dish with nonstick cooking spray.
  • Combine flour, pepper, salt, and paprika in a large, heavy bag. Remove chicken pieces from brine and pat dry. Place a few pieces of chicken in the flour mixture and toss to coat. Shake off excess flour and place on a rack. Let stand for 10 minutes.
  • Beat egg whites to soft peaks.
  • Add buttermilk and stir gently. Dip floured chicken pieces in egg white mixture and place back into the seasoned flour bag. Shake. Gently transfer to a cooking rack. Repeat with remaining chicken.
  • Heat oil in the prepared Pyrex dish by placing in the oven for 5 minutes.
  • Set prepared chicken meaty side down into the hot dish. Roast for 30 minutes. Remove dish from oven and carefully turn chicken pieces over. Return to oven and roast 20 minutes more. Let chicken set about 15 minutes before serving.

This is just a variation of the way my dad used to make fried chicken. Frying at high temperature for a short period of time (just enough to brown the outside) and then baking it to finish makes for incredibly tender and juicy chicken.

3/4 cup flour
1/4 cup seasoned bread crumbs
2 tablespoons Old Bay Seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1 -2 lb frying chicken (Skin on!)
oil (for frying)

Steps:

  • Heat oil on medium high heat in large skillet or frying pan (375 degrees).
  • Preheat oven to 300 degrees.
  • Combine dry ingredients.
  • Moisten chicken pieces with water (if necessary).
  • Dredge chicken in flour and crumb mixture.
  • Quickly fry chicken on all sides until browned and crisp.
  • Place in covered baking dish and bake at 300 degrees for 30 minutes.
  • Remove cover and bake additional 20-30 minutes to re-crisp chicken, serve.
