OVEN-BAKED CHICKEN THIGHS

Oven-Baked Chicken Thighs image

Chicken thighs have been the real bread and butter of my diet since my second year of college, when I started having to cover my own grocery bills :) This has become my all-time favorite way to spice them. If I need a side dish, I usually chop up an onion, sautee it for 30 seconds in the pan, and toss the onion and a handful of cherry tomatoes on top of the thighs and bake everything together.

Categories     Chicken Thigh & Leg

Time 50m

Yield 4 chicken thighs, 2 serving(s)

Number Of Ingredients 9

4 chicken thighs
2 teaspoons ground cumin
2 teaspoons paprika
2 teaspoons ground turmeric
3/4 teaspoon garlic powder (can go down to 1/2 - I looove garlic..)
1/4 teaspoon cayenne pepper
salt
1 teaspoon ground cinnamon (optional)
2 tablespoons olive oil (enough to coat the bottom of a skillet and a 9x5 baking dish)

Steps:

  • In a shallow dish, stir together all spices and 1 teaspoon salt. Coat chicken thighs with spice mix.
  • Warm the oil in a skillet and pan-fry chicken thighs, making sure each side is nicely browned.
  • Transfer chicken thighs to a greased (butter or olive oil) 9x5 baking dish. If you have any remaining spice mix, feel free to sprinkle it over the thighs, as this will reduce to a nice gravy. Put in pre-heated oven at 375 for 45 minutes, or until juices run clear.
  • Serve with basmati rice or couscous.

OVEN FRIED PAPRIKA CHICKEN

Oven Fried Paprika Chicken image

If it is not summer and we're not grilling, this is my favorite way to make chicken in the house. I love deep-fried chicken, but I dislike making it. This is the next best way to enjoy the taste without the mess and guilt. I hope you enjoy it. *Note: Prep time includes refrigeration time.

Provided by rosie316

Categories     Chicken

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 6

3 1/2-4 lbs bone-in chicken pieces (I use thigh and leg quarters)
2 1/2-3 tablespoons butter
1 cup all-purpose flour
2 1/2 teaspoons paprika
2 teaspoons salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Thoroughly mix flour, paprika, salt and pepper in a shallow dish, set aside. Place wire rack over a sheet pan, set aside.
  • Rinse chicken and gently pat dry.
  • Coat each chicken piece thoroughly in the flour mixture and place on the wire rack/sheet pan, then place in the fridge for 30 minutes.
  • Meanwhile, pre-heat oven to 425*F. Put butter into 9x13x2 baking dish (or a larger 18x12x2 roaster pan, depending on the size of your chicken portions) and place dish in the oven just until the butter melts.
  • Once the butter has melted, tilt the baking dish around to evenly distribute the butter. Place coated chicken pieces SKIN SIDE DOWN directly into the hot, buttered baking dish (do not over-crowd).
  • Bake, un-covered, for 35 minutes UNDISTURBED (it is not burning). Then flip chicken over and bake an additional 15 minutes. Check to be sure no pink remains and juices run clear.
  • Remove chicken pieces to a platter and tent with foil for 5 minutes before serving.
  • Enjoy!
