This copycat Outback Steakhouse Walkabout Soup recipe is delicious, comforting, and just as good as the original!

10 cups low sodium chicken stock
¼ cup white cooking wine
2 bay leaves
2 large sweet yellow onions (quartered and thinly sliced)
1 large white onion (quartered and thinly sliced)
1 cup all purpose flour (sifted)
1 cup heavy cream
1 cup shredded extra sharp cheddar cheese (plus more for garnish)
½ cup shredded Monterey Jack cheese (plus more for garnish)
salt & freshly-ground black pepper to taste

Steps:

  • In a large stock pot add the chicken stock, cooking wine, bay leaves and onions. Bring to a boil over high heat, and then reduce to a simmer. Simmer, uncovered, for 1 hour.
  • Remove the bay leaves, and gently whisk in the flour until a few, small clumps of flour remain. Simmer soup for 30 minutes.
  • Add the cream, cheddar, and Monterey cheeses. Stir until the cheese melts, and then turn off the heat. Season with salt & pepper.
  • Serve with extra cheese as garnish.

8 cups water
8 beef bouillon cubes
3 medium white onions
1 teaspoon salt
1 teaspoon black pepper
3/4 cup all-purpose flour
1 cup heavy cream
1 1/4 cups shredded cheddar cheese
1/4 cup shredded monterey jack cheese

Steps:

  • Heat the water to boiling in a large pot. Add the bouillon cubes and dissolve.
  • Cut the onion into thin slices, then quarter the slices and add to the broth.
  • Add salt and pepper.
  • Bring the mixture back to a boil. Turn down the heat and simmer uncovered for 1 hour while stirring.
  • Sift the flour into the soup and continue to stir until smooth. Be careful when you stir so you do not tear the onions. As the soup continues to cook, any lumps should dissolve after 30 minutes of additional simmering.
  • Add the cream and 1 cup of cheddar cheese; continue to simmer the soup for another 5 to 10 minutes.
  • Serve the soup hot after sprinkling a tablespoon of each of the cheeses on top.

1/3 cup cornstarch
1 1/2 cups flour
2 teaspoons garlic, minced
2 teaspoons paprika
1 teaspoon salt
1 teaspoon pepper
24 ounces beer
4 vidalia onions (I use walla wallas here in Calgary)
2 cups flour
4 teaspoons paprika
2 teaspoons garlic powder
1/2 teaspoon pepper
1/4 teaspoon cayenne
1 pint mayonnaise
1 pint sour cream
1/2 cup tomato chili sauce
1/2 teaspoon cayenne
1/2 cup mayonnaise
2 teaspoons ketchup
2 teaspoons creamed horseradish
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon dried oregano
1 dash black pepper
1 dash cayenne

Steps:

  • ---------Alrighty-forthe seasoned flour-----------.
  • combine flour, paprika, garlic powder, pepper and cayenne-mix well.
  • --------Creamychili sauce--------.
  • combine mayo, sour cream, chili sauce and cayenne-mix well.
  • --------Dippingsauce----------.
  • Blend everything together well and let sit for 2 hours-refidgerated- or overnight.
  • --------Andfor the batter---------.
  • Mix cornstarch, flour and seasonings until well blended.
  • Add beer and mix well.
  • Cut about 3/4 inch off top of onion and peel.
  • Cut into onion 12-16 vertical wedges but do not cut through bottom root end.
  • Remove about 1 inch of petals from center of onion (You can place the cut onions in cold water for a few hours to help "open" them up -- just make sure that you drain them well).
  • Dip in seasoned flour and gently shake to remove excess.
  • Seperate peatls to coat thoroughly with batter.
  • Gently place in a fryer basket and deep fry at 375-400 for 1 1/2 minutes.
  • Turn over and fry 1 1/2 minutes more or until golden brown.
  • Drain on paper towels.
  • Place onion upright in a shallow bowl and remove center core with a circular cutter or apple corer.
  • Serve hot with chili sauce and dipping sauce.

My spin on Outback's Creamy Onion Walkabout soup...Please follow steps for the "white sauce" first...This tastes just like the restaurant!***The secret is the bay leaves...I found them in my soup @ Outback & knew that was the missing ingredient! This is the only recipe out there that includes the bay leaves!!!! This soup is my ALL TIME FAV!! (The WHITE SAUCE ingredients are the first 3 listed items on top) ENJOY!!!

3 tablespoons butter
3 tablespoons flour
1 1/2 cups whole milk
2 tablespoons butter
2 cups sweet yellow onions (thinly sliced)
1 (15 ounce) can chicken broth or 1 (15 ounce) can stock
1/4 teaspoon fresh ground pepper
2 chicken bouillon cubes
1/4 cup diced Velveeta cheese, cubes (compressed in measuring cup)
1 1/2-1 3/4 cups white sauce
4 bay leaves (more or less if you like)
monterey jack cheese (to garnish, or a combo) or colby cheese (to garnish, or a combo)

Steps:

  • For the white sauce: In a 1-quart saucepan melt butter and add flour, cook on medium heat until the flour turns thick and comes away from the side of the saucepan. Pour milk in flour a little at a time and stir constantly. Mixture should thicken and become like thick pudding. Remember to stir constantly taking care not to let mixture lump, set aside off from heat until ready to use for the soup.
  • In 2-quart saucepan place 3 tablespoons butter and sliced onions. Cook at low to medium heat stirring frequently until soft and clear but not brown. Add chicken broth or stock from can, chicken bouillon cubes, bay leaves, pepper, and stir until completely heated through.
  • Add white sauce and Velveeta cheese to onion mixture. White sauce will be thick because it has been removed from the heat. Simmer on medium low heat until the cheese is melted and all ingredients are blended, stirring constantly. Turn temperature to warm and let cook for additional 30 minute to 45 minutes.
  • Serve with a garnish of shredded cheese(s), and a couple of slices of warm dark Russian Bread.

This is our spin-off of the famous restaurant soup. It has a creamy consistency which is accentuated by Colby-Jack cheese. This is a very simple recipe.

2 quarts water
8 cubes beef bouillon, crumbled
2 large onions, quartered and sliced
1 teaspoon salt
1 teaspoon coarsely ground black pepper
¾ cup all-purpose flour
½ cup cold water
1 cup heavy cream
1 ½ cups shredded Colby-Monterey Jack cheese

Steps:

  • In a large, heavy pot over medium heat, bring 2 quarts water to a boil. Stir in bouillon cubes and let boil 10 minutes, until dissolved. Place onions in boiling water, reduce heat and simmer 30 minutes.
  • Stir in salt and pepper and simmer 30 minutes more.
  • Stir the flour into 1/2 cup cold water to make a paste. Gently whisk this mixture into the simmering soup, being careful not to break the onions. Simmer 30 minutes more.
  • Stir in cream and cheese until cheese is melted and mixture is thoroughly heated. Thin with water if necessary. Serve hot, garnished with croutons, if desired.
