My mom often served this dish when relatives were visiting. The night before, I'd watch her prepare the soy sauce marinade. As the pork chops baked the next day, the tantalizing aroma would fill the kitchen. It was always a hit! -Cris O'Brien, Virginia Beach, Virginia

2 cups soy sauce
1 cup water
1/2 cup packed brown sugar
1 tablespoon molasses
6 bone-in pork loin chops (1-1/2 inches thick)
SAUCE:
3/4 cup ketchup
2/3 cup chili sauce
1/4 cup packed brown sugar
2 tablespoons water
1-1/2 teaspoons ground mustard

Steps:

  • In a saucepan over medium heat, bring soy sauce, water, brown sugar and molasses to a boil. Remove from the heat; cool to room temperature. pour into a large resealable plastic bag; add pork chops. Seal bag and refrigerate for 3-6 hours., Drain and discard marinade. Place pork chops in a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 30 minutes. Combine the sauce ingredients; pour over chops. Bake, uncovered, 30 minutes longer or until meat juices run clear.

1 tablespoon vegetable oil
2- 1 1/2"-thick bone-in pork rib chops (8-10 ounces each)
Kosher salt, freshly ground pepper
freshly ground pepper
8 sprigs sage
2 garlic cloves, peeled, smashed
1 tablespoon unsalted butter

Steps:

  • Heat oil in a large skillet over mediumhigh. Season pork chops all over (including the fat cap) with salt and pepper. Cook pork chops until bottom side is golden brown, about 1 minute. Turn and cook on other side about 1 minute before turning again. Repeat this process, turning about every minute, until chops are deep golden brown and an instant-read thermometer inserted into the thickest part registers 135°, 8-10 minutes (cooking time will depend on thickness of chops).
  • Remove pan from heat and add sage, garlic, and butter, smashing garlic into butter. Tilt skillet and spoon foaming butter and drippings over pork chops, making sure to baste the fat cap as well as the rib. Transfer pork chops to a cutting board and let rest at least 5 minutes (pork will come to 145° as it sits).
  • Cut away bone and slice pork about 1/4" thick. Serve with any juices from the cutting board spooned over top.

1/4 cup KRAFT Real Mayo Mayonnaise
1-1/2 lb. red potatoes (about 5), cut into 1-inch cubes, cooked
1 cup frozen peas, thawed
1/2 cup finely chopped onions
2 stalks celery, finely chopped
2 hard-cooked eggs, chopped
2 tsp. oil, divided
6 bone-in pork chops (2-1/2 lb.), 1/2 inch thick

Steps:

  • Spoon half the Our Favorite Chimichurri into large bowl. Add mayo; whisk until blended. Add next 5 ingredients; mix lightly. Refrigerate until ready to serve.
  • Heat 1 tsp. oil in large skillet on medium-high heat. Add 3 chops; cook 4 min. on each side or until browned on both sides and done (145º F). Top each chop with 1 Tbsp. of the remaining Our Favorite Chimichurri; cover. Cook on low heat 3 min. Remove chops and juices from skillet; cover to keep warm. Repeat with remaining oil, chops and Our Favorite Chimichurri.
  • Serve with the potato salad.

1¼ cups bisquick pre-made baking mix ((can also use all-purpose flour))
4 teaspoons paprika
1½ teaspoon garlic powder
¾ teaspoon salt
½ teaspoon black ground pepper
¾ teaspoon chili powder
3 eggs
¾ cup milk
2 sleeves Ritz Crackers (crushed)
¾ cup dry potato flakes (or instant potato flakes)
¾ cup all-purpose flour
6 thick pork chops ((at least 3/4" thick))
salt and pepper, to taste
1½ cups vegetable oil (or canola oil for frying)
1 Tablespoon butter

Steps:

  • In a shallow bowl or pie tin, mix together Bisquick, paprika, garlic powder, salt, pepper, and chili powder.
  • In a second shallow bowl or pie tin, mix together the eggs and milk until blended.
  • In a third bowl, combine the crushed cracker crumbs, potato flakes, and all-purpose flour
  • With a fork, poke the pork chops all over to tenderize the meat.
  • Season each pork chop on both sides with salt and pepper.
  • Gently press each pork chop into the Bisquick mixture to coat, then shake off the excess flour.
  • Dip the pork chop into the egg mixture, then press each chop into the cracker mixture.
  • Heat the oil in a large, deep skillet over medium heat.
  • Once the oil is hot, add in the butter.
  • Gently place the pork chops into the hot oil.
  • Fry the pork chops until the meat is no longer pink in the center and the crust is crisp and golden brown (about 2-3 minutes on one side and then 1-3 minutes on the other side).
  • Remove the pork chops from the pan and drain the excess oil on paper towels on a plate.
  • Repeat the process with remaining pork chops.
