2 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
2 cloves garlic, finely chopped
1 can (28 oz) Muir Glen™ organic diced tomatoes
1 can (16 oz) chili beans in sauce, undrained
1 can (15 oz) Muir Glen™ organic tomato sauce
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In 12-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • In 4- to 5-quart slow cooker, mix beef mixture and remaining ingredients.
  • Cover and cook on Low heat setting 6 to 8 hours.

I finally got around to putting this recipe on Recipezaar! This is our family's favourite recipe. It is very kid friendly (no heat) so feel free to add something to spice it up if you like it spicy. I am posting this mainly so that I can access this recipe on "my shopping list" which is a feature I use here on Recipezaar all the time!

1 lb ground beef
1 small onion, chopped
1 (28 ounce) can white beans, in tomato sauce
1 (19 ounce) can kidney beans, drained
2 (10 ounce) cans condensed tomato soup
1 teaspoon taco seasoning
1 teaspoon cumin
1 teaspoon chili powder
1 cup cheddar cheese

Steps:

  • Brown ground beef, (I like to do a huge batch of ground beef using Tish's recipe#31008 and it works perfectly) place into a Ziploc bag and throw into the freezer.
  • The night before serving, defrost overnight.
  • (I usually don't, but some people argue that cooking frozen meat in the crock pot is not safe.).
  • Throw everything into the crock pot and cook for 3-4 hours on high or 6-7 hours on low.
  • Garnish with cheddar cheese and serve.
  • I will sometimes serve this on buns as sloppy Joe's.
  • **If desired you can make the entire recipe and freeze already made, then heat to serve. This recipe freezes great!**.

1 lb dried black beans
6 garlic cloves, minced
2 onions, chopped
1/4 teaspoon crushed red pepper flakes (more if you like it hot)
1 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1 bay leaf
1 (28 ounce) can crushed tomatoes
1 tablespoon soy sauce
2 cups water
6 ounces tomato paste
1 tablespoon red wine vinegar
2 (15 ounce) cans cannellini beans, drained and rinsed
grated cheese (to garnish)
sour cream (to garnish)

Steps:

  • Rinse and sort the black beans and put in crock pot and cover with water.
  • Cook on low overnight (no presoaking necessary). In the morning drain the cooking water.
  • Place beans back in crock pot and add onions, garlic, red pepper flakes, chili powder and cumin.
  • Add the remaining ingredients except canned beans and garnishes. Stir well and cook on low all day.
  • Stir in canned beans an hour or so before serving.
  • Remove bay leaf and serve with garnishes of your choice. (We love ours topped with lots of cheddar cheese).

3 bell peppers (green, red and yellow)
1 medium onion
1 teaspoon chili powder
1/2 teaspoon cumin
2 (14 ounce) cans black beans
1 (4 ounce) can green chilies
1 (14 ounce) can creamed corn
1 (14 ounce) can stewed tomatoes

Steps:

  • Chop peppers, onion and chicken into bite size pieces.
  • Saute the above with spices until vegetables are soft and chicken is no longer pink.
  • Dump chicken mixture into crock pot with green chilis (drained), corn, tomatoes and only one can of beans (drained).
  • Puree remaining can of beans in it's own liquid with hand blender or food processor.
  • Add to crock pot and cook for 4-6 hours on low.

My husband requests it so much I can make it without thinking. It is really simple to make, easy on the budget, and you can make it in the morning and not worry about it till diner time.

3 lbs ground beef
2 (15 ounce) cans of hormel chunky chili with beans
1 (12 ounce) can hunts tomato paste
4 roma tomatoes, cut into large chunks (the small, bright red ones)
1/2 small yellow onion, finely grated
2 dashes Tabasco sauce
1 dash salt
2 dashes black pepper
2 dashes red peppers
1 dash garlic salt
3 dashes cinnamon (trust me, without it the chili will be too spicy)
1/2 cup hot water

Steps:

  • Basically just separate the ground beef so it is loose and dump all the other ingredients on top of it in the crock pot(or large pot on a burner set to low heat); mix well.
  • Cover and leave in crock pot on low for 6 (give or take a little is fine) hours.
  • If making on stove top reduce cook time to 4 hours.
  • I top a big bowl of this with oyster crackers and sharp cheddar cheese, but it can be served over spaghetti noodles if you prefer.

Steps:

  • Put first 13 ingredients in crock pot with 1 tablespoon of the sugar, mix well, add pinto beans.
  • Turn crock pot on low.
  • Heat some olive oil in a large skillet sauté garlic, onions and green pepper for 4-5 minutes.
  • Add to crock pot.
  • Dredge the beef in the flour and brown in skillet.
  • (add more oil, if necessary).
  • Add to crock pot stir well.
  • Cook 8-10 hours.
  • Taste check; for acidity if necessary add more sugar, salt.

4 tablespoons chili powder
2 1/2 teaspoons ground coriander
2 1/2 teaspoons ground cumin
1 1/2 teaspoons garlic powder
1 teaspoon oregano
1/2 teaspoon cayenne pepper
1 1/2 lbs ground beef
1 tablespoon minced onion
1 (28 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
2 (15 ounce) cans kidney beans

Steps:

  • Mix together seasoning mix.
  • Store in an airtight container in a cool, dry place. (You will only use 5 tsp in this recipe - save the rest for next time!).
  • In a skillet, cook ground beef until no longer pink.
  • Drain.
  • Add onion and 3 tsp of seasoning mix.
  • In Crock-Pot, add tomatoes, tomato sauce, one can of beans and two more teaspoons of seasoning mix.
  • Place the other can of beans in a blender and process until smooth.

The name says it all...this has always been my family's favorite, even though there are a lot of shortcuts. It is simple to make, tasty and fast. What else can you ask for? To serve, I ladle it into a large bowl and garnish it with lots of shredded cheddar cheese and jalapenos. I insert tortilla chips all around the edge of the bowl for either scooping up some of the chili with (nacho-style) or eating along with the chili itself.
