This recipe makes 4 pies for a party or large gathering. No cooking and very easy. Originally an Oreo recipe.

2 lbs cream cheese, chilled
3 1/2 lbs condensed milk
2 cups lime juice
12 cups whipped topping
1 1/2 lbs Oreo cookie crumbs
9-inch Oreo cookie pie crust
Oreo cookie crumbs (optional)
chocolate syrup (optional)

Steps:

  • Note: The 1 1/3 pounds should be larger broken up cookie crumbs. The optional crumbs should be finer.
  • In a large mixer, beat the cream cheese until smooth while adding the milk and juice.
  • Fold in the topping and large cookie crumbs then pour into the crusts and chill. You want them firm.
  • Garnish as desired.

Oh so Creamy and Fluffy Key Lime Pie image

We recently went to the Gaylord Texan Hotel over Christmas and had a slice of heaven in the form of a key lime pie delivered to our room. It wasn't to tart or to sweet and was oh so creamy. I was trying to recreate it for my DH birthday and hopefully got pretty close. He liked it - asked me to put some back so it wasn't totally eaten up by the family :). I also made some key lime sauce from debloves2cook recipe #166790 and put it on the plate as part of the presentation. Gave each plate a great look as well as a little lime kick. Cook time is refridgeration time. See the bottom of the instructions for a gluten free pie crust variation.

1 1/2 cups graham cracker crumbs
3 tablespoons sugar
5 tablespoons butter, melted
5 egg yolks
3 egg whites
1 (8 ounce) package cream cheese, at room temperature
1.5 (21 ounce) cans sweetened condensed milk
2/3 cup key lime juice (ex ( Nellie & Joe famous Key West key lime juice)
sweetened whipped cream (to garnish) or Cool Whip (to garnish)

Steps:

  • CRUST:.
  • Preheat oven to 350.
  • Combine all the ingredients and then press onto the bottom and up the sides of a 9" glass pie plate.
  • Bake for 8 minutes or until golden.
  • Remove from oven and let cool completely.
  • Turn the oven down to 300.
  • *~OR Use a store bought deep dish graham cracker crust~*.
  • FILLING:.
  • Meanwhile, whisk cream cheese, condensed milk, egg yolks and lime juice to combine.
  • In a seperate bowl, beat egg whites until stiff peaks begin to form. (When you lift up the beaters, the peaks should hold and still look glossy).
  • Fold into the cream cheese/lime mixture until just combined. Don't over mix - this is what gives the pie it's fluffy texture.
  • Pour into the cooled pie crust and bake for 25 minutes or until set. Pie will be solid with just a little wiggle in the middle when moved.
  • Remove from oven. Cool and refridgerate until firm, at least 4 hours.
  • TO SERVE:
  • Garnish with whipped cream or cool whip and a little key lime sauce from debloves2cook recipe #166790.
  • GF VARIATION:
  • Mix 1 1/2 cups crushed gluten free chocolate chex and 5 tablespoons melted butter for the crust (Don't need to add any extra sugar because the chex is already sweetened.)
  • Continue with directions above.

Key lime pie gets a rich new interpretation as a cheesecake trying to make it healthier by using 1/3 less fat cream cheese and without compromising the taste. Enjoy FOR OREO CHEESECAKE VERSION ADD ABOUT 10-15 BROKEN OREO COOKIES, AND 1 TBSP OF VANILLA TO BATTER AND OMIT LIME JUICE AND ZEST. FOR CRUST PLACE 10-15 OREO COOKIES IN FOOD PROCESSOR AND USE INSTEAD OF VANILLA WAFERS.

1 cup vanilla wafer, crumbs- about 20
2 tablespoons margarine, melted
24 ounces light cream, cheese- 3 pkg
1 cup sugar
3 eggs
1 tablespoon lime zest
1/4 cup lime juice

Steps:

  • Heat oven to 325°F In medium bowl, combine crust ingredients; mix well. Press mixture in bottom of ungreased 9-inch springform or cheesecake pan with removable bottom. Refrigerate.
  • In large bowl beat cream cheese until smooth. Beat in the sugar and at low speed incorporate the eggs. Blend until smooth. Add lime peel and juice.
  • Pour into crust lined pan.
  • Bake at 325F for 55 to 65 minutes or until set. Turn oven off and and open oven door at least 4 inches. Let cheesecake set for about 30 minutes. Remove from oven and let stand for 10 minutes.
  • Remove sides of pan and cool in pan on wire rack for 1 hour. Refrigerate for at least 4 hours.

I saw this in the Food section of the Cincinnati Enquirer October 30 2002 Pg E3. By Chef Sandra Wilson. I really like Key Lime Pie and until this recipe have never found one that satisfied me.

1 (8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk
3 egg yolks
1/2 cup nellie & joe famous key west lime juice
1 9-inch graham cracker crust

Steps:

  • Preheat oven to 350 degrees.
  • Beat softened cream cheese until creamy.
  • Add sweetened condensed milk and beat to incorporate.
  • Add egg yolks and beat well.
  • Add lime juice and beat till combined.
  • Pour mixture into pie crust and spread with spatula until evenly distributed.
  • Place on cookie sheet and then into the oven and bake for 10 min.
  • until the filling begins to set.
  • Remove from oven and allow to cool on rack at room temp.
  • Then place in the refrigerator for at least an hour.
  • Two works better.
  • Cut into 8 slices and serve with a generous helping of whipped cream.

  • Preheat the oven to 350°. In a food processor, finely grind the Oreos. Pulse in the butter. Lightly spray four 4 1/2-inch fluted tartlet pans with removable bottoms; press the ground Oreos into the bottoms. Set the pans on a baking sheet and bake for 8 minutes, or until the edges look dry. Let cool.
  • In a bowl, whisk the yolks, condensed milk, 1/3 cup of the Key lime juice and the lime zest. Pour the filling into the pans and bake at 325° for about 15 minutes, until the edges are just firm. Let cool for 30 minutes, then freeze until very cold, about 2 hours.
  • In a small saucepan, combine the 3 tablespoons of sugar with 3 tablespoons of water, the lime leaves and the salt. Cook until the sugar has dissolved, then let cool. Discard the lime leaves. Stir in the remaining 1/3 cup of lime juice and refrigerate.
  • Sprinkle 2 teaspoons of the sugar over each tart and caramelize with a blow torch. Unmold the tarts and place in shallow bowls. Pour in the Key lime sauce and serve.
