Oreo ice cream is a favorite flavor and when made into a pie with an Oreo crust and crushed cookie topping it becomes irresistible.

1 Oreo cookie crumb crust (store-bought or homemade )
4 cups/1 quart vanilla ice cream (or Oreo Ice Cream, softened)
1 package Oreos
Garnish: chocolate syrup

Steps:

  • Gather the ingredients.
  • Carefully spoon the softened ice cream into the crust.
  • Place 8 of the Oreo cookies so they are standing up along the edge of the prepared cookie crumb crust.
  • Finely crush the remaining 5 or 6 Oreo cookies and sprinkle on the surface of the pie.
  • Drizzle the chocolate syrup in thin lines over the top of the pie.
  • Freeze for at least 4 hours. Remove from the freezer about 10 minutes prior to serving.
  • Use the standing Oreo cookies as a guideline when cutting the pie into pieces.
  • Top with a dollop of whipped cream if you like, and serve.

1 cup chocolate, melted
1 ¾ qt ice cream, softened

Steps:

  • Place cookies in a gallon sized plastic bag and hit with a rolling pin or pan until crushed.
  • Pat the cookie crumbs into the bottom of a 9" (23 cm) pie dish.
  • Spread the softened ice cream on top and smooth out.
  • Drizzle the top with melted chocolate.
  • Freeze for 4 hours, or until the ice cream is hardened.
  • Enjoy!

30 cookies chocolate sandwich cookie
7 eggs, separated
1 ½ cups sugar
7 oz baking chocolate
½ cup margarine
2 teaspoons vanilla sugar
8 oz Kineret Whipped Topping
2 tablespoons instant vanilla pudding mix
1 tablespoon coffee, diluted in a drop of boiling water

Steps:

  • For the Crust:
  • Crush sandwich cookies in the food processor until fine crumbs form. Press into the bottom, and up the side of a nine-inch springform pan.
  • Bake at 350'F for 10 minutes and set aside to cool.
  • For the Ice Cream:
  • Beat egg whites and sugar until stiff peaks form. Meanwhile, place chocolate, margarine and vanilla sugar into a double boiler (or the microwave) and stir until melted.
  • Once melted, allow to cool slightly and add the seven yolks, mixing quickly so the yolks shouldn't cook. Mix until well combined.
  • Fold chocolate mixture into the snow and pour over the crust. Freeze.
  • For the Topping:
  • Whip up the dessert topping until soft peaks form.
  • Slowly add coffee and instant vanilla pudding until stiff.
  • Place into a decorating bag with star tip and pipe rosettes on the top of the ice cream pie.
  • Garnish with additional cookies and crumbs.
  • Serve.

1 (9 inch) Oreo cookie pie crusts (store-bought or homemade, 9-inch crust)
2 (3 ounce) packages cream cheese, softened (full fat)
1 (14 ounce) can sweetened condensed milk
1/3 cup fresh lemon juice
1 teaspoon vanilla extract
1 pint fresh raspberry (plus more for garnish)
1 cup cold heavy cream
2 tablespoons powdered sugar, sifted

Steps:

  • If using a store-bought crust, prebake it according to package directions and let it cool.
  • Refrigerate crust until needed.
  • In a bowl, beat the cream cheese and condensed milk together using an electric mixer on med-high speed until smooth and fluffy (about 2 minutes).
  • Add in the lemon juice and continue beating for 1 minute.
  • Blend in the vanilla; scrape mixture into the chilled pie crust; smooth the top with the back of a spoon.
  • Cover with loosely tented foil and refrigerate for at least 2 hours but preferably longer and up to overnight.
  • Shortly before ready to serve, scatter the raspberries evenly over the pie.
  • Using a chilled bowl and chilled beaters, beat the cream until it holds soft peaks.
  • Add in the powdered sugar and continue to beat until stiff but not grainy.
  • Spoon over the raspberries, smoothing it with a spoon.
  • Slice and serve right away, garnishing each slice with additional raspberries.

FILLING:
1/2 gallon white chocolate raspberry truffle ice cream, softened, divided
