ORECCHIETTE WITH ASPARAGUS AND PEAS

Orecchiette with Asparagus and Peas image

Provided by Food Network

Categories     main-dish

Time 35m

Yield 6 servings

Number Of Ingredients 10

1 teaspoon kosher salt, plus more for the pasta water
1/4 cup extra-virgin olive oil, plus more for drizzling
4 cloves garlic, thinly sliced
1 large bunch medium-thick asparagus (about 1 pound), peeled and cut into 1-inch pieces
1 pound orecchiette
One 10-ounce box frozen peas, thawed, or fresh shelled peas
1 bunch scallions, white and green parts, chopped (about 1 cup)
1/4 cup chopped fresh Italian parsley
1 cup grated Grana Padano cheese
Pea tendrils, for garnish

Steps:

  • Bring a large pot of salted water to boil for the pasta. Add the olive oil to a large skillet over medium heat. When the oil is hot, add the garlic and let it sizzle a minute. Add the asparagus and toss to coat in the oil. Cook and toss until the asparagus just begins to soften, about 5 minutes (add a splash of pasta water if the garlic is in danger of burning). Cover with a lid.
  • Uncover the asparagus, and at the same time add the orecchiette to the pasta water. Add the peas to the asparagus and season with the salt. Toss to combine and cook 2 to 3 minutes. Add the scallions, stir, and add 1 1/2 cups of pasta water. Bring to a boil and cook until reduced by about half, 3 to 4 minutes.
  • When the pasta is al dente, remove with a spider directly to the sauce. Add the parsley, drizzle with some olive oil, and toss to coat the pasta in the sauce, adding a little pasta water if it seems dry. Remove the skillet from the heat, sprinkle with the grated cheese, toss, garnish with pea tendrils and serve.

ORECCHIETTE WITH HAM AND LEEKS

Orecchiette with Ham and Leeks image

Ricotta is the secret to this tender pasta.

Provided by Food Network Kitchen

Time 1h45m

Yield 4 to 6 servings

Number Of Ingredients 15

3/4 cup fine semolina flour
1 scant cup all-purpose flour, plus more for dusting
Kosher salt
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 leeks (white and light green parts only), halved lengthwise and sliced
1 cup diced ham
2 cloves garlic, finely chopped
1 tablespoon fresh thyme
1 cup fresh or thawed frozen peas
1/2 cup low-sodium chicken broth
1/2 cup heavy cream
Juice of 1/2 lemon
Freshly ground pepper
1/2 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Make the dough: Whisk the semolina and all-purpose flour in a large bowl. Mound on a work surface and make a well in the center. Pour 1/2 cup cold water into the well. Using a fork and working your way around the well, gradually mix the flour into the water. Continue mixing until the dough is crumbly. If the dough is too dry to come together, add up to 1/4 cup more water, a little at a time.
  • Knead the dough until smooth and elastic, about 6 minutes. Wrap in plastic wrap and let rest at room temperature,30 minutes. (The dough can be made a day ahead and refrigerated; bring it to room temperature before rolling.)
  • Divide the dough into 4 pieces. Working with 1 piece at a time (and keeping the other pieces wrapped), roll the dough on the counter with your hands into a 1/2-inch-thick log. With a knife or bench scraper, cut the log into 1/2-inch pieces; roll each piece into a small ball. With floured hands, press your thumb into a dough ball and drag it toward you to form a bowl shape; put the dough on the tip of your index finger and turn it inside out. Repeat to form the remaining orecchiette; transfer to a floured baking sheet as you go.
  • Bring a large pot of salted water to a boil. Meanwhile, melt the butter with the olive oil in a large skillet over medium heat. Add the leeks and cook, stirring occasionally, until softened but not browned, 7 to 8 minutes. Add the ham and cook until heated through, about 3 minutes. Stir in the garlic and thyme and cook1 minute. Add the peas and broth and bring to a simmer. Stir in the heavy cream and lemon juice, season with salt and pepper and simmer until the peas are tender, about 5 minutes for frozen, 10 minutes for fresh.
  • Transfer the orecchiette to a colander and shake over the baking sheet to remove the excess flour. Add the orecchiette to the boiling water and cook until al dente, about 8 minutes. Remove with a strainer or slotted spoon and add directly to the skillet with the ham and peas. Toss, adding spoonfuls of the pasta cooking water to loosen, if necessary. Remove from the heat and stir in the parmesan.

ONE PAN ORECCHIETTE PASTA

One Pan Orecchiette Pasta image

Every year when it's time to go back to school I get inundated with requests from students to post recipes that are super-easy, cost pennies, and require a bare minimum of kitchen equipment. This delicious orecchiette pasta recipe only has a handful of ingredients, is very cheap to make, and most importantly: only uses one pan or pot for the entire procedure.

Provided by Chef John

Categories     Main Dish Recipes     Pasta

Time 40m

Yield 2

Number Of Ingredients 8

2 tablespoons olive oil
½ onion, diced
salt to taste
8 ounces spicy Italian sausages, casings removed
3 ½ cups low-sodium chicken broth, divided, or as needed
1 ¼ cups orecchiette pasta, or more to taste
½ cup roughly chopped arugula, or to taste
¼ cup finely grated Parmigiano-Reggiano cheese, or to taste

Steps:

  • Heat olive oil in a large, deep skillet over medium heat. Cook and stir onion with a pinch of salt in hot oil until onion is soft and golden, 5 to 7 minutes. Stir sausage into onions; cook and stir until sausage is broken up and browned, 5 to 7 minutes.
  • Pour 1 1/2 cups chicken broth into sausage mixture and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add orecchiette pasta; cook and stir pasta in hot broth, adding remaining broth when liquid is absorbed, until pasta is cooked through and most of the broth is absorbed, about 15 minutes.
  • Stir arugula into pasta-sausage mixture until arugula wilts. Ladle pasta into bowls and dust with Parmigiano-Reggiano cheese.

CREAMY LEMON PASTA WITH PEAS AND OPTIONAL HAM

Creamy Lemon Pasta with Peas and Optional Ham image

This easy pasta dish goes from stove to table in about 25 minutes. The creamy, garlicky lemon sauce coats every little piece of perfectly al dente pasta, spring peas, and optional diced ham for the carnivores.

Provided by Kare for Kitchen Treaty

Time 25m

Number Of Ingredients 13

1/2 pound or 8 ounces small pasta like orecchiette, shells, or mini penne
3/4 cup frozen peas
2 tablespoons olive oil
2 medium cloves garlic (finely chopped (about 2 teaspoons))
Pinch - ¼ teaspoon crushed red pepper flakes (depending on taste)
1 large lemon (zested and juiced (approx. 1 tablespoon zest and 2 tablespoons juice))
1 cup pasta water
1/2 cup heavy cream
1 1/2 cups grated Parmesan cheese (divided)
Salt and pepper to taste
Small handful of parsley (chopped (about 1/4 cup chopped))
If adding ham
1/4 cup chopped (cooked ham per serving)

Steps:

  • Bring a large pot of salted water to a boil and add the pasta. Cook about one minute less than package directions state until al dente. When one minute is left in the cooking time, add the frozen peas.
  • While the pasta is boiling, heat a large deep skillet over low heat and add the olive oil, garlic, and crushed red pepper flakes. Cook, stirring frequently, for about five minutes until garlic is tender.
  • To the garlic, add 1 cup of the water the pasta is boiling in, along with the lemon juice and the heavy cream. Increase the heat to medium and bring to a boil, stirring frequently, until the sauce thickens just a bit, about 5 minutes. Stir in the the lemon zest and 1 cup of the grated Parmesan cheese. Add a generous pinch of salt and pepper. Taste and add additional salt if necessary (if the sauce tastes too lemony, add a little more salt until the tartness mellows.)
  • If adding ham, place an additional skillet on the stove and heat the diced ham over low heat, stirring frequently
  • Drain the pasta and peas and and add it to the main skillet with the sauce. Remove the skillet from the heat and gently toss the pasta with the sauce until the pasta soaks in some of the sauce, about two minutes.
  • Scoop the carnivorous portion(s) into the saucepan with the ham and mix gently.
  • Top with the parsley and remaining Parmesan cheese, and serve.

  • Set a large pot over high heat for the pasta. Thinly slice garlic and scallions. Finely grate Parmesan cheese.
  • Cook pasta according to package instructions until al dente. Approx 2 min. before the end of cooking time, add the peas. Once the peas are warmed through, reserve a large mug of pasta water then drain the pasta and peas in a colander. While the pasta is cooking, add slices of Parma ham to a cold pan. Heat over medium heat until crisp on one side, then flip and repeat. If your Parma ham is quite lean, add a little olive oil to help crisp it up. Remove ham once crispy and let drain on a paper towel-lined plate.
  • Add a little olive oil to the same pan used for the ham and fry the garlic until almost golden, over medium heat, approx. 2 min. Add pasta and peas into the pan, followed by crème fraîche. Toss well until you have a silky sauce, adding some pasta water to help coat the pasta. Season generously with pepper. Once off the heat, add a generous amount of grated Parmesan on top and stir though. Serve in bowls and break pieces of crispy Parma ham over the top, garnishing with scallions and extra Parmesan, if desired. Enjoy!
