ORANGE CUPCAKES WITH THE CREAMIEST ORANGE BUTTERCREAM
Fresh orange juice and zest in the batter gives these beautiful Orange Cupcakes a sweet, aromatic orange zing. The unbelievably creamy orange buttercream, both infused and spiked with orange zest are truly the icing on the cake.

- Preheat the oven to 180C / 350F / 160C fan forced. Line a 12 hole muffin tin with cupcake liners.
- Place the flour, corn flour, baking powder and salt in a bowl and whisk to mix well.
- In a separate bowl, mix together the melted butter and sugar just to combine.
- Add the milk, eggs, orange juice, zest and vanilla and whisk really well to combine.
- Add the dry ingredients to the wet ingredients and stir through gently with a spatula until just combined.
- Fill the cupcake cases to about ⅔ full. Bake for around 20 minutes or until toothpick inserted comes out with just a couple of crumbs on it. Transfer to a cooling rack. You can go straight on with steps 1-3 of the buttercream.
- In a small saucepan, whisk the flour with a little milk to a paste. Add the remaining milk, 1/2 cup of sugar and orange peel.
- Heat over low heat, stirring constantly until it gets very thick (like a thick custard or pudding).
- Press this mixture through a strainer into a bowl. Discard the orange peel and cover with plastic wrap pressed to the surface and let it cool to room temperature before continuing (notes).
- Once the pudding mixture is cool, beat together the butter and ½ cup of sugar until lightened and creamy. About 5 minutes. Scrape down the bowl a few times through the process.
- Add 1 spoonful of the pudding mixture at a time, mixing on low between each. Make sure each spoonful is incorporated before adding the next.
- Once all the pudding mixture is added, beat for a further 5-7 minutes on medium until it looks whipped and creamy. You should not be able to feel any sugar granules. (If it looks like it separates, don't worry, just keep on beating. It will all come together into a beautiful, almost whipped cream looking frosting).
- Finally add the vanilla and orange zest and give it one final quick mix just to mix it through.

HEFEWEIZEN ORANGE CUPCAKES

- For the frosting: Whisk the sugar, flour and salt together in a medium saucepan, then stir in the hefeweizen. Place the pan over medium heat and bring to a boil, stirring constantly. Continue boiling, stirring constantly, for 3 minutes (this cooks out the raw flour taste). Remove the pan from the heat and scrape the frosting base into a shallow bowl. Press a sheet of plastic wrap directly on the surface and refrigerate until chilled and thick, at least 2 hours.
- For the cake: Meanwhile, preheat the oven to 350 degrees F. Line the cups of two 12-cup muffin pans with cupcake liners.
- Whisk the flour, baking powder, salt and cloves in a bowl until evenly combined. Combine the sugar, butter, vanilla and orange zest in the bowl of a stand mixer fitted with the paddle attachment and beat on medium speed until pale and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition, until smooth. Alternately, add the flour mixture and the hefeweizen, beginning and ending with the flour mixture, until the batter is smooth. Divide the batter among the muffin cups (about scant 1/4 cup per muffin cup) then bake until a cake tester inserted in the center of the cupcakes comes out clean, about 25 minutes.
- Let the cupcakes cool in the pan for 10 minutes, then transfer the cupcakes to a wire rack and let cool completely.
- Remove the frosting base from the refrigerator and let stand for 10 minutes to come to room temperature. Beat the butter for the frosting on medium speed until lightened and creamy, about 3 minutes. Mash the frosting base with the back of a spoon until it is spreadable, then add a third of the frosting base to the butter and beat until evenly incorporated. Add half of the remaining frosting base, beat until smooth, then add the remaining frosting base and the vanilla and beat until the frosting is fluffy and light, about 2 minutes.
- Frost the cupcakes with a spoon or transfer the frosting to a pastry bag fitted with a 1/2-inch-wide fluted tip and pipe mounds onto the top of each cupcake. Garnish each cupcake with an orange wedge before serving.

- Using a vegetable peeler, remove zest of orange in long strips; thinly slice lengthwise. In a small saucepan, combine sugar and water; bring to a boil over high. Add zest, and reduce heat to medium. Cook until zest is softened, about 15 minutes. With a slotted spoon, transfer zest to a baking sheet lined with waxed paper; let cool. Toss zest with 2 tablespoons sugar. Store in an airtight container at room temperature up to 1 day.

- Preheat oven to 350°F Line 18 muffin cups with cupcake liners.
- Grate 2 tsp zest and squeeze 3/4 cup juice from oranges. On medium speed, beat cake mix, eggs, orange juice, 1/2 c water, 1/4 c butter and 1 tsp zest until combined (30 secs). On medium-high speed, beat until smooth and thickened (2 mins).
- Divide among liners. Bake 18-20 mins or until toothpick inserted into centers comes out clean. Cool 10 minutes Transfer to racks. Cool completely.
- On medium speed, beat remaining 1 1/2 c butter until smooth. Gradually beat in sugar until light and fluffy (2 mins). Beat in remaining 1 tsp zest. If desired, tint frosting orange with food colorings, then transfer to pasty bag fitted with star or other decorative tip. Pipe or spread frosting over cupcakes. Garnish with sprinkles.

- In a bowl whisk together the flour, the almonds, the baking powder, and a pinch of salt. - Set oven to 350°F.
- Line 18 muffin tins with paper liners.
- For the cupcakes; sift together the flour 1-1/4 cups sugar, baking powder and salt.
- Add in oil, buttermilk and vanilla or orange extract, beat one minute using an electric mixer.
- Add in the orange juice and egg yolks; beat for about 1 minute more.
- In a another bowl beat egg whites until foamy.
- Gradually add in 1/2 and beat until stiff peaks form.
- Gently fold in the whites to the creamed batter.
- Evenly divided the batter between the muffin tins.
- Bake for about 15-20 minutes, or until cupcakes test done.
- Allow to cool completely before frosting.
- FOR THE FROSTING; in a bowl beat the butter until fluffy (about 3 minutes).
- Add in the vanilla, zest and orange juice; beat until combined.
- Add in 3 cups icing sugar to start, adding in more if needed to achieve desired consistency.
- Add in a few drops orange food colouring if desired.
- Spread on the cooled cupcakes, then sprinkle with orange sprinkles if desired.
