GRANDMA'S ORANGE ROLLS
Both our two children and grandchildren love these fine-textured sweet rolls. We have our own orange, lime and grapefruit trees, and it's such a pleasure to go out and pick fruit right off the tree. -Norma Poole, Auburndale, Florida

Steps:
- In a large bowl, dissolve yeast in water. Add the milk, shortening, sugar, salt, egg and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Knead on a lightly floured surface until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Meanwhile, in a small bowl, combine filling ingredients; set aside., Punch dough down; divide in half. Roll each half into a 15x10-in. rectangle. Spread half the filling on each rectangle. Roll up, jelly-roll style, starting with a long end. Cut each into 15 rolls. , Place, cut side down, in two greased 11x7-in. baking pans. Cover and let rise until doubled, about 45 minutes. , Bake at 375° for 20-25 minutes or until lightly browned. In a small bowl, combine the confectioners' sugar, butter, extract and enough milk to achieve desired consistency; spread over warm rolls. Freeze option: Cover and freeze unrisen rolls. To use, thaw in refrigerator overnight. Let rise, covered, in a warm place until doubled, about 1-1/2 hours. Bake and frost rolls as directed.

SOUR CREAM ROLLS
This is from my cookbook entitled "Something is Cooking in the Mountains". These are recipes from the northeast Georgia Mountains. This is a simple recipe for delicious rolls. This recipes makes 12 rolls using a regular muffin pan. You could use mini muffin pans for smaller rolls for a shower or brunch. Hope you enjoy!

- Preheat oven to 350 degrees.
- Mix all ingredients well.
- Put into ungreased muffin pans.
- Bake for 20 minutes.
- Dough will also keep well in the refrigerator for about a week.
ORANGE CRESCENTS
The bold orange flavor of these sweet rolls satisfies at breakfast, dessert or snack time. My family and friends love them and often request that I make a batch. We consider them a real treat!

- In a large bowl, dissolve yeast in water. Add 1/4 cup sugar, salt, eggs, sour cream, 6 tablespoons butter and 2 cups flour. Beat until smooth. Add enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 12-in. circle. Brush with remaining butter. Combine orange zest and remaining sugar; sprinkle over butter. , Cut each circle into 12 wedges. Roll up wedges from the wide end. Place pointed side down 2 in. apart on greased baking sheets. Curve ends down to form a crescent shape. Cover and let rise in a warm place for 45 minutes or until doubled. , Bake at 350° for 20-30 minutes or until golden brown. Remove from pans to wire racks. Combine glaze ingredients in a small saucepan. Bring to a boil; cook and stir for 3 minutes. Pour over warm rolls. Cool. Store in the refrigerator.

Delicious - orange yeast rolls with a coconut filling. My mother used to make these for a special brunch or coffee party.

Steps:
- Dough: Dissolve yeast in warm water.
- To yeast and water mixture, add sugar, salt, eggs, sour cream and butter. Beat in flour in until smooth. Start with 2-3/4 cup and add the rest if necessary.
- Roll dough as for jelly roll and spread with filling; then roll up and slice. Put slices cut side up in pan. Let rise until double,
- Bake in 375 oven 25-30 minutes.
- Glaze: Cook all ingredients on medium heat for 3 minutes, stirring all the time. Prepare as soon as rolls come out of oven.
- Pour glaze over rolls while they are still hot.

Steps:
- In a large bowl combine 1 1/2 C flour, sugar, yeast and salt.
- In a small saucepan, heat sour cream, water and 2 T butter to 120-130 degrees.
- Add wet ingredients to dry ingredients.
- Beat on medium for 2 minutes.
- Add one egg and 1/2 C flour; beat 2 minutes longer.
- Stir in enough remaining flour to form a soft dough--this may mean using 21/2 C flour as noted above or up to 3 cups.
- Turn onto a floured surface; knead until smooth and elastic--about 6-8 minutes.
- Place in a greased bowl, turning once to grease the top.
- Cover and let rise in a warm place or in a warming oven on "bread proof" for one hour.
- Punch down dough.
- Turn onto a lightly floured surface; divide into 12 pieces.
- Shape each into a ball.
- Place on a greased 9 x 13" baking pan.
- Cover and let rise again, until doubled, about 30 minutes.
- Bake a 375 F for 25-30 minutes or until golden brown.
- Melt remaining butter. Brush over rolls. Remove rolls from pan to a wire rack.

- Combine first 8 ingredients in a 1-pound-loaf bread machine according to manufacturer's instructions.
- Process in dough cycle.
- Turn dough out onto a heavily floured surface, and knead 4 or 5 times.
- Divide dough in half.
- Shape each portion of dough into 9 balls, and place in a lightly greased 9-inch round pan.
- Cover and let rise in a warm place (85 degrees), free from drafts, 30 minutes or until rolls are doubled in bulk.
- Bake, uncovered, at 375 for 18 to 20 minutes or until golden.

- Combine flour, milk, sour cream, melted butter, salt, egg, yeast, and 1/3 cup of the granulated sugar in bowl of a stand mixer fitted with paddle attachment. Beat on medium speed until dough forms, 1 minute. Turn off mixer. Switch to dough hook attachment. Beat on medium speed until dough is smooth and elastic, about 6 minutes. (Dough should pull away from sides of bowl but stick to bottom.)
- Spray a large bowl with cooking spray. Place dough in bowl, turning to coat all sides. Cover and let rise in a warm, draft-free place (about 75°F) until dough has doubled in size, about 1 hour and 30 minutes.
- Lightly punch down dough. Roll dough out on a lightly floured surface into a 19- x 13-inch rectangle. Spread softened butter over dough.
