ORANGE SHERBET

Number Of Ingredients 7

7 ounces sugar
1 1/2 tablespoons finely grated orange zest
1/4 teaspoon kosher salt
2 cups freshly squeezed orange juice, approximately 2 to 3 pounds oranges
1 tablespoon freshly squeezed lemon juice
1 teaspoon vanilla extract
1 1/2 cups very cold whole milk

Steps:

  • In the bowl of a food processor combine all of the ingredients except the milk and process until the sugar is dissolved, approximately 1 minute. Transfer the mixture to a mixing bowl and whisk in the milk. Cover the bowl and place in the refrigerator until the mixture reaches 40 degrees F or below, approximately 1 hour.
  • Pour the mixture into an ice cream maker and process until it is the consistency of soft serve ice cream. You may serve now or transfer to a lidded container and place in freezer until firm, approximately 3 hours.

Orange and lemon juice are combined with gelatin, whipped cream and a beaten egg-white and then frozen in this traditional orange sherbet. This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

¼ cup cold water
1 teaspoon unflavored gelatin
¾ cup boiling water
¾ cup sugar
2 ¼ tablespoons grated orange zest
½ cup orange juice
¼ cup lemon juice
1 egg yolk, beaten
½ cup heavy cream
3 tablespoons sugar
1 pinch salt
1 egg white

Steps:

  • Place cold water in a small bowl and sprinkle gelatin over the surface. Allow to stand 5 minutes.
  • In a medium bowl, stir together boiling water, 3/4 cup sugar and soaked gelatin. Stir until gelatin and sugar are dissolved. Stir in orange zest, orange juice, lemon juice and egg yolk. Set aside.
  • In a large bowl, whip cream with 3 tablespoons sugar and salt until stiff peaks form. In a separate bowl, whip egg white until stiff. Fold into whipped cream. Stir in juice mixture a little at a time. Pour into a shallow dish and place in freezer. Freeze until firm, stirring twice during the first hour.

  • Combine all ingredients in a large mixing bowl until sugar dissolves. Cover and refigerate 1 hour. Transfer to ice cream maker and follow manufacturer instructions.

My Grandmother has been making this for over 50 years. Easy, Refreshing and tastes like a Creamsicle. My Grandmother says it's good served with a pork chop or chicken dinner.

1 teaspoon unflavored gelatin, soaked in 1 tsp water
1 1/4 cups orange juice, heated
1 cup sugar (I think I'll try Splenda)
1/4 cup lemon juice
1 cup whipping cream, whipped (not heavy)

Steps:

  • Soak gelatin in 1 teaspoon of water.
  • Heat orange juice and dissolve gelatin and sugar in it. Cool to lukewarm.
  • Pour orange mix into an 8x8 glass or ceramic dish (I think I'll try tupperware). Cover with plastic wrap and place in freezer until it becomes slushy, approximately 2 hours.
  • Whip cream and whisk or use mixer to combine with orange slush until no white streaks remain.
  • Return to freezer for approximately 2 more hours.
  • *If it separates, mix again.

A delightful treat on a hot day. For variation, try substituting other flavours of jello and kool-aid. As my ice-cream machine is not large, it will not quite hold this whole recipe. I put the excess into a small container and freeze it, stirring a couple times. Freezing time is not included in this recipe because of differences in various ice-cream machines.

1 (6 g) package orange kool-aid
1 1/2 cups sugar
1 cup water
4 cups milk

Steps:

  • Combine jello, kool-aid, sugar and water in a pot.
  • Bring to a boil.
  • Remove from heat.
  • Cool.
  • Stir in milk.
  • Freeze in an ice-cream machine according to manufacturers directions.
  • Scrape into a freezer container and freeze until as hard as you like, if necessary.

3 medium thick skinned oranges
1 1/4 cups sugar
1 tablespoon sugar
2 cups orange juice
1 lemon, juice of
1 orange, zest of
1 paraffin wax, candle (possibly not needed)

Steps:

  • cooking time is freeze time.
  • with a sharp knife slice the top part of the oranges
  • with a spoon scoop out the inside of the orange.
  • if the bottom of the orange shell has a hole then seal it with some melted wax from a candle.
  • set orange shells aside.
  • now mix all ingredients in a saucepan and heat on medium hhigh heat until the mixture boils and sugar is dissolved.
  • put in a cup or bowl and let chill in refrigerator or freezer.
  • put in ice cream can and process as per manufacturer's directions.
  • put sorbet in orange shells mounding slightly and cover with orange caps.
  • place in freezer until firm about 2-3 hours.
