Mary Berry's mince pies image

Mary Berry's mince pies will win any Christmas get-together. These Christmassy bites have delicious orangey pastry and grated marzipan on top that gives a wonderful flavour. Equipment and preparation: for this recipe you will need a 12-hole muffin tin and 8cm/3in fluted pastry cutter.

175g/6oz plain flour
75g/2½oz cold butter, cubed
25g/1oz icing sugar, plus extra for dusting
1 large orange, grated zest only
1 free-range egg, beaten
250g/9oz good-quality ready-made mincemeat
100g/3½oz ready-to-eat dried apricots, finely chopped (do this in a food processor if you're short on time)
125g/4oz uncoloured marzipan, grated

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6 and place a baking sheet inside to heat up.
  • For the pastry, either pulse the flour and butter in a food processor until the mixture resembles breadcrumbs, or rub the flour and butter together in a large bowl using your fingertips.
  • Stir in the icing sugar and orange zest, then stir in the beaten egg and mix until the ingredients just come together as a dough. Wrap the dough in greaseproof paper and chill in the fridge for 10-15 minutes, or until firm.
  • When the pastry has rested, unwrap it. Place the greaseproof paper on a work surface and lightly dust with icing sugar. Place the dough on top, dust with icing sugar, then cover with another sheet of greaseproof paper. Roll the pastry between the sheets of greaseproof paper to a thickness of 1-2mm. (If you are confident rolling out pastry you do not need to use the greaseproof paper, but it does help prevent the pastry tearing if the dough is a little sticky).
  • Stamp 12 rounds from the pastry using a 8cm/3in fluted pastry cutter. (Any leftover pastry can be frozen and used to make jam tarts.) Line each hole of the muffin tin with one of the pastry rounds and prick the base of each with a fork.
  • For the filling, mix the mincemeat with the chopped apricots until well combined. Divide the mixture equally among the pastry cases. Top each tart with some of the grated marzipan.
  • Slide the muffin tin onto the hot baking sheet and bake in the oven for 12-15 minutes, or until golden-brown and crisp. Dust with icing sugar and serve warm.

Paul Hollywood prefers melt-in-the-mouth pastry for his fruity mince pies, so this recipe is nice and short

1 large jar mincemeat (about 600g)
2 satsumas, segmented
1 apple, finely chopped
zest 1 lemon
little icing sugar, for dusting
375g plain flour
260g unsalted butter, softened
125g caster sugar, plus extra for sprinkling
1 large egg, plus 1 beaten egg for glazing

Steps:

  • Place 375g plain flour and 260g softened unsalted butter in a bowl and rub together to a crumb consistency.
  • Add 125g caster sugar and 1 large beaten egg, and mix together.
  • Tip out onto a lightly floured surface and fold until the pastry comes together, be careful not to over mix.
  • Wrap the pastry in cling film and chill for 10 mins.
  • Scoop the large jar of mincemeat into a bowl and add 2 segmented satsumas, 1 finely chopped apple and zest of 1 lemon.
  • Heat oven to 220C/200C fan/gas 7.
  • Roll out the pastry to 3mm thick.
  • Using a round cutter (about 10cm), cut out 16 bases and place them into muffin trays. Put 1½ tbsp mincemeat mixture into each. Brush the edge of each pie with a little beaten egg.
  • Re-roll out the pastry to cut 7cm lids and press them on top to seal. Glaze with the beaten egg, sprinkle with the extra caster sugar, then make a small cut in the tops.
  • Bake the mince pies for 15-20 mins until golden brown. Leave to cool before releasing them from the muffin trays and dusting with a little more icing sugar before serving.

1 ¾ cups all-purpose flour
¼ cup confectioners' sugar
2 teaspoons ground cinnamon
⅔ cup butter, softened
2 tablespoons grated orange zest
¼ cup ice water
¾ cup prepared mincemeat pie filling
1 egg, beaten
¼ cup confectioners' sugar for dusting

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Sift together the flour, 1/4 cup confectioners' sugar, and cinnamon. Use a pastry cutter or two forks to mix in the butter until mixture resembles fine bread crumbs. Stir in the orange zest. Sprinkle with ice water, and gather dough into a ball. Roll out on a lightly floured surface to 1/4 inch thick. Cut out approximately 18 (3 inch) diameter circles, and 18 (2 inch) circles, rerolling dough as needed.
  • Line muffin cups or tart tins using the 3 inch pastry circles. Fill each pastry cup with about 1 tablespoon of mincemeat filling. Top with 2 inch pastry circles, pinching circles together to seal the edges. Brush the top of each pie with egg.
  • Bake pies in preheated oven until tops are golden brown, 15 to 20 minutes. Cool slightly on wire racks. Dust with 1/4 cup confectioners' sugar just before serving.

200g very cold butter , cubed
400g plain flour , plus extra for dusting
100g ground almonds
100g golden caster sugar
zest 2 oranges
2 tbsp milk (or use orange juice)
100g frozen cranberries
400g jar good-quality mincemeat
handful flaked almonds
2 tsp icing sugar , plus dusting
200ml tub crème fraîche

Steps:

  • Whizz the butter, flour and ground almonds in a food processor until the butter has disappeared. Pulse in the sugar and half the orange zest. Add the milk and keep whizzing until a rough dough comes together. Tip onto the work surface, press together and shape into a smooth disc, kneading once or twice if you need to. Chill for 15 mins. Can be made up to 3 days ahead and chilled, or frozen for up to 1 month.
  • Scatter a little flour onto the work surface. Roll out the dough to about the thickness of a £1 coin. Using an 8cm cutter, stamp out 24 circles and use to line the holes of 2 x 12-hole bun tins.
  • Heat oven to 200C/180C fan/gas 6. Mix cranberries and mincemeat, then spoon into cases. Scatter each pie with flaked almonds. Can be frozen for up to 1 month. Bake the pies for 18-20 mins until the pastry and almonds are golden. When ready to serve, dust with the tiniest bit of icing sugar. Stir 2 tsp icing sugar and remaining zest into the crème fraîche, then dollop onto each pie to serve.

Learn to make British mince pies, which are basically rich tarts filled with dried fruits and spices soaked in alcohol, a Christmas specialty.

Number Of Ingredients 25

1¼ cup (175g) currants
1¼ cup (175g) large dark raisins
6 oz (175g) stewing apple, in small pieces
⅓ cup (50 g) candied orange peel
2 oz (50 g) prunes, pitted and chopped
½ cup (115g) butter, frozen and grated
½ cup (115g) soft brown sugar
½ tsp. ground cinnamon
½ tsp. ground mace
½ tsp. ground cloves
¼ tsp. ground nutmeg
¼ tsp. ground ginger
Pinch of sea salt
½ lemon or Seville orange, zest, and juice
1 cup brandy or rum (or half sherry, half rum) or as needed
1½ cups (180g) all-purpose flour
2 Tbsp. (20g) confectioners' sugar
Pinch of sea salt
7 Tbsp. (100g) chilled butter, diced
1 Tbsp. cold water
1 egg yolk
Butter, for greasing
Flour, for dusting
1 egg yolk
1 Tbsp. milk

Steps:

  • Put all the ingredients for the mincemeat in a bowl and add brandy or rum to cover the fruit. Stir well, then let it rest overnight. The next day, stir again and then divide among sterilized preserving jars.
  • To make the pastry, mix the flour, sugar, and salt in a large bowl. Rub the butter into the mixture until it is the consistency of fine breadcrumbs. Add the water and egg yolk and knead until the mixture comes together into a smooth dough. Alternatively, use a food processor to make the pastry. Wrap the dough in plastic wrap and let it rest for 30 minutes in the refrigerator.
  • Preheat your oven to 350° F. Grease the tart molds with butter and cover the base of each with a small circle of parchment paper. Dust with flour.
  • Briefly knead the pastry until smooth, then pat it into a rectangle and roll it out to a thickness of ⅛ inch. Use a round cutter with a diameter of 2¾ - 3¼ inches to cut out pastry circles. Gently push the pastry rounds into the tart molds. Prick the base or each tart shell three times with a fork.
  • Knead the remaining dough back together and roll it out to cut out the lids-you can choose whichever shape you like, but stars are the most traditional.
  • Divide the 8 ounces of filling among the tarts and press down gently. Place the lids on top and brush with the egg wash.
  • Bake in the middle of the oven for 20-25 minutes until golden brown. Serve warm or cold.

ORANGE AND ALMOND CRUMBLE CHRISTMAS MINCE PIES

Delicious little pies that combine an orange short crust pastry base with mincemeat filling and an almond crumble topping. Serve these warm with whipped cream or brandy butter. This recipe can be made in to one large pie - but I still prefer the dainty individual mini pies! I have two mincemeat recipes posted that can be used in these pies, if you are unable to source good quality commercial mincemeat locally. Recipe #257241 or Recipe #184762. Don't forget to leave a couple out for Father Christmas on Christmas Eve!

100 g butter, chilled and cut into cubes
175 g plain flour, plus extra for dusting
1 tablespoon light brown sugar
1 orange, zest of, finely grated
250 g good quality mincemeat, preferably home-made
50 g cold butter
50 g plain flour
2 tablespoons light brown sugar
2 tablespoons almonds, finely chopped
icing sugar, for dusting

Steps:

  • Make the pastry in a large bowl or food processor by blending the butter into the flour until the mixture resembles breadcrumbs.
  • Stir in the sugar and orange zest and then 2 tbsp water.
  • Bring the mixture together with your hands, adding a few more drops of water if it feels a little dry.
  • Preheat the oven to 180C/375F/gas 4.
  • Roll out half the pastry (keep the other half wrapped in the fridge) on a lightly floured surface. You want the pastry to be very thin, so it is crisp when cooked.
  • Cut out 12 circles of pastry with a plain 6cm cutter (you will need to re-roll the pastry a couple of times) and use to line a 12-hole, non-stick cup cake or mini muffin tin.
  • (It is quite a soft pastry, so any little gaps that form as you are lining the holes can easily be patched up.).
  • Chill while you make the topping.
  • In a small bowl, make the crumble topping by rubbing the butter into the flour until the mixture looks like breadcrumbs. Stir in the sugar and almonds.
  • With a teaspoon, fill each pastry case with mincemeat, gently pressing it down to leave room for the topping.
  • Sprinkle the topping over each pie, place the tin on a baking tray and bake for 20 minutes or until the topping is golden.
  • Leave the pies to cool in the tin before taking them out carefully. They are fragile when hot, so use a small knife to help lift them out.
  • Unless you have two tins, repeat the process with the second batch of pastry, filling and topping.
  • Eat the mini mince pies warm or cold, lightly dusted with icing sugar and served with whipped cream or brandy butter.
