Orange-Miso Glazed Beets image

The sugar from the fresh orange juice cooks down with miso to create a vibrant and umami packed glaze which adds a lot of flavor to the earthy beets.

2 pounds medium beets (about 7), trimmed
3/4 cup fresh orange juice (from 2 to 3 oranges)
2 tablespoons white miso paste
2 1/2 teaspoons sugar
2 1/2 teaspoons soy sauce
4 1/4-inch-thick slices ginger
3 cloves garlic, smashed
Kosher salt
Sliced scallions, for topping

Steps:

  • Preheat the oven to 400˚ F. Put the beets in a large baking dish and add 1/3 cup water; cover the dish with foil. Roast, adding more water to the pan if needed, until the beets are easily pierced with a knife, 50 to 60 minutes. Uncover and let cool. Rub off the beet skins and cut the beets into 1/2-inch-thick wedges; transfer to a medium bowl.
  • Combine the orange juice, miso paste, sugar, soy sauce, ginger and garlic in a medium skillet over medium-high heat. Bring to a simmer and cook, stirring occasionally, until thickened and reduced to about 1/4 cup, 8 to 10 minutes. Strain through a fine-mesh sieve and pour over the beets. Season with salt and toss. Sprinkle with scallions.

Optional add in: 1/2 teaspoon finely grated fresh ginger

Steps:

  • In a small bowl, whisk together all ingredients until a creamy dressing forms. Store refrigerated up to 1 month.

1 cup mayonnaise
2 tablespoons frozen orange juice concentrate, thawed
1 tablespoon yellow miso (fermented soybean paste)*
1 tablespoon oriental sesame oil
1 teaspoon grated peeled fresh ginger
1/2 teaspoon grated orange peel
1 1/2 pounds skinless salmon fillet, cut into 3/4-inch cubes (about 48 pieces)
2 tablespoons vegetable oil
5 tablespoons sesame seeds (white and/or black)
Cocktail toothpicks

Steps:

  • Whisk first 6 ingredients in medium bowl to blend well. Season orange-miso sauce to taste with salt and pepper. (Can be made 1 day ahead. Cover; refrigerate. Bring to room temperature before serving.)
  • Line large baking sheet with foil. Place salmon and vegetable oil in large bowl; toss to coat. Sprinkle salmon with salt and pepper. Place sesame seeds on small plate. Coat 1 surface of each salmon piece with sesame seeds. Arrange salmon, sesame-coated side up, in single layer on prepared baking sheet. (Can be made 6 hours ahead. Cover; chill.)
  • Preheat oven to 400°F. Bake salmon uncovered until just cooked through, about 5 minutes; transfer to platter. Skewer each piece with toothpick. Serve warm, passing orange-miso sauce.
  • *Available at Japanese markets and natural foods stores and in the Asian foods section of some supermarkets.

1 teaspoon grated orange peel
6 6-ounce salmon fillets (each about 1 1/2 inches thick)
Finely chopped green onions

Steps:

  • Whisk first 6 ingredients in small bowl.
  • Preheat broiler. Line baking sheet with aluminum foil. Place salmon on foil, skin side down. Spread miso mixture over salmon. Broil fish until glaze begins to blister and brown, about 3 minutes. Cover fish loosely with foil. Broil until fish is cooked through, about 5 minutes longer. Transfer fish to plates. Top with onions.

2 teaspoons low sodium soy sauce
2 teaspoons sesame oil
5 teaspoons brown sugar
1/2 teaspoon grated orange zest
4 (4 ounce) skinless salmon fillets
2 teaspoons sesame seeds
3 tablespoons diced green onions
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 425°F Spray a baking sheet with cooking oil.
  • To make the glaze, combine the miso, orange juice, soy sauce, oil, sugar and orange zest in a small bowl.
  • Remove 2 tbsp of the glaze and brush lightly over the slamon. Sprinkle with the sesame seeds.
  • Place salmon on prepared baking sheet, and bake for 10 minutes (per inch of fish) or until the fish flakes when pierced with a fork. Serve with the remaining sauce on the side. Garnish each fish with a sprinkling of green onions and cilantro.

  • Preheat the oven to 400°. In a small saucepan, bring the mirin and sake to a boil. Whisk in the ají amarillo paste, miso and orange and lime juices and simmer gently, stirring occasionally, until thickened, about 20 minutes.
  • Meanwhile, season the salmon with salt and pepper. Press 2 tablespoons of the quinoa onto the skinned side of each fillet.
  • In a large ovenproof nonstick skillet, heat the canola oil. Add the salmon fillets, quinoa side down, and cook over high heat until the quinoa is browned, about 2 minutes. Transfer the skillet to the oven and roast the salmon until almost opaque throughout, about 4 minutes.
  • Using a spatula, carefully transfer the fillets to plates, quinoa side up. Spoon the diced cucumber alongside and serve with the orange-miso sauce.
