I was out of honey but still wanted to make salmon teriyaki one night, so I improvised with maple syrup. The recipe turned out to be a success. The orange juice and maple syrup give the salmon just the right balance of sweetness, and the onion and garlic add to the flavor. Note: Preparation time includes marinating time.

1/3 cup maple syrup, real
1/3 cup orange juice
2 tablespoons soy sauce
1/4 cup onion, finely chopped
1 garlic clove, minced
4 salmon fillets

Steps:

  • Preheat oven to 375°F.
  • In a large sealable plastic bag, combine first five ingredients. Then add salmon. Seal the bag, gently squeeze and toss until marinade is evenly distributed over salmon filets.
  • Marinate at room temperature for 30 minutes or 1 hour refrigerated.
  • In a baking pan, empty contents of plastic bag and arrange salmon filets in one layer.
  • Roast for 10-12 minutes or until salmon is tender and flakes easily when forked.

1/3 cup apple juice
1/3 cup maple syrup
3 tablespoons reduced-sodium soy sauce
2 tablespoons finely chopped onion
2 garlic cloves, minced
4 salmon fillets (6 ounces each)

Steps:

  • In a small bowl, whisk the first five ingredients until blended. Remove 1/2 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag. Add salmon; seal bag and turn to coat. Refrigerate 1-3 hours., Drain salmon, discarding marinade in bag. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Place salmon on grill rack, skin side down. Grill, covered, over medium heat or broil 4 in. from heat 10-12 minutes or until fish flakes easily with a fork, basting frequently during the last 4 minutes.

3 tablespoons frozen orange juice concentrate
2 cloves garlic, crushed or minced
1 teaspoon finely minced peeled gingerroot
2 tablespoons low sodium soy sauce
3 green onions, thinly sliced,including 3 inches of green
2 tablespoons toasted sesame seeds

Steps:

  • Place salmon fillet, skin side down, in a microwave-safe dish.
  • Combine orange juice, garlic, ginger and soy sauce; pour over fish.
  • Microwave, covered, on high power for 7 minutes (If microwave does not rotate, turn dish after 5 minutes).
  • Test for doneness; cook longer if needed.
  • Serve on platter or plates, covered with sauce and sprinkled with green onions and sesame seeds.

1/2 cup brown sugar
1/4 cup maple syrup
3 tablespoons olive oil
2 tablespoons teriyaki sauce
Kosher salt and freshly ground black pepper
Four 6-ounce salmon fillets, skin off

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small bowl, combine the brown sugar, maple syrup, olive oil, teriyaki sauce and some salt and pepper. Whisk until fully combined.
  • Arrange the salmon in a single layer in a baking dish. Brush the glaze over the fish, coating evenly. Bake until the fish is cooked through, about 15 minutes.

2 pounds salmon fillets, 6 fillets or 2 whole sides
Salt and freshly ground black pepper
1/2 cup reduced-sodium soy sauce
2 tablespoons molasses
1 tablespoon brown sugar
3 cloves garlic, minced
1 (11-ounce) can mandarin oranges, drained
1 pound fingerling potatoes or Yukon gold potatoes, cut into thin strips
2 cups haricots verts or string beans

Steps:

  • Preheat oven to 400 degrees F.
  • Coat a large roasting pan and large baking sheet with cooking spray.
  • Season salmon with salt and pepper and place in prepared roasting pan. In a small bowl, whisk together soy sauce, molasses, brown sugar, and garlic. Pour mixture over salmon in pan. Arrange oranges over salmon, set aside.
  • Arrange potatoes and haricots verts on baking sheet and spray with cooking spray. Season with salt and freshly ground black pepper.
  • Roast salmon and vegetables for 20 to 25 minutes, until fish is fork-tender and potatoes are golden brown and tender. Remove from oven.
  • Serve about 2/3 of the salmon, about 16 ounces or 4 fillets with all of the vegetables. Reserve remaining salmon about 8 ounces or 2 fillets for the linguine, if desired

¼ cup maple syrup
2 tablespoons soy sauce
1 clove garlic, minced
¼ teaspoon garlic salt
⅛ teaspoon ground black pepper
1 pound salmon

Steps:

  • In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
  • Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
