- Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Combine mustard and allspice; rub over ham., Bake, uncovered, at 325° until a thermometer reads 140°, 2 to 2-1/4 hours. Spread top of ham with marmalade during the last hour of baking, basting occasionally.

- Heat Grill: Heat your pellet, gas or charcoal grill to 250F degrees with an indirect heat zone. If using a gas grill, add Cowboy wood chips to a smoke box to add smoke flavor. (Scroll up to see details on how to cook ham on different types of grills.)
- Season: Place the ham in an aluminum half pan. Slather it with mustard. Coat with rub. Pour the beer, soda or juice into the pan around the ham.
- Grill: Place the ham on the grill over indirect heat and smoke for 3 hours. Baste with pan drippings every 30-60 minutes.
- Glaze: In a medium bowl, stir together the glaze ingredients. Pour the glaze onto the ham and continue cooking for 30 minutes.
- Serve: Remove the ham from the grill. Slice and serve.

BOURBON, PINEAPPLE AND ORANGE GLAZED HOLIDAY HAM
One of my family's favorite holiday ham recipes --perfect for Easter or New Year's celebrations. The glaze is really wonderful-- half gets brushed onto the ham and baked, the remainder gets passed at the table. Enjoy!

- Preheat oven to 325°F.
- Using a sharp knife, score the ham into a diamond pattern about 1/4-inch deep and 1-inch apart.
- Stud the ham with whole cloves in the center of each diamond.
- Place ham fat side up in a shallow roasting pan (for easy clean-up line pan with aluminum foil, or use a heavy-duty disposable aluminum pan).
- Bake ham for 2 1/2 hours.
- Meanwhile, stir together the brown sugar, bourbon, orange marmalade, crushed pineapple, and prepared mustard. Heat to boiling over medium-high heat, stirring until sugar has dissolved.
- Remove ham from the oven.
- Spoon half of the glaze/sauce over the ham.
- Decorate ham with pineapple rings, using a few toothpicks to hold ring in place. Place a cherry in the center of each ring, and attach it with a toothpick.
- Return ham to the oven and bake for another 20 to 30 minutes.
- Transfer ham to a platter and allow to rest for 10 minutes before carving (be sure to remove all toothpicks).
- Pass the remaining sauce at the table.

BAKED HAM WITH ORANGE AND GINGER GLAZE

- Prepare and heat the ham according to directions.
- Meanwhile combine marmalade, ginger root and mustard thoroughly.
- Remove meat 30 minutes, before the ham is done.
- Raise oven heat to 425°F.
- Brush with marmalade mixture.
- Pour ginger ale and 1/4 orange juice into the roasting pan.
- Bake uncovered for 30 minutes, basting the ham with the pan juices every 10 minutes.
- Remove from pan, put on a board, cover lightly with foil and let rest for approx 15 minutes.
- Pour cooking juices into a small sauce pan. Stir in brown sugar; heat and let simmer.
- Combine the remaining orange juice with the cornstarch.
- Add to the mix and let simmer until the sauce thickens, about 1-2 minutes.
- Drizzle ham slices before serving.

- Preheat oven to 325°F Trim fat to about 1/4 to 1/2 inch thickness. Place ham, fat side up, in a roasting pan and roast for 2 1/2 to 3 hours (10 minutes per pound) until internal temperature reaches 130°F Remove from oven.
- Turn oven up to 425°F Pour apple cider (or broth or water) into pan to a depth of 1/2 inch. Score ham and brush top with mustard. Combine pineapple and sugar and spread over ham, pressing in with the back of a spoon. Return ham to oven and cook about 15 to 20 minutes until browned. Remove ham from oven and place on a cutting board to cool about 20 to 30 minutes.
- Scrape bottom of roasting pan to remove any bits that were stuck during cooking. Pour into a quart measuring cup. Pour off any accumulated fat. Add chicken broth to make 2 cups. Strain cooking liquid into a saucepan and add molasses, brown sugar and mustard; Bring to a boil and season with salt and pepper. Combine cornstarch with 2 tablespoons of water; add to saucepan. Boil, while stirring, until thickened. Pour into a gravy boat and pass with the ham.

- Trim fat and rind from ham. Score outside of ham in a diamond pattern. Place ham on rack coated with cooking spray, and place rack in a shallow roasting pan.
- Combine 1/4 cup maple syrup, 2 tablespoons mustard, orange rind, and orange juice; stir well, and brush over ham.
- Bake at 425 degrees for 5 minutes. Reduce oven temperature to 325 degrees and cook an additional hour and 30 minutes or until thoroughly heated. Baste ham with maple syrup mixture every 30 minutes. Transfer ham to a platter and let stand 15 minutes before slicing.
- Combine remaining syrup, remaining mustard, and marmalade in a small saucepan. Cook over medium heat 3 minutes or until thoroughly heated, stirring constantly.

- Drain the juice from the can of mandarin oranges into a microwave-safe bowl. Eat the oranges, or reserve for other uses. Stir in the brown sugar and orange juice. Cook in the microwave for 5 minutes on full power, then stir and cook for another 5 minutes. Glaze will be runny.

- Melt 1/2 cup butter in a medium sized glass bowl. Add 1/2 c brown sugar , 1/4 c honey, 1/2 c orange juice, 1/4 tsp cloves, and 1/4 tsp cinnamon.
- Whisk it together to combine and heat it in the microwave for 1 minute.
- Line a large baking pan with tin foil and spray it with cooking spray. Unwrap your ham and place it in the center of the pan. Brush some of the orange glaze over the ham. Put in 325 oven to bake.
- Take the ham out of the oven every 15 minutes and brush or pour more glaze over the top. Hal way through baking you might turn over the ham and place it face down in the pan so it won't dry out and coat all sides of ham with the glaze. Bake for 1 1/2 hours.
- For Mustard Sauce: Place 3 eggs into a medium sized sauce pan. Whisk them together until frothy.
- Combine 1/2 cup brown sugar, 1 tbsp flour, 1/4 c dry mustard in a small bowl.
- Pour it into the sauce pan with the egg yolks.
- Pour in 1/2 c water and 1/2 c white vinegar.
- Whisk the mixture together and heat it over medium heat, stirring constantly. Bring it to a boil and keep stirring while it thickens. The texture will be like mustard you would squeeze out of a bottle.
- Add 4 tablespoons butter to the warm sauce and stir it well to combine. Serve the sauce warm with the ham.
- The sauce will start to thicken as it cools. Reheat it in the microwave if you need before you serve it. Leftovers can be stored for up to 3 weeks.
