This updated version of the classic Philadelphia float is flavored with mandarin oranges and a dash of vanilla for a simple, fuss-free dessert.

Number Of Ingredients 4

2 Mandarin oranges
1/4 teaspoon vanilla extract
2 scoops best-quality vanilla ice cream
Club soda

Steps:

  • Remove the rind from the oranges. Supreme the oranges into a small bowl and squeeze the juice from the membrane over them. Stir in the vanilla.
  • Transfer oranges and juice to a tall glass. Add the ice cream to the glass. Top off with the club soda. Stir once and serve immediately with a tall spoon.

  • Add the ice cream to a large glass and top with some orange soda and whipped cream.

1 orange wedge
2 tablespoons yellow sanding sugar
1 pint coconut sorbet
Two 12-ounce bottles orange soda, chilled
1 canister sweetened whipped cream

Steps:

  • Rub the orange wedge along the rims of 2 pint-size glasses. Pour the sugar onto a shallow dish and dip the rims of the glasses into the sugar.
  • Put 2 to 3 scoops of coconut sorbet into each glass. Fill each glass with orange soda (you may not need to use it all). If you pour the soda over the back of a spoon into the glasses, it will keep the soda from breaking up the sorbet too much. Top each float with lots of whipped cream and sprinkle with yellow sanding sugar. Add a straw and enjoy!

2 cups flour
1/2 cup heavy cream
1/2 cup butter (no substitutes)
1/4 teaspoon orange extract
2 drops orange food coloring
powdered sugar (for dusting board)
3/4 cup powdered sugar (more if needed)
1/4 cup butter (no substitutes)
1 teaspoon orange extract
2 drops orange food coloring
1/4 teaspoon heavy cream (more if needed)

Steps:

  • Cream butter, add flour.
  • Stir in cream, orange extract, mix well, until dough holds together.
  • Roll dough out thinly on board dusted with powdered sugar.
  • Cut with 1 1/2 to 2-inch cookie cutter.
  • Bake at 400° for 8-9 minutes.
  • Cool completely on wire rack.
  • For filling: Combine all filling ingredients. Add more powdered sugar, or cream, as necessary to make spreadable filling.
  • Spread filling on cookies, top with another cookie.

  • In a tall float glass, place as much ice-cream as you want.
