This is really simple but really full of flavor! We cook it on the grill but I'm sure you can either cook stovetop or in the oven.

4 boneless chicken breasts
2 tablespoons Dijon mustard
1 tablespoon garlic
2 tablespoons Worcestershire sauce
1/4 cup olive oil
1 tablespoon balsamic vinegar
1/2 cup orange juice
salt and pepper

Steps:

  • Combine marinade ingredients, season with salt and pepper.
  • Add chicken breasts.
  • Refrigerate for 1 hour.
  • Remove chicken from marinade and grill on a hot grill until cooked through.

2 SunKist® Cara Cara Oranges
2 SunKist Navel Oranges
1 SunKist Cara Cara Orange
1 SunKist Navel Orange
2 SunKist Blood Oranges
4 boneless skinless chicken breasts
1/2 cup flour
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 tablespoon olive oil
1 tablespoon butter
2 leeks
1 cup juiced oranges ((see above))
1 cup chicken broth (homemade or low sodium canned)
3 tablespoons vermouth (optional)
2 tablespoons whole grain dijon mustard
1 tablespoon honey
1 bunch thyme sprigs
orange supremes
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Use a citrus juicer to juice the Cara Cara and Navel Oranges until you have one cup of fresh juice. (I don't use the Blood Orange for the juice because it changes the bright color of the juice). You can strain the juice through a mesh strainer if you want pure juice without the pulp.
  • Use a very sharp knife to trim the top and bottom of the oranges and give them a flat base to rest on while you cut away the rest of the skin. Cut away the rind of the orange by slicing from the top, following the natural curve of the fruit to remove the peel and white pith so that the fruit is exposed.
  • Continue in this fashion until all of the peel has been removed.
  • To supreme the orange, use a sharp knife and carefully slice next to the membrane of one segment of the orange and follow to the next, to loosen and remove them, so there's no pith or peel attached to the fruit. Continue until the fruit has been supremed. Transfer the orange segments to a bowl and set aside.
  • Slice the leeks in half lengthwise, then cut into 1/2" pieces, crosswise. Transfer leeks to a large bowl filled with cool water and swish vigorously to loosen any dirt or debris trapped between the layers.
  • Lift the leeks out of the water and transfer to a salad spinner. Spin dry and set aside.
  • In a shallow bowl or pan combine the flour, salt, pepper and cayenne. Whisk to combine.
  • Pat the chicken dry with paper towels and dip them into the flour mixture to coat them completely.
  • Add olive oil to the skillet and heat over medium-high heat. When the oil is hot, add the chicken and cook for about 4-5 minutes before flipping the chicken with a pair of tongs. Continue to cook for 3-4 minutes, then transfer the chicken to a rimmed baking sheet.
  • Turn the heat down to medium and add butter to the skillet. Stir the leeks into the butter to coat. Cover the skillet with the lid and cook for 4-6 minutes, stirring occasionally until the leeks are softened and translucent.
  • Stir in the mustard, honey, thyme, broth, orange juice and vermouth, and turn up the heat to bring the sauce to a boil.
  • Transfer the chicken to the pan and nestle them down into the sauce. Cover and cook for 5-8 more minutes until the chicken is cooked through.
  • If you want to thicken the sauce, mix the cornstarch and water together to form a slurry and stir into the sauce. Let it come to a boil and cook for one minute. The sauce will thicken.
  • Stir in the segmented oranges to warm them through.
  • To serve, spoon the cooked orzo or egg noodles onto a plate. Top with a chicken breast and spoon the orange dijon sauce over the top.

4 boneless skinless chicken breast halves
1/2 cup olive oil
3 garlic cloves, minced
1/2 teaspoon salt
1/8 teaspoon ground black pepper
fresh coarse ground black pepper
shredded orange peel (optional)
fresh herb (optional)
1/4 cup thawed frozen orange juice concentrate
2 -4 tablespoons dijon-style mustard
2 tablespoons water
1 tablespoon balsamic vinegar, if you like
1 tablespoon olive oil
1 teaspoon snipped fresh basil
1 teaspoon snipped of fresh mint
1/2 teaspoon snipped fresh rosemary

Steps:

  • Place the chicken in a heavy plastic bag set into a large bowl.In a small bowl, stir together olive oil, garlic, salt and ground black pepper. Pour over the chicken breast halves in the heavy plastic bag. Close the bag and turn chicken breast halves to coat well. Marinate in the refrigerator for at least 4 hours or up to 8 hours, turning the bag occasionally. Drain chicken; discard marinade. To broil, place chicken on unheated rack of a broiler pan. Broil 4 to 5 inches from heat for 12 to 15 minutes or until chicken is no longer pink, turning chicken over after half of the broiling time. Or, to grill, place chicken on the rack of an uncovered grill, boned sides up, directly over medium coals. Grill, uncovered, for 12 to 15 minutes or until no longer pink, rearranging the chicken breasts once on each side to produce diamond markings and turning chicken over after half of the grilling time. Transfer chicken to 4 warm serving plates and cut into slices, if you like. Spoon Orange Dijon Glaze on top and sprinkle with some coarsely ground pepper. Garnish with the orange peel and, if you like, the fresh herb sprigs.
  • Orange Dijon Glaze: In a small saucpean, stir together 1/4 cup thawed frozen orange juice concentrate, 2 to 4 tablespoons Dijon style mustard, 2 tablespoons water, 1 tablespoon balsmic vinegar, if you like, 1 tablespoon olive oil, 1 teaspoon snipped fresh basil, 1 teaspoon snipped fresh mint and 1/2 teaspoon snipped fresh rosemary. Heat until glaze is warmed through. Makes 3/4 cup.

1/2 cup HEINZ Tomato Ketchup
1/3 cup orange marmalade
1/4 cup GREY POUPON Country Dijon Mustard
1 Tbsp. dried minced onion
1 Tbsp. lite soy sauce
1 clove garlic, crushed
3 lb. chicken wings, split at joints, tips removed

Steps:

  • Mix all ingredients except chicken until blended. Pour half over wings in shallow dish; turn to evenly coat wings. Refrigerate 1 hour to marinate.
  • Heat oven to 375°F. Remove wings from marinade; discard marinade. Place wings in single layer on rimmed baking sheet sprayed with cooking spray.
  • Bake 40 to 45 min. or until done, draining after 20 min. About 5 min. before wings are done, cook remaining ketchup mixture in saucepan on medium heat 5 min. or until heated through.
  • Serve wings with sauce.

4 boneless chicken breast halves with skin
All purpose flour
2 tablespoons (1/4 stick) butter
1 tablespoon olive oil
4 teaspoons minced peeled fresh ginger
2 tablespoons brown sugar
1 teaspoon dry mustard
2 cups orange juice
2 teaspoons grated orange peel
3/4 cup thinly sliced green onions

Steps:

  • Sprinkle chicken with salt and pepper; dust with flour. Melt butter with oil in large skillet over medium-high heat. Add chicken; sauté until brown, about 3 minutes per side. Transfer chicken to plate. Add ginger to skillet; stir 1 minute. Add brown sugar and mustard and stir to blend into drippings. Add orange juice and orange peel. Simmer until sauce is slightly reduced, stirring occasionally, about 8 minutes. Return chicken and any accumulated juices to skillet. Simmer 3 minutes. Turn chicken over and add green onions. Simmer until chicken is cooked through and sauce is thick enough to coat spoon, about 3 minutes longer. Season sauce with salt and pepper. Transfer chicken and sauce to platter.
