Love that creamy, dreamy orange and vanilla frozen treat? Fall in love with a cookie that tastes just like an orange dreamsicle. It all starts with a tender sugar cookie base flavored with orange and vanilla extract. White vanilla baking chips add sweet creaminess, and the orange tint is a fun touch that's easy to pull off with a little food coloring. So no matter the time of year, you can always surprise the kids with a treat that'll bring back the sweet days of summer!

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter, softened
1 teaspoon orange extract
1 teaspoon vanilla
1 egg
5 drops yellow food color
2 drops red food color
1 1/2 cups white vanilla baking chips

Steps:

  • Heat oven to 350°F. In a small bowl, whisk egg, food coloring, vanilla and orange extract. In large bowl, mix butter and sugar cookie mix until well blended. Then, mix in egg and food coloring mixture. Once soft dough has formed, stir in baking chips.
  • On ungreased cookie sheets, drop dough with 1 1/2 tablespoon-size cookie scoop or by rounded tablespoonfuls about 2 inches apart.
  • Bake 9 to 10 minutes or just until dough is set (do not overbake). Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely.

1-1/4 cups crushed gingersnap cookies (about 25 cookies)
5 tablespoons butter, melted
4 ounces cream cheese, softened
2 tablespoons confectioners' sugar
2 tablespoons plus 1/2 cup heavy whipping cream, divided
1/2 cup orange marmalade
4 ounces white baking chocolate, chopped
1/3 cup salted pistachios, chopped

Steps:

  • In a small bowl, mix cookie crumbs and butter; press onto bottoms and up sides of ungreased mini-muffin cups. Freeze 20 minutes., In a small bowl, beat cream cheese, confectioners' sugar and 2 tablespoons cream until smooth. Stir in marmalade; drop by scant tablespoonfuls into cups. Freeze 2 hours or until set., In a double boiler or metal bowl over hot water, melt white chocolate with remaining cream; stir until smooth. Cool slightly. Spoon or drizzle over cups. Sprinkle with pistachios. Freeze, covered, overnight or until firm. Serve frozen.

8 ounces light cream cheese, divided
3 tablespoons skim milk
2 tablespoons reduced-calorie margarine
1 cup all-purpose flour
1 tablespoon sugar
1/3 cup sugar
1 large egg
1 tablespoon orange juice, fresh
2 teaspoons orange zest
1 teaspoon vanilla extract

Steps:

  • Instructions
  • Preheat oven to 350ºF. Coat two 12-cup miniature muffin pans with cooking spray; set aside.
  • To prepare cookie dough, in a large mixing bowl combine 2 ounces cream cheese, milk and margarine. Beat on low speed until blended.
  • In a small bowl, combine flour and 1 tablespoon sugar. Beat flour mixture into cream cheese mixture on low speed until blended.
  • Transfer cookie dough to a lightly floured surface and knead gently 4 times. Divide dough into 24 equal portions and press each portion into bottom and up sides of prepared muffin pans; set aside.
  • To prepare filling, in a food processor or large bowl combine remaining 6 ounces cream cheese, 1/3 cup sugar, egg, orange juice, zest and vanilla. Blend until smooth.
  • Spoon 2 teaspoons filling into prepared cookie cups. Bake until filling is set and edges are golden, 20 to 25 minutes. Cool on wire racks. Yields one cookie cup per serving.
