ORANGE CAKE
Orange Cake is so easy to make, we start with a box mix and use whole navel oranges to make it moist and amazing!

Steps:
- Combine cake mix, butter, eggs, and orange puree and combine with an electric mixer.
- Pour into two greased 8 inch round baking pans and bake on center rack at 350F for about 30 minutes, until a toothpick comes out clean. Allow to cool completely.
- For the icing, while cake is cooling, whisk together 1 can of icing and 1 cup of powdered sugar. Add to a piping bag.
- For the glaze, in a small bowl add 1 cup of powdered sugar and vanilla extract. Then whisk in orange juice until you reach your desired consistency.
- When cake is cooled, spread remaining can of icing between layers. Then pipe powdered sugar/icing mix on outside of cake. To pipe rosettes, start in the middle then move the tip in a counter-clockwise spiral around the center.
- When the sides are covered, pipe a circle on the top of the cake, at the outermost edge, to keep the glaze from spilling over.
- Pour glaze on top of cake, and garnish with a slice of orange.

- Heat oven to 180C/160C fan/gas 4. You will need 2 x 20cm loose-bottomed sandwich tins, greased and bases lined with baking parchment. Measure all the cake ingredients into a large bowl (reserve a little orange zest for decoration) and beat with a wooden spoon or electric hand mixer until combined and smooth.
- Divide evenly between the 2 tins. Bake for 20-25 mins or until well risen, lightly golden and shrinking away from the sides of the tins. After 5 mins, remove from the tins and leave to cool on a wire rack.
- To make the icing, put the butter and icing sugar into a bowl and mix with an electric hand mixer until light and fluffy. Stir in the orange zest.
- Remove the paper from the cakes. Sit 1 cake upside down on a plate. Make the glaze by putting the caster sugar and orange juice into a saucepan, stirring over a low heat until the sugar has dissolved. Boil until reduced by half, then brush half on the upside-down cake, using a pastry brush. Spread half the butter icing over the glazed cake. Sit the other cake on top, brush with the remaining glaze, then spread with the remaining butter icing. Scatter with the reserved orange zest. The cake is best eaten on the day, but will keep for up to 3 days in a cool place. It freezes well un-iced or filled.

ORANGE CAKE WITH ORANGE BUTTERCREAM
A light and moist perfect orange sponge cake with orange buttercream.

- Preheat the oven to 190 °C. Grease and line 2 x 22-23-cm cake tins with baking paper.
- Using an electric mixer, cream the butter and castor sugar for 3 minutes. Add the eggs, one at a time, ensuring that each is fully incorporated before the next addition. Add the orange zest and vanilla extract. Continue to whip until the mixture is light and fluffy.
- In a separate bowl, sift together the flour and salt.
- Add the flour and milk to the creamed butter and sugar in 3 parts. Be careful not to overmix. Divide the cake mixture evenly between the 2 tins, then bake for 30-35 minutes. The cakes should be springy to the touch, and a knife inserted into the centre should come out clean. Leave to cool in the tins.
- Put all the buttercream icing ingredients in the bowl of an electric mixer and beat until pale and fluffy. Use a third of the icing to sandwich the two cake layers together, and the remainder to ice the top and sides. Decorate with zested orange peel if desired.
CHOCOLATE-ORANGE CAKE WITH SALTED CARAMEL

- Make the ganache: Heat the heavy cream, chocolate and salt in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water), stirring, until the chocolate is melted and the ganache is smooth. Remove the bowl from the pan and stir in the marmalade. Refrigerate until thick but not set, 1 hour to 1 hour, 30 minutes.
- Assemble the cake: Place 1 cake layer on a platter; spread with 1 tablespoon marmalade. Beat the chilled ganache with a mixer on medium-low speed until just fluffy, about 1 minute (do not overbeat). Spread 1 heaping cup of the whipped ganache over the marmalade. Top with the second cake layer. Cover the whole cake with the remaining whipped ganache and refrigerate until ready to serve.
- Make the caramel: Bring the sugar and corn syrup to a simmer in a medium saucepan over medium-high heat. Cook, swirling the pan but not stirring, until the mixture turns amber, about 4 minutes. Remove from the heat and carefully whisk in the heavy cream and butter until smooth. Set aside, stirring occasionally, until cool but still pourable, 15 to 20 minutes. Drizzle over the cake and sprinkle with sea salt. Serve the cake within 2 hours; slice with a warm knife.
- Preheat the oven to 350 degrees F. Coat two 9-inch-round cake pans with cooking spray and line the bottoms with parchment paper.
- Whisk the cocoa powder and 1 1/2 cups boiling water in a medium bowl until smooth; set aside. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl until combined. Add the eggs, vegetable oil, sour cream and vanilla and beat with a mixer on medium speed until smooth, about 1 minute. Reduce the mixer speed to low; beat in the cocoa mixture in a steady stream until just combined, then finish mixing with a rubber spatula. (The batter will be thin.)
- Divide the batter between the prepared pans and tap the pans against the counter to help the batter settle. Bake until a toothpick inserted into the middle comes out clean, 30 to 40 minutes. Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the racks to cool completely. Remove the parchment. Trim the tops of the cakes with a long serrated knife to make them level, if desired.
AUNT VERNA'S ORANGE CAKE
Steps:
- Preheat oven to 350 degrees F.
- In a large bowl, whisk together honey and eggs until thoroughly integrated. Stir in orange zest. Sift together flour, baking powder, and baking soda. Add slowly to egg mixture. Lightly grease a loaf pan with butter. Add the mixture to the pan and bake. After 30 minutes check for doneness with a wooden skewer. (If it comes out clean, you are done. If not, give it another 5 minutes and check it again).
DEVIL'S FOOD CAKE WITH CHOCOLATE-ORANGE BUTTERCREAM
Steps:
- For cake:
- Position rack in center of oven and preheat to 325°F. Butter and flour two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Line bottoms of pans with parchment paper rounds. Stir chocolate in top of double boiler set over simmering water until smooth. Remove from over water. Cool to barely lukewarm.
- Sift flour and next 4 ingredients into medium bowl. Whisk milk and yogurt to blend in small bowl. Using electric mixer, beat brown sugar, butter, and lavender in large bowl until smooth. Beat in eggs, 1 at a time. Beat in melted chocolate until smooth. Mix in dry ingredients alternately with milk mixture in 3 additions each. Divide batter between prepared pans.
- Bake cakes until tester inserted into centers comes out clean, about 30 minutes. Cool cakes in pans on racks 15 minutes. Turn cakes out onto racks; remove parchment and cool completely.
- For buttercream frosting:
- Stir 8 ounces chocolate in top of double boiler set over simmering water until smooth. Cool until barely lukewarm but still pourable. Mix cocoa powder and 7 tablespoons water in heavy small saucepan. Stir over medium-low heat until smooth and thick but still pourable, adding more water by teaspoonfuls if necessary. Cool.
- Beat butter, 1/3 cup powdered sugar, and orange peel in large bowl to blend. Add melted chocolate, vanilla, and salt; beat until smooth. Beat in cocoa mixture. Gradually add remaining 3 2/3 cups powdered sugar and beat until frosting is smooth. Mix in Grand Marnier.
- Place 1 cake layer on platter. Spread 1 1/2 cups frosting over top of cake. Top with second cake layer. Spread remaining frosting over top and sides of cake, swirling decoratively. Mound chocolate curls in center of cake. (Can be made 1 day ahead. Cover with cake dome and refrigerate. Let cake stand at room temperature 2 hours before serving.)
- *Dried lavender blossoms are available at natural foods stores and at some specialty foods stores and farmers' markets.
ORANGE BUTTERCREAM FROSTING
Our Test Kitchen gave simple buttercream frosting a tangy twist by adding a splash of orange juice. It goes wonderfully on orange cupcakes or over white, yellow or chocolate cake.

When I first saw this recipe (on the label of a white vinegar bottle - where else?), I thought "Vinegar in a dessert? This must be a joke!) So I made the recipe, just for the heck of it, and found it surprizingly yummy!

- ---- THE CAKE ----.
- Preheat oven to 350 Fahrenheit.
- Sift together flour, sugar, baking soda and salt into an 8" x 8" baking pan.
- Make 3 holes in the dry ingredients.
- Place oil in the first hole, vinegar in the second hole, and vanilla in the third hole (again, I kid thee not- trust me on this one!).
- Pour orange juice over everything and mix well.
- Spread batter evenly in the pan and bake in dish that the batter was mixed in.
- Bake 30 minutes or until center is firm.
- Allow to cool.
- Refrigerate leftovers (if any).
- ---- THE FROSTING ----.
- Combine gelatin, orange juice, and cold water in small saucepan.
- Let stand until thick.
- Place over low heat, stirring constantly, just until gelatin dissolves.
- Remove from heat and cool, but do not allow to set.
- Whip cream, sugar and vanilla until slightly thickened.
- While beating slowly, gradually add gelatin to whipped cream mixture.
- Whip at high speed until stiff.
- Spread thickly on the cake.
MANDARIN ORANGE CAKE WITH FROSTING
This recipe came from an Evergreen Bank Cookbook. This is a great light dessert. It tastes like summer or spring to me. It is a great kid pleaser as well. I bet these would make great cupcakes too.

- Mix the cake mix, eggs, oil or applesauce, and mandarin oranges together.
- Grease and flour two 9 inch cake pans.
- Pour batter into prepared cake pans.
- Bake at 325 degrees Fahrenheit for 30 minutes.
- Cool completely.
- For the frosting, mix the Cool Whip, crushed pineapple and instant vanilla pudding together.
- Let set for 5 minutes.
- Place a thin layer of frosting on one cake.
- Place the second cake on top of the first.
- Frost the top and side of both layers.
- Frosted cake maybe decorated with whipped topping using decorative bag and tips.
- Garnish with mandarin orange segments and mint leaves.
