RED QUINOA AND CITRUS SALAD



Red Quinoa and Citrus Salad image

3/4 cup red quinoa
Juice of 3 limes (about 1/3 cup)
2 teaspoons agave nectar
1 jalapeno, seeded and minced
1/2 teaspoon minced garlic
1/4 teaspoon ground cumin
2/3 cup canola oil
1/2 cup plus 2 tablespoons chopped fresh cilantro
1/2 teaspoon lime zest
Kosher salt
2/3 cup Cara Cara or navel orange segments, pith removed (see Cook's Note)
1/2 cup 1/4-inch-diced peeled and trimmed jicama
1/4 cup 1/4-inch-diced red onion
1/2 cup toasted, sliced almonds, plus extra for garnish

Steps:

  • Rinse the quinoa in a strainer several times with cold water. Bring 1 1/4 cups water to boil in a medium saucepot with a tightly fitted lid. Add the quinoa, cover and simmer until the grains display a thread-like spiral and the water is fully absorbed, about 15 minutes. Remove from the heat and let stand, undisturbed, for 5 minutes. Fluff with two forks and transfer to a large glass mixing bowl to cool. Set aside.
  • Combine the lime juice, agave nectar, jalapeno, garlic and cumin in a glass mixing bowl, whisking briskly. Drizzle in the oil slowly, continuing to whisk. Once the vinaigrette is smooth and slightly thickened, whisk in the 1/2 cup cilantro and the lime zest. Season with salt.
  • Place the oranges, jicama, onions, almonds and remaining 2 tablespoons cilantro in a medium mixing bowl. Pour in about half of the cilantro lime vinaigrette and gently toss. Fold into the quinoa. Drizzle in the remaining vinaigrette, and toss to combine thoroughly. Season with salt.
  • Transfer the quinoa salad to a large serving bowl, garnish with almonds and serve immediately.

  • In a large saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, 12-14 minutes or until liquid is absorbed. Remove from heat; fluff with a fork. Cool., In a large bowl, combine romaine, beans, mandarin oranges, cucumber, pistachios, onion and cooled quinoa. In a small bowl, finely grate zest from orange. Cut orange crosswise in half; squeeze juice from orange and add to zest. Whisk in oil, salt and pepper. Drizzle over salad; toss to coat.

This is a recipe I found in the local paper. I was a bit hesitant to try it. When arranging it, it was so beautiful! The flavors are amazing! I ate it w/out the onion because of stomach issues with raw onions, but Im sure it was even better with the onion :-) ENJOY!!!

1/4 cup orange juice, freshly squeezed
2 tablespoons lime juice, freshly squeezed
salt and pepper, to taste
4 cups baby greens or 4 cups mesclun
1 medium jicama, peeled and julienned
2 navel oranges or 2 another seedless variety oranges, peeled,pith removed and segmented
1/2 cup cilantro, coarsely chopped
1/2 red onion, sliced very thin
dried ancho chile powder or new mexico chile powder, to taste

Steps:

  • Whisk together the orange and lime juices in a nonreactive bowl, and taste to make sure you like the mixture of the juices.
  • If you feel it needs more lime, or more orange, adjust as necessary, and add salt and pepper to taste; set aside.
  • Take your baby greens (or mesclun) and divide it among individual plates (recipe serves 6), and set aside.
  • In a large bowl, gently toss the jicama, orange segments, and cilantro.
  • Drizzle with the citrus juice mixture and toss gently to combine.
  • Arrange the jicama mixture on top of the greens you have arranged on plates, and garnish your salad with red onion slices.
  • Sprinkle very lightly with chili powder.
  • ENJOY!

1/2 cup scallion, sliced
1 teaspoon curry powder
2 cups chicken broth
1 cup quinoa, rinsed, drained
2 cups carrots, shredded
1/2 cup dried cranberries, chopped coarsely
1 medium orange
1 teaspoon orange peel, grated
2 tablespoons fresh parsley, chopped
salt

Steps:

  • Peel orange, remove white pith and cut into 1/2 inch pieces.
  • Heat oil over medium heat, cook onions 2 minutes or until softened but not browned.
  • Add curry powder, stir while cooking 30 seconds. Be careful not to burn.
  • Add broth, quinoa, and 1/4 tsp salt. Bring to a boil.
  • Reduce heat to low, cover and simmer 15 minutes or until water is absorbed and quinoa is translucent.
  • In a medium bowl, combine carrots, cranberries, orange, orange peel and 1/4 tsp salt. Carefully stir mixture into quinoa. Cover and let set 3 minutes. Sprinkle with parsley.
