CRISPY COCONUT ONION RINGS

Crispy Coconut Onion Rings image

Time 21m

Number Of Ingredients 9

2 inches of vegetable oil
1 large sweet onion like Walla Walla or Sweet Mayan, sliced into rings
1/2 cup cornstarch
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon cayenne pepper {optional}
2 eggs
1/2 cup milk
2 cups sweetened coconut flakes

Steps:

  • Fill a pot with 2 inches of oil. Set to medium heat. Ideally you want your oil to be between 285 - 300*F. While oil is heating, slice onions and set aside. In a bowl mix cornstarch, salt, pepper & cayenne pepper. Mix well. Set aside. In another bowl mix eggs & milk together. Set aside. In a separate bowl add coconut flakes. Set a cooling rack over a cookie sheet and set aside. Take onion rings and dip into cornstarch mixture then into egg and set on drying rack. Do this to all onion rings {you may need to work in batches}. Take dipped onion ring and dip again in the cornstarch mixture and again in the egg. Set again on the drying rack. Do 3 or 4 more and then take the first one and dip into coconut. Coat as well as you can. Set onto a plate. Repeat to all onion rings. Oil should be hot at this point. If it is above 300*F remove from heat and allow it to cool down. If oil is too hot it will burn your coconut before your onion cooks. Place onion rings into oil one at a time making sure to not over crowd your pot. Cook for approximately 2 - 3 minutes per side. Coconut should be golden but not burned. Allow to cook for a minute then devour!

Provided by Valerie Bertinelli

Categories     dessert

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 7

1 cup jasmine rice
1/4 teaspoon kosher salt
Two 15-ounce cans coconut milk (not lite)
5 tablespoons Vanilla Sugar, recipe follows
1 teaspoon orange zest
2 cups granulated sugar
2 vanilla bean pods

Steps:

  • Add the rice, salt, 1 can of coconut milk and 1 1/2 cups water to a medium saucepan. Bring the mixture to a boil, then reduce the heat to low, cover the pan and cook until almost all of the liquid is absorbed, about 18 minutes.

Add the seeds to the food processor with the sugar and blend for about a minute, until the vanilla beans are evenly distributed. Pour the vanilla sugar into an airtight container and add 1 of the scraped vanilla bean pods.

Toasted Coconut and Orange Icebox Cookies image

Provided by Aida Mollenkamp

Categories     dessert

Time 2h15m

Yield 3 dozen

Number Of Ingredients 10

2 cups all-purpose flour
2 tablespoons packed orange zest
1/2 teaspoon table salt
1 cup unsalted butter, at room temperature
1/2 cup granulated sugar, plus extra for rolling cookies
1/4 cup packed light brown sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
1 cup toasted sweetened coconut
6 ounces semisweet chocolate, roughly chopped

Steps:

  • Heat oven to 350 degrees F and arrange a rack in the middle.
  • Combine the flour, zest, and salt in a large bowl and whisk until evenly combined.
  • Using a stand mixer fitted with a paddle attachment beat together butter and sugars over high speed until light and airy, about 2 minutes. Add the sugars and beat until fluffy and the mixture looks like wet sand, about 2 more minutes. Add the egg and vanilla and mix until just combined.
  • Reduce the speed to medium and add the flour mixture and coconut and beat until just evenly combined. Lay 2 large pieces of plastic wrap on a clean work surface and put half of the dough along the center of each piece. Shape the dough into 2 logs measuring about 1 1/2-inches in diameter and 10-inches long. Roll logs up in the plastic and secure tightly. Refrigerate the logs for 1 hour or up to several weeks.
  • Cut the logs into 1/2-inch slices. Roll the cookies in sugar to coat and shake off excess. Arrange on a baking sheet, leaving 1/2-inch between the cookies. Bake until set and golden on the edges, about 15 to 18 minutes. Remove to cooling racks to cool completely.
  • When cookies are cool, melt the chocolate in a small pan over medium-low heat until smooth. Dip half of each cookie into the chocolate, scrape off excess, and set on a cooling rack. Refrigerate for at least 15 minutes to set up before serving.

ORANGE COCONUT CAKE

Orange Coconut Cake image

This is a torted orange-flavored sponge cake with coconut filling. The filling is made the day before you bake and assemble the cake.

Provided by Joy1996

Categories     Dessert

Time 1h5m

Yield 1 Cake

Number Of Ingredients 8

6 eggs, divided
1 cup sugar, divided
1 1/2 tablespoons orange juice
1/8 teaspoon salt
1 cup flour
1 fresh coconut (shake to make sure it has milk in it)
24 large marshmallows
1 pint whipping cream

Steps:

  • Note: The filling has to thicken in the refrigerator overnight. To make the filling:.
  • Poke holes in the top of the coconut and drain the milk - you should have approximately 1/3c. Split the coconut and shred the meat - the amount doesn't matter, just use what you get. Put into a ziplock bag or a bowl with a lid to stay fresh until the next day. In a large saucepan over medium heat, melt the marshmallows into the coconut milk, remove from heat and cool. Refrigerate overnight.
  • The next day:.
  • Preheat oven to 350 degrees.
  • Line the bottoms of two 8" or 9" round cake pans with waxed paper.
  • Beat the egg whites until foamy; gradually beat in 3/4c. sugar until stiff peaks form. Set aside.
  • In a separate bowl, beat the egg yolks with the remaining 1/4c. sugar until thick and lemon-colored; mix in the orange juice and salt.
  • Fold the egg whites into the yolk mixture, and then fold in the flour.
  • Pour batter into waxed-paper lined pans and bake at 350 degrees for 30-35 minutes. (The tops will spring back to the touch). Cool in pans for 10 minutes and then turn out.
  • Filling:.
  • Remove from the refrigerate and note that it has gelled and thickened.
  • Whip marshmallow mixture until light and fluffy. Beat whipping cream until light and fluffy - don't add any sugar. Fold into marshmallow/coconut milk mixture.
  • Split (torte) the 2 completely cooled cake layers so that you have 4 layers. Place first layer on cake plate and spread 1/4 marshmallow/cream mixture on top, sprinkle with shredded coconut. Alternate cake layers and marshmallow/cream mixture and coconut, ending with marshmallow/cream mixture & coconut on top. Store unused portion in refrigerator - it tastes better the 2nd day!
