SLOW COOKER CHOPPED STEAK WITH ONION MUSHROOM GRAVY
An excellent weekday ground beef dinner reminiscent of salisbury steak, but much easier.

- *Regular soup and stock cubes may be used if you wish.
- Add the bread crumbs, instant onions, garlic powder, crushed stock cubes and milk in a medium bowl. Mix and let stand about 5 minutes.
- Mix ground beef into the bread crumb mixture, mixing well. Form into 4 thin burgers.
- Heat a large skillet over high heat and add oil.
- Dust burgers with the flour then add to hot skillet. Brown for about 1 minute each side-you aren't cooking the meat, just quickly browning.
- Place browned burgers in the bottom of a slow cooker (I used a 5 quart), stacking if necessary.
- Mix the soups, mushrooms, gravy mix and water in a small bowl. Pour over burgers.
- Cover and cook on LOW 6-8 hours.

CHOPPED STEAK, MUSHROOM SAUCE

- Preheat the oven to 400 degrees F.
- In a bowl, blend the ground beef, onions, garlic, salt and pepper and mix well.
- Next, by hand, portion the meat into 8 to 9 round patties, ensuring they are not more than 1/4-inch tall. Next, heat a large saucepan with the oil over medium-high heat. Add the seasoned patties, allowing to cook on each side until browned, 3 to 4 minutes. After browning both sides, finish in the oven for 4 to 5 minutes for medium-well. Remove from the oven.
- After baking, remove the patties from the pan and hold on the counter; this will allow the meat to rest. Then, return the pan to medium-high heat for 2 minutes. After the pan is hot again, carefully add the brandy and allow the liquor to cook off. Then add the stock, mushrooms, herbs and nutmeg and cook for 3 to 4 minutes, allowing the sauce to reduce to 1 cup volume. After reducing the sauce, remove the pan from the heat and whisk in the butter to finish the sauce. Serve with the chopped steak.

- Heat grill to medium-high heat.
- Mix meat, onions, garlic and pepper. Shape into 4 (1/2-inch-thick) oval patties.

This is an absolutely wonderful quick and easy meal. The first time I made it, though, I didn't read the recipe closely and used the whole package of onion soup mix. It was still delish! This recipe comes from the ladies who write the Desperation Dinners column in the newspaper.

- Combine the beef, bread crumbs, milk and onion soup mix in a large bowl and mix throughly with your hands. Shape into four 3 1/2 inch patties, each about 1/2 inch thick.
- Place an extra deep skillet over medium heat and add the meat patties. Cook, uncovered, for 5 minutes. Reduce the heat if the meat browns too quickly.
- Meanwhile, place the brown gravy mix in a 2 cup or larger measure. Add the amount of water called for on the envelope and whisk until well blended. Set aside.
- Turn the patties over, cover the skillet, and cook for 5 more minutes. Drain excess fat if necessary.
- Uncover the skillet, reduce the heat to low, add the prepared gravy mix. Coo until the gravy reaches the desired consistency and the patties are no longer pink in the center, about 5 more minutes. Serve at once or allow to simmer until ready to serve.

- In a large skillet, cook onion in butter over medium heat for 15-20 minutes or until onion is golden brown, stirring frequently. Stir in wine and garlic. Bring to a boil. - Form the ground beef into a patty, season with steak seasoning. Slice onion very thinly, I use a mandolin for this.
- Place patty into a preheated small fry pan (to medium high heat), top with onions. Let cook for 2-3 mins, then flip the patty over so the onions end up on the bottom. Cook for another 2-3 mins, this will allow onions to brown and the steam to rise up through the patty finishing the cooking.
- Remove to a plate and enjoy with a nice glass of green tea.

- In 10" skillet over medium-high heat cook bacon until light brown; push to side of skillet.
- Meanwhile, with a sharp knife, cut round steak into 6 serving pieces.
- In hot bacon drippings cook steaks until well browned on both sides.
