I came up with this dish by downsizing my recipe for a crowd. I experimented with amounts, adding and deleting until I got it just right. This is a great side dish that goes well with any meat.

1-1/3 cups sliced zucchini
3/4 cup water
1 medium onion, chopped
1 tablespoon chopped green pepper
1 egg
1/2 cup mayonnaise
1/3 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup crushed butter-flavored crackers (about 8 crackers)

Steps:

  • In a large saucepan, combine the zucchini, water, onion and green pepper; bring to a boil. Reduce heat. Cover and simmer for 5 minutes or until vegetables are crisp-tender; drain., In a large bowl, beat the egg. Add mayonnaise, Parmesan cheese, salt and pepper; mix well. Stir into vegetable mixture. , Transfer to a greased 1-qt. baking dish; sprinkle with cracker crumbs. Bake, uncovered, at 350° for 25-30 minutes or until golden brown.

1 ½ cups water
½ cup uncooked white rice
2 pounds zucchini
¼ cup butter
¼ cup vegetable oil
½ cup grated Parmesan cheese
½ cup shredded Cheddar cheese
salt and pepper to taste
2 eggs, beaten
1 cup bread crumbs
2 tablespoons butter, melted

Steps:

  • Bring water to boil, add rice. When water returns to a boil, reduce temperature to a low. Cover rice and cook until rice is tender.
  • Preheat oven's broiler. Grease a 9x13 inch baking dish.
  • Cut ends from zucchini and steam until tender. Reserve 2 zucchini for garnish, then dice remaining zucchini.
  • Combine butter and oil in a Dutch oven and heat until butter is melted. Add rice and diced zucchini, then saute until golden, stirring frequently. Stir in the cheeses until melted and add salt and pepper to taste. Let cool slightly, then stir in eggs quickly. Pour into a prepared baking dish and sprinkle generously with bread crumbs.
  • Slice reserved zucchini and arrange around the diced mixture. Drizzle melted butter over top.
  • Broil about 6 inches from the source of heat until lightly browned and bubbly.

1 cup uncooked long grain rice
3 medium zucchini, cut into 1/8-inch slices
1 can (4 ounces) chopped green chilies
4 cups shredded Monterey Jack cheese, divided
2 cups sour cream
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1 tablespoon minced fresh parsley
1 teaspoon salt
1 teaspoon dried oregano
1 large tomato, sliced

Steps:

  • Cook rice according to package directions. In a large saucepan, cook zucchini in 1/2 in. of water. Bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until zucchini is crisp-tender; drain and set aside. , Place rice in a greased shallow 3-qt. baking dish. Layer with chilies and 1-1/2 cups cheese. In a large bowl, combine the sour cream, green pepper, onion, parsley, salt and oregano. Spread over cheese. Layer with zucchini and tomato. Sprinkle with remaining cheese., Cover and bake at 350° for 30 minutes. Uncover; bake 5-10 minutes longer or until heated through and cheese is melted.

2 large zucchini, sliced
1 medium onion, sliced thin
1 -2 tomatoes, sliced
1/2 cup long grain rice, uncooked
6 slices American cheese
4 -5 slices bacon, uncooked
1/4 teaspoon garlic powder, to taste
1/4 teaspoon seasoning salt, to taste
1/4 teaspoon oregano, to taste
1/4 cup water

Steps:

  • Preheat oven to 350°F Pour water into the bottom of a 9 x 13 casserole dish.
  • Layer zucchini in the bottom of the dish.
  • Sprinkle with garlic powder, oregano, and seasoned salt.
  • Layer uncooked rice over zucchini.
  • Follow with layers: sliced tomato, cheese, sliced onion, chopped bacon.
  • Cook covered for 45 minutes, then remove cover.
  • Continue cooking until bacon is crispy, about 15-20 minutes more.

Found on the Club Mom website in 2000. This is just one more way to serve zucchini to your family. It also can be made ahead and baked -- then cover tightly and refrigerate overnight to reheat the next day (375F for 20 minutes). This makes 12 servings so feel to cut in half to fit your needs.

2 lbs zucchini, thickly shredded
2 tablespoons olive oil
1 medium vidalia onion, chopped
2 -4 garlic cloves, minced (based on your personal tastes)
2 tablespoons flour
2 1/2 cups low-fat milk
1/2 cup uncooked long-grain white rice
3/4 cup parmesan cheese, divided
1 teaspoon dried basil
1 teaspoon dried thyme
1 cup lowfat mozzarella cheese, shredded
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat the oven to 425F and grease or spray a 9x13" glass baking dish.
  • Heat the oil in a large skillet over medium-high heat and add the onion and saute until golden, about 10 minutes.
  • Stir in the garlic and shredded zucchini and cook over medium-high heat for 5 minutes, stirring constantly, until zucchini begings to wilt.
  • Sprinkle with the flour and cook, stirring until the flour is absorbed.
  • Stir in the milk, rice, 1/2 parmesan cheese, spices, mozzarella cheese, salt and pepper.
  • Remove from heat and pour into prepared casserole dish then sprinkle the top with the 1/4 cup leftover parmesan cheese.
  • Bake uncovered for 30-40 minutes or until golden and most of the liquid has evaporated.
  • Remove from the oven and let sit for 10-20 minutes before serving.

1 1/2 cups swiss cheese, grated (1/2 pound)

Steps:

  • Sauate onions in butter til soft.
  • Combine ingredients and place in 9 x 13 baking dish.
  • Bake at 350 degrees for 50 minutes.
  • Can be made a day ahead. Tastes even better the next day.
  • Makes great leftovers.

2 cups onions, chopped
1 garlic clove, minced
3 cups zucchini, diced
2 cups mushrooms, sliced
3 cups cooked chicken, diced
1 cup white rice or 1 cup brown rice, uncooked
2 1/2 cups chicken broth or 2 1/2 cups water
1 1/2 teaspoons fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 cup parmesan cheese, grated
salt and pepper
2 cups tomatoes, chopped
1/2 teaspoon chili powder

Steps:

  • Preheat oven to 350*.
  • Heat 3 tablespoons of the oil in a large sautee pan and saute 1 cup of the onions with the garlic for 2 minutes.
  • Add the zucchini and mushrooms and saute for 3 minutes more.
  • Combine the vegtables with the cooked chicken, rice, broth, spices, and cheese. Mix and season to taste with salt and pepper.
  • Place mixture in a greased 9 x 13 baking dish.
  • Heat the remaining 1 tablespoon of oil and saute the remaining cup of onions for 3 minutes, then add the tomatoes and chili powder. Season to taste with salt and pepper.
  • Spoon the topping over the rice and chicken mixture.
  • Bake for 1 hour.

1/2 cup finely chopped onions
2 teaspoons finely chopped garlic
2 small zucchini, about 1/2 pound, trimmed and cut into half-inch cubes
1 sweet red pepper, cored, seeded, deveined and cut into quarter-inch cubes
1 cup converted rice
2 sprigs fresh thyme or 1 teaspoon dried
1 bay leaf
1 teaspoon ground coriander
1 1/2 cup fresh chicken broth or water
salt and freshly ground pepper to taste

Steps:

  • Heat the olive oil in a heavy saucepan, then add the onions, garlic, zucchini and red peppers. Stir until wilted.
  • Add the rice and stir to blend. Cook briefly. Add the thyme, bay leaf, coriander, chicken broth and salt and pepper to taste. Bring to a boil, stirring, and cover tightly. Simmer for 17 minutes.
  • Uncover, remove the sprig of thyme and the bay leaf. Stir with a fork to fluff lightly.

3 tablespoons olive oil, divided, or as needed
5 zucchini squash, cut into 'noodles' using a spiral slicer or vegetable peeler
¼ cup minced garlic
1 (16 ounce) jar marinara sauce, or to taste
1 (7 ounce) container 2% Greek yogurt
1 pinch Italian seasoning, or to taste
salt and ground black pepper to taste
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Working in batches, saute enough zucchini to fit in the skillet with 1 teaspoon garlic until zucchini is slightly browned and softened, 3 to 6 minutes. Repeat with remaining olive oil, zucchini, and garlic. Transfer cooked zucchini mixture to a 9x13-inch baking dish.

Add broth and bring to a boil, covered.
