ONE HOUR GARLIC HERB DINNER ROLLS
Soft and fluffy garlic herb dinner rolls delivered in one hour. I brush these with a garlic and herb butter when they're hot out of the oven and they're perfect to serve with all your holiday meals and yet easy enough for weeknights!

Steps:
- Place 4 tablespoons of butter, milk, and water in a 2 cup microwave-safe measuring cup. Heat on high for 1 minute. The milk mixture should be warm to the touch, about 110-115ºF. Continue to heat in 10-15 second intervals until the milk mixture reaches that temperature. If it's too hot, just let it cool.
- In the bowl of an electric mixer fitted with the dough-hook attachment, add 4 cups of flour, potato flakes, yeast, sugar, salt, garlic powder, rosemary, and 2 tablespoons of parsley and just stir to combine.
- Start the machine on the 'stir' setting and slowly stream in the warm milk mixture and the egg. When combined, increase the speed of the mixer to medium-low and allow the mixer to run for 4-5 minutes. After the first 1-2 minutes the dough should start pulling away from the sides of the bowl, if it doesn't add an additional ¼ cup of flour and let the mixer run for another minute, if the dough still hasn't formed into a ball, add the remaining ¼ cup of flour. You may or may not need to add the additional flour. I didn't.
- Remove the dough from the hook, cover the bowl with plastic wrap and allow the dough to rest for 10 minutes. While the dough is rising, position a rack in the center of the oven and preheat the oven to 180ºF. Spray a 9x13 baking dish with cooking spray, set aside.
- Turn the dough out onto a lightly floured work surface. With a floured rolling pin, roll the dough out into a 15-inch circle. Using a pizza cutter dipped in flour, cut the dough into 12 or 16 equal pieces. You can weigh the dough to make it more accurate but I usually just eyeball it. Fold the seams in and roll into a smooth ball. Place the dough seam side down into the prepared baking dish. Repeat with the remaining dough.
- Using a pastry brush, brush water on the tops of the rolls so they don't dry out in the oven. Turn the oven OFF and place the baking dish in the oven. Allow the dough to rise for 20 minutes. DO NOT OPEN THE OVEN DOOR UNTIL THE 20 MINUTES ARE UP.
- Remove the baking dish from the oven and place on the counter while you preheat the oven to 375ºF. Bake the dinner rolls for 18-22 minutes or until the tops are nice and golden. Baking time will be slightly shorter if you made them into 16 rolls (around 14-18 minutes). Prepare the garlic butter sauce (step #8) in the last 5-7 minutes while the rolls are still in the oven.
- In a small saucepan, combine the garlic and the remaining 2 tablespoons of butter, heat over medium heat. When the butter melts and you can smell the garlic, add the remaining tablespoon of chopped parsley. Add a pinch of salt and stir. Brush the tops of the prepared rolls with garlic butter mixture. Serve warm.

- Preheat oven to 375°. In a large skillet, heat butter over medium-high heat; saute green onions until tender. Stir in pepper and, if desired, garlic salt. Remove from heat., On a lightly floured surface, roll dough into a 12x8-in. rectangle. Spread with onion mixture. Sprinkle with cheeses., Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices; place in greased muffin cups. Cover; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 375°., Bake until golden brown, 18-20 minutes. Remove from pan to a wire rack. Serve warm.

- Melt butter in a small pan over moderate heat. Add onions and garlic and season with sugar, thyme and pepper. Cook 15 minutes, stirring occasionally, until onions are golden in color and translucent.
- Place the split bread on a baking sheet and broil until golden. Spread half the onions and garlic on each half of bread in a thin layer. Sprinkle each side of loaf with a handful of cheese and return to broiler for 30 seconds to bubble cheese. Serve with a hearty, soup-er supper
MAKE GARLIC ONION BREAD
Steps:
- In a large bowl, mix water and yeast. Add milk, sugar, salt, butter, garlic powder, and onion. Stir. Add 3 cups flour and mix well. Add in enough flour to make a dough that follows the spoon around the bowl. Turn dough out onto lightly floured surface and knead for 4 minutes, adding more flour as needed until the dough is soft and smooth to the touch. Place dough in medium greased bowl. Turn dough over in bowl so that the top is also lightly greased. Cover with clean cloth and let rise in warm, draft-free place for 1 hour or until doubled in size.
- Punch down dough. Turn dough out onto a lightly floured board and knead for 4 minutes or until the bubbles are out of the bread. Shape dough into the loaf. Place loaf in greased bread pan. Cover and let rise in warm, draft-free place for 45 minutes or until doubled in size.
- Bake bread at 350 F for 45 minutes or until the bread sounds hollow when the top is tapped. Remove bread from pan and let cool on a rack.
- Serve bread warm with homemade whipped butter or, for extra garlic flavor, with garlic chive butter . The bread can also be sliced, topped with a favorite hard cheese, such as grated mozzarella cheese, and toasted in a toaster oven until cheese melts and the bread is lightly brown.

- Combine warm milk, sugar, salt and butter.
- In a large warm bowl, pour in warm water, sprinkle yeast over the water and stir until dissolved.
- Add milk mixture, onion and 3 cups flour to the yeast mixture.
- Beat until smooth.
- Add enough additional flour to make a stiff dough.
- Turn dough out onto a lightly floured board.
- Knead until smooth and elastic (about 8-10 minutes).
- Place dough in a greased bowl, turning dough to grease the top.
- Cover dough and let rise in a warm place (free from drafts) until doubled in bulk (about 1 hour).
- Punch dough down and divide into 14 equal pieces.
- Shape pieces of dough into round balls.
- Place dough balls (about 3 inches apart) on greased baking sheets that have been sprinkled with cornmeal.
- Cover and let rise again in draft free, warm place until doubled in bulk (about 1 hour).
- Cut a small"X" into the tops of the rolls with a sharp knife or razor.
- Bake rolls in a preheated 400°F oven for 20 minutes.
- Brush rolls with the egg white/cold water wash.
- Bake rolls 5 minutes longer, or until done.
- Remove from baking sheets and cool on wire racks.
- ***Asan option, you can sprinkle the roll tops with a bit of additional minced onion after they are brushed with the egg white wash.
ONION ROLLS, BREAD MACHINE
These are easy with the help of your bread machine and taste way better than the store bought rolls. Directions are given for a 1 1/2 lb. machine. Note: in my photo the rolls are pictured with "Recipe #287863", which is delicious! 6/20/10 note: Many reviewers have noted the dough seems sticky. I always watch my machine as it starts to knead the dough and if it is looking sticky at the time, add more flour then. However, I am changing the recipe from 3 Cups flour to 3 1/4 cups flour today so definitely don't add additional flour unless the dough looks too moist.

- In a small skillet over medium heat, melt the butter; add onion. Saute onion about 10 minutes until tender, but not browned. Remove pan from heat and allow onion to cool slightly.
- Reserve 1/4 cup of the onion mixture; set aside. Place remaining onion mixture and dough ingredients in bread pan, select the Dough setting, and press start.
- When dough cycle is complete, turn dough onto a floured countertop or cutting board. Gently roll and stretch dough into a 12-inch rope. With a sharp knife, divide dough into 10 pieces.
- Grease a large baking sheet. Roll each piece of dough into a ball and then flatten slightly. Place rolls on prepared sheet. In a small bowl, beat together remaining egg and 1/2 teaspoon salt; brush egg mixture over each roll. Spread approximately 1 teaspoon of reserved onion mixture on each roll. Let rise in warm oven 30 to 45 minutes until doubled. (Hint: To warm oven slightly turn oven on Warm setting for 2 minutes, then turn it off and place covered dough in oven to rise. Remove sheet from oven to preheat.).
- Preheat oven to 375°F Bake rolls 20 minutes until they are golden and onion is brown, but not burnt. Remove from oven and cool on racks.
