EASY FAT FREE FRENCH ONION DIP
An easy fat free dip that is made of things we always have on hand. This does need an hour to chill which is not included in the prep or cook time.

NO CREAM ONION DIP/ LOW CAL
We love chips and a dip, but they are not great buddies with our health. So here is a non creamy version of onion dip. It gives the same onion flavor we crave without the cream!! Even better it can be made in large batches and frozen and very easy on your pocket!!! What more easy on your pocket, healthy and makes in a jiffy!!!! Best ever game night companion:-)

Steps:
- 1. Peel and dice the onions into big chunks.
- 2. In 1 teaspoon of oil fry the red lentil bean lightly switch off stove and add the red chillies to fry in the remaining heat of the oil. Take care not to burn it!
- 3. Transfer it into a blender and powder them with salt and coriander powder. Keep aside.
- 4. Add the rest of the oil in a hot pan and fry the onions till transparent. Do not over brown them. Spread this on a plate and let cool.
- 5. Add the onions and tamarind paste to the blender and blend. If you like little chunks leave them coarse or you can smooth it out.
- This freeze well. Enjoy with chips or some carrots, celery and broccolis. You may also add a hint of cream cheese right before using to give it an even creamier taste or just for a variation.

SIMPLE CRUNCHY POTATO AND ONION CASSEROLE - LOW CAL
If you like crunchy potatoes, with no sauce, you'll love this casserole made in a shallow dish! We love it plain and simple, and fight over the crunchy parts, but feel free to add seasonings of your choice. If calories are no object, top the casserole with shredded cheese (or sour cream) and sprinkle with real cooked bacon pieces.

- Note:*** This casserole has no sauce which allows some of the top and bottom potatoes to get crispy- the more the better! Be sure to use a 9x13-inch casserole. DO NOT use a deep dish casserole as this will prevent the potatoes from cooking properly and getting crunchy.
- ***Preheat oven to 350 degrees.
- Spray the 9x13-inch casserole with non-stick cooking spray.
- Place half of potatoes in bottom of casserole dish.
- Place layer of onions over potatoes.
- Sprinkle with salt and pepper.
- Place remaining potatoes on the top layer.
- Drizzle butter over the entire casserole, using total of 4 tbs butter, if not counting calories.
- Spray top of casserole with non-stick cooking spray.
- Cover and bake 20 minutes in lower third of the oven.
- Uncover and bake an additional 40-50 minutes until potatoes are done and casserole is golden brown on top.
- If you are lucky, the bottom potatoes will be a little browned, too!
- VARIATION: During last 5 minutes of baking, sprinkle casserole with 4 ounces shredded sharp cheddar cheese.
- Let melt and serve.
- HAM-POTATO VARIATION: Add 8-12 ounces cooked ham or smoked pork shoulder, cubed, between the onion and potato layers.
- Bake as directed.

- Add onion soup mix, parsley, basil, artichoke, dill, shrimp, crab, or curry as desired.
