BANGERS AND MASH WITH ONION-MUSTARD GRAVY



Bangers and Mash with Onion-Mustard Gravy image

This Irish classic is easy to make, Bangers and Mash with Onion Mustard Gravy is ready in less than 1 hour.

6 sausages (I used Bangers, specifically...if you can't find them you can use mild Italian sausages)
2 tablespoons olive oil
5 Yukon gold potatoes (unpeeled and cut into uniform bite-sized pieces)
1 cup low-fat milk
1/2 cup low fat plain greek yogurt
1 tablespoon prepared horseradish
kosher salt
fresh ground black pepper
2 large onions (cut into 1/4 inch slices)
3 garlic cloves (minced)
2 tablespoons chopped fresh thyme
4 ounces Ale (or any favorite beer, Guinness would work well)
2 tablespoons whole grain Dijon mustard
2 tablespoons cornstarch
1 3/4 cup low sodium beef broth

Steps:

  • Preheat the oven to 350 degrees.
  • In a large skillet, heat the olive oil over med-high heat until hot and beginning to ripple. Add the sausages to the pan and lightly brown on all sides. Transfer the skillet to the oven and roast the sausages for 15-20 minutes or until golden brown and crispy. Transfer the sausages to a platter and set aside.
  • While the sausages are roasting, add the potatoes to a large pot and fill with cold water until the potatoes are covered by about 1 inch. Bring the potatoes to a boil and cook for approximately 20 minutes or until they are fork tender. Drain the potatoes and return to the pot with the heat turned off. Add 1/2 cup of milk, the yogurt and horseradish and mash the potatoes with a potato masher until combined. Add the remaining milk and continue to mash until combined and creamy but still chunky. Season with salt and pepper to taste. Cover with a lid or foil and keep warm until ready to serve.
  • Over med-high heat, add the onions to the skillet and cook until deeply golden brown and caramelized, approximately 15-20 minutes. Stir in the garlic and thyme cooking for 1 minutes. Deglaze the pan with the ale and scrap up the brown bits on the bottom of the pan using a wooden spoon. Stir in the mustard thoroughly and then sift the cornstarch over the mixture before stirring into the gravy so lumps do not form. Add the broth to the mixture and continue to cook until slightly thickened, approximately 10 minutes.
  • Serve the sausages on the mashed potatoes and top with the gravy. Serve immediately.
  • Note: The sausages, gravy and potatoes can all be made up to 1 day in advance and stored individually in airtight containers in the refrigerator. Heat before serving.

25g butter
1 tbsp olive oil
1 bay leaf
2 sprigs of thyme
4 onions, sliced (red or white, or a mixture)
1 tsp sugar
1 tbsp flour
200ml red wine
2 tsp red wine vinegar
500ml beef stock (or vegetable stock)

Steps:

  • Melt the butter with the olive oil in a large frying pan over a medium heat, add the bay leaf and thyme and cook for a min to infuse the flavours of the herbs. Add the onions and coat well in the butter and oil, sprinkle over the sugar and a big pinch of salt and slowly cook the onions down for 45-50 mins, stirring occasionally until sticky and caramelised.
  • Add the flour and stir well, coating all of the onions. Cook for a min then add the wine and vinegar, turn up the heat and reduce by half, so about 2 mins, whisking a little to ensure the flour doesn't lump at all. Pour in the stock, bring to the boil and cook for 6-8 mins, until the gravy is thick enough to coat the back of spoon. If you cook it a bit too much and it gets too thick, add a splash of water. Season well and serve.

3 medium onions, thinly sliced
1 tablespoon flour
1/2 cup red wine
1 (14 1/2 ounce) can organic chicken stock
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce

Steps:

  • Melt butter in a heavy-bottomed pan over medium heat. Cook and stir onion in the melted butter until softened, about 10 minutes.
  • Reduce heat to low. Cover the pan and cook until onions are caramelized, stirring occasionally, about 20 minutes.
  • Stir flour into the caramelized onions and cook for 1 minute.
  • Pour red wine, chicken stock, Dijon mustard, and Worcestershire sauce into the onion mixture; simmer until sauce is thickened, stirring frequently, about 15 minutes.
  • Season to taste with salt and black pepper.

8 links pork sausage
English mustard, to serve
1 1/2 lbs onions, sliced thinly
1 pinch sugar
2 tablespoons sunflower oil
1 ounce butter
1 teaspoon plain flour
2 1/4 cups brown ale
2 1/4 cups beef broth
1/2 star anise
2 cloves
2 fresh bay leaves
2 lbs potatoes, peeled and cut into chunks
2 ounces butter
2 -3 tablespoons milk
salt and pepper

Steps:

  • To make the beer and onion gravy, heat the oil and the butter in a large, heavy based saucepan.
  • Add the onions and sugar and cook over a low heat for 45 minutes, stirring now and then, until soft and richly caramelised.
  • Stir in the flour and cook for 1 minute.
  • Stir in the beer, beef broth, star anise, cloves and bay leaves and boil vigorously until reduced to a rich, glossy sauce - about 20 minutes in a large sauté pan.
  • Remove the star anise, bayleaves and cloves (if you can find them) from the gravy and season to taste with some salt and pepper.
  • For the sausages and mashed potato, cook the potatoes in boiling salted water for 20 minutes until soft.
  • Then after about 10 minutes, heat the oil for the sausages in a large frying pan.
  • Add the sausages and fry them over a medium heat for 8-10 minutes, turning now and then, until nicely browned and cooked through.
  • Drain the potatoes and mash until smooth - a potato ricer does this really well.
  • Beat in the butter with some seasoning and enough milk to make a smooth, creamy mash.
  • Spoon the mashed potatoes onto warmed plates and rest the sausages alongside.
  • Pour over some of the gravy and serve with a good spoonful of English mustard.

3 -4 large onions, thinly sliced in rings (at least 1 red onion)
400 ml chicken stock or 400 ml beef stock
100 ml red wine
75 g butter
2 teaspoons French mustard (optional)
1 teaspoon Worcestershire sauce (optional)
salt and black pepper

Steps:

  • Melt the butter in a heavy pan and cook the onions for about 20 minutes, stirring frequently until soft. Turn the heat down low, do not cover the pan and cook until the onions are brown, this should take about 1 hour so don't try and rush it.
  • Add the stock, red wine, Worcestershire sauce and mustard.
  • Bring the gravy to the simmer and reduce slightly, stir frequently, check the seasoning and serve.
