ONION BRIE APPETIZERS

Steps:
- In a large skillet, cook the onions, butter, brown sugar and vinegar over medium-low heat until onions are golden brown, stirring frequently. Remove with a slotted spoon; cool to room temperature., On a lightly floured surface, roll puff pastry into an 11x8-in. rectangle. Cut Brie into thin slices; distribute evenly over pastry. Cover with the onions; sprinkle with caraway seeds. , Roll up 1 long side to the middle of the dough; roll up the other side so the 2 rolls meet in the center. Using a serrated knife, cut into 1/2-in. slices. Place on parchment-lined baking sheets; flatten to 1/4-in. thickness. Refrigerate for 15 minutes., In a small bowl, beat egg and water; brush over slices. Bake at 375° until puffed and golden brown, 12-14 minutes. Serve warm.

Steps:
- In a large skillet, cook the onions, butter, brown sugar and vinegar over medium-low heat until onions are golden brown, stirring frequently.

- Spread Brie over pastry.

- In a medium-sized bowl, sift the flour and the salt. With a pastry cutter or a fork, cut in the shortening until the mixture resembles coarse crumbs. Sprinkle in the water, 1 tablespoon at a time, mixing lightly with a fork until the pastry is just moist enough to hold together. Shape it into a ball.
- Preheat the oven to 425°F.
- Melt the butter in a large skillet over medium heat. Add the onions and garlic and cook until the onions are translucent. Lower the heat to low and cover the pan and cook slowly until caramelized, about 20 minutes.
- Line a large cookie sheet with parchment paper. Roll out the pastry to 1/8-inch thick and transfer it to the parchment paper. Sprinkle on the onions and garlic evenly, leaving a border around the edge. Scatter the tomatoes on top, and then the cheese. Grind the pepper on top and sprinkle on the parsley. Fold the border up onto the filling. Brush the border with the egg and sprinkle with the Parmesan cheese. Bake in the preheated oven for 30 minutes or until golden.

- In a large skillet, saute onions in oil until softened. Reduce heat to medium-low; add the brown sugar, vinegar and salt. Cook, stirring occasionally, for 30-35 minutes or until onions are deep golden brown., Cut top third off loaf of bread; hollow out enough bread from the bottom to make room for cheese. Cube removed bread; set aside. Using a knife, make 2-in. cuts into loaf around edge of bread at 1-in. intervals. Remove rind from cheese; cut cheese in half horizontally. Layer half of the cheese and onions in bread. Repeat layers., Transfer to an ungreased baking sheet. Bake at 350° for 25-30 minutes or until cheese is melted. Let stand for 10 minutes. Serve with bread cubes. Freeze option: Cool onion mixture. Assemble bread, cheese and onion mixture as directed, wrap and freeze. Freeze bread cubes in a separate freezer container. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Bake bread bowl as directed, increasing time as necessary until heated through. Serve with bread cubes.

Steps:
- Heat oil in deep skillet on medium heat.
- Add onions and cook until transparent.
- Add brown sugar and vinegar and cook covered for 15 minutes over low heat until onions are caramelized.
- Season with salt and pepper as desired and cook on low until all moisture is evaporated.
- Cool slightly and spoon approx.
- 1 tablespoon into pre baked shells and top with a sliver of Brie cheese.
- Bake at 350 degrees for 15 minutes or until the cheese melts.
- Serve warm.

- saute onion and garlic in a little olive oil until soft and fragrant. season with salt and pepper, set aside to cool.
- lay brie slices along middle third of each pastry sheet, they wont cover all the space, you may want to cut slices in half to better distribute.
- divide onion mix between pastry sheets, only on top of the cheese.
- fold sides of pastry one over the other so you have a big tube, squeeze to seal. with a serrated knife, slice into 3/4" pieces.
- line baking sheet with the parchment paper the pastry came in and bake at 375f for about 15-25 min, until puffed and golden, serve warm if possible but still great cold. any leftovers (ya right) should be reheated in the oven, not the microwave to prevent them getting soggy
- other variations: brie and mango chutney, brie and fresh mixed herbs, brie and sautéed mushrooms, brie and pear slices -- .
