CHILI BAKED POTATO RECIPE
This easy chili baked potato recipe works for weeknights or family dinners for a crowd! This trick lets you cook the potatoes in half the time.

- Preheat the oven to 450 degrees Fahrenheit.
- try our Ultimate Vegan Chili, Vegetarian Chili, Healthy Chili or Instant Pot Chili. Or, you can make the chili in advance and refrigerate; then re-warm before serving.
- Meanwhile, wash the potatoes and slice them in half. Line 2 baking sheets with parchment paper. Place the potatoes on top and rub them with olive oil, just enough to coat. Sprinkle them with kosher salt.
- Turn the potatoes cut side down and prick the tops several times with fork.
- Bake until the potatoes are tender and lightly browned on the edges, about 25 to 35 minutes depending on the exact size of the potatoes. Prick them with a fork to assess doneness. Taste and add an additional sprinkle of salt if necessary.
- Mash the tops of the potatoes lightly with a fork. Serve immediately with the toppings of your choice (listed above).
ONE-POT VEGETARIAN CHILLI WITH BAKED POTATOES

- 1. Preheat the oven to 180°C/gas mark 4. Wash the potatoes and prick them with a fork. Wrap them in kitchen foil and bake in the oven - this should take about 1 hour, depending on the size of your potatoes. 2. Meanwhile, make the chilli sauce. Heat the oil in a medium to large saucepan, add the onions and fry gently for 5 minutes. Stir in the garlic, green beans and red pepper. Turn up the heat slightly, then stir in the drained kidney beans and the veggie mince (if using) and cook through for 1 minute. 3. Stir in the chipotle paste or chilli flakes, the chopped tomatoes, water, Worcestershire sauce and tamari or soy sauce. Bring to a gentle simmer, then cover and cook for 30 minutes, checking and stirring occasionally. 4. Taste, and add more seasoning as necessary. If you prefer a spicier sauce, add extra chipotle paste or chilli flakes. The sauce should be rich and thickened. Finally, stir in the herbs and add sea salt and black pepper to taste. Keep warm until the potatoes are ready. 5. To serve, spoon the chilli sauce evenly over the baked potatoes and top each one with a dollop of sour cream or crème fraîche.
BAKED POTATOES WITH VEGETARIAN CHILI
Less fat than potatoes loaded up with bacon and beef, this recipe is filled with good-for-you veggies.

- Preheat oven to 375°F.
- Wash potatoes thoroughly and poke with a fork 4-5 times. Wrap in foil or place on a cookie sheet.
- Place in oven for 45-60 minutes or until soft.
- While potatoes are cooking, chop olives and green onions into small slices and grate carrots.
- Heat chili briefly in microwave or on stove top until warm.
- Place olives, carrots, onions, broccoli, cheddar cheese, yogurt or sour cream, chili and salsa out buffet-style to create your own potato bar!
- Carefully take out potatoes when finished cooking. Slice open and garnish with your favorite toppings.

CHICKEN CHILLI SMOTHERED BAKED POTATOES
A terrific recipe to use leftovers from week-end bbq or to make up during the winter months as a wonderful southwestern comfort food meal. We've been re-arranging our kitchen and trying to use up all the extras each week to keep the refrigerator and cabinet neat. This recipe was made up on the spot using leftover grilled chicken, leftover grilled corn on the cob, leftover baked potatoes, a can of Rotel tomatoes, a can of beans (I used black beans, but white, kidney, and pinto beans would work equally well). I was able to make it in one cast iron skillet also so clean up was a snap

- Preheat oven to 350 degrees. Heat oil in cast iron square deep skillet and saute the onion and celery until brown. Move celery and onion to the side making a well - melt butter in the well and add flour until well incorporated and stir in milk until smooth white sauce results.
- Mix onion and celery into the white sauce and add the cut corn from the cob, the Rotel tomatoes, diced grilled chicken and the beans. Mix well and then remove the sauce from the pan while you brown the baked potatoes. Add a little oil to the bottom of the cast iron pan, cut the baked potatoes in half lengthwise and place cut side down in the oil. Cook until brown.
- Cover the potatoes with the sauce mixture and add garlic and other seasonngs to flavor and then bake in oven for 15 minutes - remove and add cheese to the top and continue to bake until the cheese is well melted and the sauce is bubbly (about 10 minutes).
- Serve with chives, sour cream, cilantro, etc.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil; add onion and saute, stirring occasionally until tender and slightly browned, about 5 minutes. Add garlic and saute for 1 minute. Mix in chili powder, oregano, cumin, and garlic powder. Stir in tomato paste and saute the mixture for about 1 minute. Pour in broth and tomato sauce and with a wooden spoon scrape any browned bits from the base of the pot. This will prevent a burn notice. Mix in diced tomatoes, black beans, pinto beans, chipotle pepper, and salt (start with 1 teaspoon and adjust to taste after cooking).
- Cancel Saute function. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 5 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Stir chili and taste; adjust seasonings to your personal preference.

- Preheat the oven to 374 F / 190 C. Prepare a baking tray with parchment paper and a 10.6 x 7 inch baking dish placed on it.
- Dry potatoes with a kitchen towel. Place a potato in the middle of 2 metal sticks or wooden spoons and cut slits with a sharp knife. Repeat the same with each potato. Grease the baking dish with oil and place potatoes in it. Bake in the middle of the oven for 45 minutes.
- In the meantime prepare the chili. In a large bowl, mix tomato, bell pepper, red beans, tomato purée, green beans, corn kernel, spices, vegetable broth and cilantro. Combine all together then adjust salt and pepper to your taste.
