One Pot Pickled Vgetables image

Quick and easy pickled vegetables recipe, homemade with simple ingredients in one pot over stovetop in 20 minutes. Loaded with vegetables, fresh herbs, spices, vinegar brine.

6 cups Vegetables
6-8 cloves Garlic
2 tsp Ginger (Thinly sliced)
1 tbsp Coriander seeds
2 tsp Fennel seeds
1 tsp Mustard seeds
1 Bay leaf
1 tsp Red chili flakes
1 tsp Black peppercorns
3 sprigs Fresh herbs (Your choice of dill, parsley, thyme, oregano, rosemary, sage or a combination )
3 cups Water
2 cups Vinegar
2 tbsp Salt
3-4 tbsp Granulated sugar (Adjust according to your preference)

Steps:

  • Wash and roughly dice vegetables of your choice. Some veggies such as green beans and red chilies don't have to be sliced and chopped.
  • Fill 2 wide-mouthed quart size mason jars with these veggies and make sure to really pack them in. Leave about 1 inch space at the top of the jar.
  • Divide all the herbs and spices between the two jars. Keep aside.
  • In a nonstick saucepan, add water, vinegar, salt, sugar and and bring to a boil.
  • Gently pour this brine, using a funnel in each jar. Make sure the pickle juice completely covers the vegetables and be sure to leave at least a 1/2 inch of space between the brine and lid.
  • Cover tightly with lid and let it sit at room temperature until it cools down completely.
  • Then, store in the fridge for up to 1 month. These pickled are ready to be enjoyed after 6-8 hours but taste even better after 24 hours.

This pickled vegetables recipe was handed down to me by my mom. It's been in the family for years. These sweet and tangy pickles are delicious whether you use homegrown cucumbers or store-bought ones. They're great to have in the pantry. -Joan Haliford, North Richland Hills, Texas

Number Of Ingredients 12

1 small head cauliflower, cut into florets (about 4 cups)
4 cups thinly sliced onions (about 4 large)
4 cups thinly sliced cucumber (about 3 medium)
2 medium sweet red pepper, cut into strips
2 medium green peppers, cut into strips
8 quarts ice water
1 cup canning salt
2-1/2 cups sugar
2-1/2 cups white vinegar
1 teaspoon celery seed
3/4 teaspoon ground turmeric
1/4 teaspoon ground cloves

Steps:

  • Place cauliflower, onions, cucumbers and peppers in a large bowl. In another large bowl, mix ice water and salt; pour over vegetables. Let stand 4 hours., Rinse vegetables and drain well. In a Dutch oven, bring sugar, vinegar, celery seed, turmeric and cloves to a boil. Add drained vegetable mixture; return to a boil. Reduce heat; simmer, uncovered, until vegetables are heated through, 5 minutes., Pack hot vegetables and liquid into six hot 1-pint jars, leaving 1/2-in. Remove air bubbles and adjust headspace, if necessary, by adding hot liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

A refrigerator pickle, it makes a great, nutritious snack and the liquid makes a good salad dressing. From Dr. Andrew Weil and Rosie Daley's "The Healthy Kitchen". Blanching and shocking the veggies helps them to retain crispness and crunchiness while still absorbing the liquid. They require different blanching times; jicama requires no blanching.

1/2 lb carrot, peeled and cut into ovals on the diagonal (about 2 cups)
1/2 lb string bean
1 small head cauliflower, broken into florets (about 2 cups)
1/2 raw jicama, peeled and cut into sticks
2 cups purified water
2 1/2 cups cider vinegar
1/4 cup olive oil
3 tablespoons brown sugar
1 teaspoon salt
1 tablespoon dried dill weed
6 garlic cloves
1/4 cup pickling spices (or 5 bay leaves, 1 tbsp. mustard seed, 1 tbsp. dill seed, and 1 1/2 tsp. red chile flakes)

Steps:

  • Fill a large pot with5 cups of water and bring to a boil. Drop in the carrots and parboil 2 minutes, then quickly scoop them with a strainer r large slotted spoon and transfer to a pot filled with ice water to shock them.
  • Drop the beans into the boiling water, cook 3 minutes, then remove and shock them. Parboil the cauliflower 1 minute, then shock it. Let all the vegetables sit in the cold water long enough to cool down, then drain the cold water, place the veggies in a large bowl with the jicama.
  • Put all dressing ingredients in a non-reactive pan set over medium heat, bring it to a boil and cook for 2 minutes. Pour the hot dressing over the vegetables and allow them to cool to room temperature.
  • Place the cooled vegetables into a 1-gallon jar or heavy lidded (food-safe) plastic container and cover them with as much dressing as the jar will hold.Cover and refrigerate at least 2 days before eating.

1 pound carrots, peeled and cut into 1/4-inch slices on the diagonal
1 head cauliflower, trimmed and separated into small florets
1 pound pickling cucumbers, unpeeled, washed and cut into 1/4-inch slices on the diagonal
3/4 cup chopped fresh oregano leaves
1 quart white vinegar
1/2 cup sugar
1/4 cup coarse salt
2 tablespoons cracked black pepper
6 red jalapeno chilies
6 green jalapeno chiles
2 heads garlic, cloves separated, peeled, cut in half lengthwise
1 medium yellow onion, sliced

Steps:

  • Bring a medium saucepan of salted water to a boil, and blanch the carrots for 3 minutes. Remove from the boiling water with a slotted spoon, and refresh in a bowl of iced water. Drain and reserve. Then blanch the cauliflower about 6 minutes, drain, refresh and drain again. Place the carrots, cauliflower, cucumbers and oregano in a large nonreactive bowl.
  • Combine the vinegar, sugar, salt and pepper in a saucepan and bring to a boil. Add the jalapeno chiles, garlic and onion and return to a boil. Cook 1 minute longer, and pour over the vegetables.
  • Set aside to cool to room temperature. Pour into three 1-quart glass jars and refrigerate as long as 1 month.

1 tablespoon plus 2 teaspoons kosher salt
1 3/4 cups cauliflower florets (in 2-inch pieces)
1 russet potato, peeled, cut in half lengthwise and sliced into 1/4-inch-thick half moons
2 carrots, peeled and sliced on bias
4 jalapenos, seeded, deveined and sliced lengthwise in strips
4 jalapenos, seeded, deveined and sliced lengthwise in strips
1 cup olive oil
2 cloves garlic, halved
1/2 red onion, sliced
1/2 cup white distilled vinegar
12 whole peppercorns
3 to 4 bay leaves
2 teaspoons dried, crumbled Mexican oregano

Steps:

  • In a large pot, bring 10 cups water and 1 tablespoon salt to a boil. Add the cauliflower and potatoes and cook for 5 minutes. Remove from the pot and place in a colander set over a bowl to drain. Add the carrots and cook for 3 minutes. Remove the carrots from the pot and add to the colander. Add the jalapenos and cook for 2 minutes. Remove from the heat and add to the colander. Drain the cooked vegetables of excess water and place them in a 9-by-13-inch glass baking dish.
  • In a large heavy saute pan, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 4 minutes. Add the onion and cook until softened but not browned, about 2 minutes. Turn the heat off. Sprinkle a drop or two of vinegar into the oil. If it splatters, allow the oil to cool until no splattering occurs. Then add the vinegar, peppercorns, bay leaves, oregano and remaining 2 teaspoons salt. Stir to combine. Return the pan to medium heat and cook for 3 minutes. Pour the pickling liquid over the reserved vegetables and toss to combine. Cool the vegetables to room temperature, cover with plastic wrap and refrigerate overnight.

Fine sea salt or kosher salt
1 head purple cauliflower, cut into florets
2 carrots, peeled and sliced into 1/4-inch discs
2 ribs celery with leafy tops, sliced
1 cup green Sicilian olives, pitted
2 Italian cherry peppers, sliced
1 cup white balsamic vinegar
1/4 cup sugar
2 bay leaves

Steps:

  • Blanch the cauliflower, carrots and celery in salted boiling water for 3 to 4 minutes. Drain, then transfer to a heatproof shallow bowl (do not shock in cold water as you normally would when blanching). Toss with the olives and cherry peppers. The warm vegetables will soak up some of the brine.
  • Combine the vinegar, 1 cup water, the sugar, 2 rounded tablespoons salt and the bay leaves in a pot. Bring to a boil, stirring to dissolve the sugar and salt, then pour over the vegetables. Let cool, tossing occasionally. Serve at room temperature. Refrigerate any leftovers.
