CHICKEN ONE-POT WITH LEMON AND ROSEMARY
"N'Cip N'Ciap" (pronounced "chip-chop") is the Italian name for this one-pot meal. It's fun to say, super tasty and so easy!

Steps:
- Heat a large, deep skillet or shallow Dutch oven over medium-high to high heat
- Add 2 turns of the pan of oil and brown the chicken in batches to avoid overcrowding the pan
- Let the skin get good color and crisp up
- Remove chicken and add the onion, garlic, fennel, chili pepper, salt and pepper; reduce heat, cover and cook 10 minutes, stirring occasionally, to soften; being careful not to burn or brown the onions
- Uncover the pan and add the wine
- Bring to a bubble and add the rosemary; settle the chicken back into pan
- Simmer at a low bubble for 30 minutes to cook through
- To make more sauce, add stock and lemon zest to the pot, cover the pan and cook 10 minutes
- Uncover and stir in lemon juice
- Let stand 10 minutes then serve with bread for mopping
ONE POT LEMON ROSEMARY DIJON CHICKEN AND BUTTER TOASTED RICE PILAF

- 1. Preheat the oven to 425 degrees F. Season the chicken with paprika, lemon zest, and a pinch each of salt and pepper. 2. Heat the olive oil in a large skillet/braiser set over medium heat. When the oil shimmers, add the chicken and cook on both sides until golden, about 5 minutes per side. Remove the chicken from the pan. 3. To the skillet, add the shallots, carrots, and mushrooms. Cook 5 minutes, until just caramelized. Add the butter, wild rice, orzo, garlic, rosemary, thyme, and apple, if using. Cook 5 minutes, until lightly toasted and golden. Add the apple cider, wine, dijon, lemon juice, and 1/2 cup of water. Season with salt and pepper. Bring to a boil over high heat. 4. Slide the chicken back into the pan. Add the rosemary sprig. Bake, covered, for 30-40 minutes, until the liquid is absorbed and the rice is cooked. During the last 10-15 minutes of cooking remove the lid and allow the chicken to crisp, if needed, add in 1/4 cup additional water or chicken broth to keep the rice from getting dry.5. To serve, fluff the rice with a fork and serve the chicken, rice, and veggies together. Enjoy!

- Preheat oven to 400°. Sprinkle chicken with salt and pepper. In a large cast-iron or other heavy skillet, heat oil over medium heat; brown chicken on both sides. Transfer to a 15x10x1-in. baking pan; reserve drippings. Bake chicken, uncovered, until a thermometer reads 165°, 8-10 minutes., Meanwhile, in same skillet, cook and stir shallot and rosemary in drippings until tender. Stir in broth. Bring to a boil; cook until liquid is reduced by half. Reduce heat to low; stir in lemon zest and juice. Whisk in butter, 1 tablespoon at a time, until creamy. Serve with chicken.

- In a pot, combine EVOO with the carrots, onion, celery, garlic and lemon zest and juice. Season the chicken with salt and pepper on both sides, turn in the vegetables and oil and cover. Refrigerate for 3 to 4 hours.
- Return to room temp.
- Place a pot over medium-high heat and brown the chicken 15 to 20 minutes. Add the wine and reduce for a few minutes. In a small bowl, stir together the tomato paste with 1/4 cup hot water, then add to the sauce along with the stock. Bring to a boil, then reduce the heat and simmer 20 to 30 minutes more to cook through. Cool and store.
- Reheat over medium heat. Serve with crusty bread.

- Season the cavity of the chicken with salt and pepper. Prick 1 lemon 3 times with a knife and slice the second lemon into thin slices.
- Stuff chicken with 4 rosemary sprigs, whole lemon, and onion. Loosen the skin from the body of the chicken, making sure not to tear. Stuff lemon slices and softer rosemary sprigs under the skin, making sure to get the legs as well.

LEMONY GREEK CHICKEN, SPINACH AND POTATO STEW
If your favorite Greek foods are the lively vegetable dishes, this meal-in-a-bowl stew is for you. A simple mix of lemon, garlic and lots of herbs enliven the potatoes and spinach and using ground meat ensures a lot of flavor in very little time. Ground turkey or pork would be just as good, if you prefer. Russets can be substituted for Yukon golds, but their texture will be more grainy and less creamy. Mature spinach or frozen spinach works best here because of its mellow flavor, as opposed to baby spinach, which is more tannic.
