One Pot Lemon Rosemary Dijon Chicken and Butter Toasted Rice Pilaf image

Everyone's favorite dinner made easy and delicious and all in one-pot!

Provided by Tieghan Gerard

Time 1h15m

Number Of Ingredients 18

1 1/2 pounds boneless chicken breasts or thighs
1 teaspoon smoked paprika
juice and zest of 1 lemon
kosher salt and black pepper
2 tablespoons extra virgin olive oil
2 shallots, chopped
4 carrots, chopped
1 1/2 cups mushrooms, chopped
3 tablespoons salted butter
1 1/2 cups wild rice blend ((mix wild and brown rice))
1/2 cup dry orzo pasta
4 cloves garlic, minced or grated
1 whole sprig + 2 tablespoons chopped fresh rosemary
1 tablespoon fresh thyme leaves, plus more for serving
1 small honeycrisp apple, chopped ((optional) )
2 cups apple cider (not vinegar)
1 cup dry white wine such, as Pinot Grigio or Sauvignon Blanc
2 tablespoons Dijon mustard

Steps:

  • 1. Preheat the oven to 425 degrees F. Season the chicken with paprika, lemon zest, and a pinch each of salt and pepper. 2. Heat the olive oil in a large skillet/braiser set over medium heat. When the oil shimmers, add the chicken and cook on both sides until golden, about 5 minutes per side. Remove the chicken from the pan. 3. To the skillet, add the shallots, carrots, and mushrooms. Cook 5 minutes, until just caramelized. Add the butter, wild rice, orzo, garlic, rosemary, thyme, and apple, if using. Cook 5 minutes, until lightly toasted and golden. Add the apple cider, wine, dijon, lemon juice, and 1/2 cup of water. Season with salt and pepper. Bring to a boil over high heat. 4. Slide the chicken back into the pan. Add the rosemary sprig. Bake, covered, for 30-40 minutes, until the liquid is absorbed and the rice is cooked. During the last 10-15 minutes of cooking remove the lid and allow the chicken to crisp, if needed, add in 1/4 cup additional water or chicken broth to keep the rice from getting dry.5. To serve, fluff the rice with a fork and serve the chicken, rice, and veggies together. Enjoy!

JUICY LEMON-ROSEMARY ROAST CHICKEN

Juicy Lemon-Rosemary Roast Chicken image

This lemon-roasted chicken is so juicy and so easy to make! Make sure to get some woody sprigs of rosemary to create a roasting rack. This chicken makes an incredible chicken soup with the leftovers.

Provided by LIANNASR

Categories     Meat and Poultry Recipes     Chicken     Whole Chicken Recipes

Time 2h

Yield 6

Number Of Ingredients 6

1 (4.5 pound) whole chicken
kosher salt and ground black pepper to taste
2 lemons
2 bunches fresh rosemary sprigs, divided, or more as needed
½ medium onion
1 drizzle olive oil

Steps:

  • Season the cavity of the chicken with salt and pepper. Prick 1 lemon 3 times with a knife and slice the second lemon into thin slices.
  • Stuff chicken with 4 rosemary sprigs, whole lemon, and onion. Loosen the skin from the body of the chicken, making sure not to tear. Stuff lemon slices and softer rosemary sprigs under the skin, making sure to get the legs as well.
  • Line a 9x13-inch baking dish with the remaining rosemary sprigs to make a rack for the chicken. Place stuffed chicken on top, sprinkle generously with salt and pepper, and drizzle with olive oil.
  • Roast in the preheated oven for 30 minutes. Continue to roast, basting every 15 minutes, until no longer pink in the center and an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reaches 165 degrees F (74 degrees C), about 1 hour more. Cover with foil and let rest for 15 minutes before slicing.

LEMONY GREEK CHICKEN, SPINACH AND POTATO STEW

Lemony Greek Chicken, Spinach and Potato Stew image

If your favorite Greek foods are the lively vegetable dishes, this meal-in-a-bowl stew is for you. A simple mix of lemon, garlic and lots of herbs enliven the potatoes and spinach and using ground meat ensures a lot of flavor in very little time. Ground turkey or pork would be just as good, if you prefer. Russets can be substituted for Yukon golds, but their texture will be more grainy and less creamy. Mature spinach or frozen spinach works best here because of its mellow flavor, as opposed to baby spinach, which is more tannic. Add the amount of dill that sounds best to you, or if you don't like it, swap in a few tablespoons of fresh parsley or mint.

Time 35m

Yield 4 to 5 servings

Number Of Ingredients 15

1/4 cup extra-virgin olive oil
1 red or yellow onion, finely chopped
8 large garlic cloves, smashed and finely chopped
1 1/2 teaspoons coarse kosher salt, plus more to taste
1 pound ground chicken
1 heaping tablespoon roughly chopped fresh rosemary (leaves of about 1 large sprig) or 1 1/2 teaspoons dried rosemary
1 1/2 teaspoons dried oregano
1 teaspoon red-pepper flakes
Black pepper
1 1/2 pounds Yukon gold potatoes (about 3 medium), scrubbed and chopped into 1/2-inch chunks
6 cups chicken broth
Juice of 1 large lemon (about 1/4 cup juice)
1 (8-ounce) bunch mature spinach, stems included, chopped, or 1 1/2 cups frozen leaf spinach
1/4 to 1/3 cup lightly packed roughly chopped dill
Crumbled feta and crushed pita chips, for topping

Steps:

  • In a large pot or Dutch oven, warm the oil over high heat. Add the onion, garlic and salt and cook, stirring, until the onion and garlic are softened and just starting to brown, 5 minutes. (Decrease the heat to medium-high if necessary to prevent scorching.)
  • Decrease the heat to medium-high and add the chicken, rosemary, oregano, red-pepper flakes and several generous grinds of black pepper. Cook, breaking up the chicken into crumbles, until the meat starts to lose its translucent pinkness and is turning white, about 2 minutes. Add the potatoes and stir well to combine. Add the chicken broth and half the lemon juice, scraping up any browned bits on the bottom. Bring to a rolling boil and then lower the heat to maintain a very brisk simmer. Simmer until the potatoes are nearly tender, 15 minutes.
  • Add the spinach and dill, to taste. Continue to simmer briskly until the potatoes are tender, about 5 minutes more. Taste and add some or all of the remaining lemon juice, as well as more salt and pepper, if desired. Serve in bowls topped with feta and crushed pita chips.

  • If the chicken breasts are uneven in thickness, pound them down so they’re all even. This way all the breasts will cook through evenly. This typically doesn't need to be done with chicken thighs. Place the chicken in a large ziplock bag or dish. Set aside.
  • Whisk together the olive oil, lemon juice, garlic, rosemary, salt, and pepper. Then, pour 3/4th of the marinade over the chicken and allow it to marinate while you prep the potatoes.
  • Cut the potatoes in quarters— the goal is to have them roughly the same size so they cook evenly. Place the potatoes in a large ziplock bag or bowl. Pour the remaining marinade over the potatoes, making sure they are evenly coated.
