One-Pan Farro with Tomatoes and Kale image

This One-Pan Farro with Tomatoes and Kale is a straight-up DREAM! Rustic farro cozied up to cherry tomatoes, onions, garlic, and kale. So good and so wholesome!

2 cups water
1 cup farro
half an onion, thinly sliced
2 cloves garlic, thinly sliced
10 ounces grape or cherry tomatoes, halved
1 teaspoon salt
a few stalks of kale, stems removed, chopped into small pieces (about 2 cups)
1/4 cup olive oil (optional, but makes it a bit more luscious)
red pepper flakes
fresh basil
Parmesan
chicken, meatballs, or a fried egg

Steps:

  • Add water, farro, onion, garlic, tomatoes, and salt to a medium sized saucepan. Simmer, uncovered, for 15 minutes.
  • Add the kale. Simmer, uncovered, for another 15 minutes.
  • Stir in the olive oil, and... you're done! The farro should be chewy but soft, and there will be just the slightest amount of really delicious brothiness left in the pan. Top with your favorite things - I highly recommend the Parmesan and the red pepper flakes. It's almost too simple and too good to be true.

2 tablespoons brandy or cognac
2 cups farro
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground pepper
1 1/2 cups low-sodium chicken broth
1 bay leaf
1/4 cup grated parmesan cheese (about 1 ounce), plus a small piece of rind
1 cup grated gruyere cheese (about 4 ounces)
2 tablespoons roughly chopped fresh parsley
2 tablespoons unsalted butter
1 large onion, thinly sliced

Steps:

  • Position a rack in the upper third of the oven and preheat to 400 degrees F. Melt the butter in a medium pot over medium-high heat. Add the onion and cook, stirring, until softened, about 5 minutes. Add the brandy and cook until evaporated, about 2 minutes. Add the farro, Worcestershire sauce, 1/2 teaspoon salt and a few grinds of pepper; cook, stirring, until the farro is coated, 2 minutes. Stir in the chicken broth, 1 1/2 cups water, the bay leaf and the parmesan rind. Bring to a boil, then stir in the grated parmesan.
  • Transfer the mixture to a 1 1/2-quart flameproof baking dish, cover with foil and bake until most of the liquid is absorbed and the farro is tender, about 40 minutes. Remove from the oven; discard the bay leaf and parmesan rind. Continue baking, uncovered, until all of the liquid is absorbed, about 5 more minutes. Sprinkle with the grated gruyere; turn on the broiler and broil until melted and golden brown in spots, about 1 minute. Top with the parsley.

With tender-cooked farro grains and French onion flavors, this easy one-pan favorite is like a cross between risotto and French onion soup. Serve with Gruyere-topped crostini and a fresh sprig of thyme and we're talking swoon-city. For a vegan version, just omit the gruyere - still absolutely delicious!

1 tablespoon olive oil
2 medium yellow onions (halved and sliced thin)
3 medium cloves garlic (minced (about 1 tablespoon))
1/2 cup dry white wine (I like Pinot Gris for this recipe)
2 1/2 cups low-sodium vegetable broth (plus more if needed)
1 cup pearled farro* (rinsed under cold water)
1 teaspoon chopped fresh thyme (or 1/2 teaspoon dried)
1 tablespoon vegetarian Worcestershire sauce
1/2 teaspoon kosher salt (plus more to taste)
1/4 teaspoon freshly ground black pepper (plus more to taste)
2 tablespoons chopped parsley (optional)
Crostini (ingredients below)
1/2 small baguette (sliced thin (about 1/4-inch))
2 tablespoons extra-virgin olive oil
Pinch kosher salt
2 ounces Gruyere cheese (shredded (about 1/2 cup) (omit for vegan version))

Steps:

  • Set a large pot over low heat. Add the olive oil and the onions. Cook, stirring once every 5 minutes or so to scrape up the brown bits from the bottom, until softened and golden brown, about 40 minutes. If the onions start to burn, lower the heat until they're cooking well but not burning.
  • Once the onions are caramelized, add the garlic. Cook, stirring occasionally, for one minute.
  • Add the wine, stirring until all of the brown bits are scraped up from the bottom of the pan (deglazing). Add the broth, farro, thyme, Worcestershire sauce, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Stir. Increase heat to medium-high to bring to a boil, then reduce heat to a simmer. Cook uncovered, stirring occasionally, until thickened and the farro is tender, 20-30 minutes. If the liquid cooks off before the farro is cooked through, add more broth, 1/2 cup at a time, until cooked. Stir in or top with parsley if desired.
  • While the farro simmers, make the crostini. Set the slices of baguette on a baking sheet. In a small bowl, stir together the olive oil and salt. Using a pastry brush, brush both sides of the bread with the oil. Sprinkle individual crostini with Gruyere cheese, if using. Broil on high until toasted and golden brown, 2-5 minutes (the time really depends on your individual broiler. Watch carefully - they can burn fast!)
  • To serve, spoon farro into bowls or onto a plate. Top with crostini.

12 (3/4-inch-thick) French baguette slices
1/4 cup unsalted butter
3 pounds sweet onions, sliced
3 cloves garlic, minced
1/3 cup dry white wine
6 cups beef stock
4 sprigs fresh thyme
2 bay leaves
2 teaspoons balsamic vinegar
Kosher salt and freshly ground black pepper, to taste
1 1/2 cups shredded Gruyère cheese
1/2 cup freshly grated Parmesan

Steps:

  • Preheat oven to broil. Place baguette slices onto a baking sheet. Place into oven and broil until golden brown on both sides, about 1-2 minutes per side; set aside. Melt butter in a large oven-proof braiser over medium heat. Add onions, and cook, stirring often, until deep golden brown and caramelized, about 30-40 minutes.* Stir in garlic until fragrant, about 1 minute. Stir in wine, scraping any browned bits from the bottom of the braiser. Stir in beef stock, thyme and bay leaves. Bring to a boil; reduce heat and simmer, stirring occasionally, until slightly reduced, about 15-20 minutes. Remove and discard thyme sprigs and bay leaves. Stir in balsamic vinegar; season with salt and pepper, to taste. Top with baguette slices to cover the surface of the soup completely; sprinkle with cheeses. Place into oven and broil until golden brown and cheeses have melted; about 3-5 minutes. Serve immediately.

1 tablespoon olive oil
2 1/2 pounds bone-in, skin-on chicken thighs (6 to 8 thighs)
Kosher salt and freshly ground black pepper
1 medium red onion, chopped (1 cup)
3 cloves garlic, thinly sliced
1/2 teaspoon crushed red pepper flakes
1 cup pearled farro
1/2 cup dry white wine
2 cups low-sodium chicken stock
3/4 cup (oil-packed) sun-dried tomatoes, drained and sliced (4 ounces)
1/2 cup pitted kalamata olives, halved lengthwise (3 ounces)
1 lemon, zested and halved
1/3 cup crumbled feta (1 1/2 ounces)
1/4 cup roughly chopped dill

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a large braiser or large Dutch oven over high heat and add the olive oil. Pat the chicken thighs dry and season with salt and pepper on both sides. When the oil is hot, add the chicken thighs, skin-side down, and cook, undisturbed, until golden brown, 6 to 8 minutes. Flip the chicken, cook for 2 more minutes and remove to a plate. (The chicken will not be cooked through at this point.) Pour off the excess fat from the braiser, leaving behind 2 tablespoons of it.
  • Reduce the heat to medium high, add the onions, garlic and red pepper flakes and cook, stirring often, until softened, about 3 minutes. Season with salt and pepper. Stir in the farro until combined. Add the wine and cook for 1 minute, scraping up the brown bits from the bottom with a wooden spoon. Add the chicken stock and bring to a simmer, about 2 minutes. Stir in the sun-dried tomatoes and olives. Place the chicken on top, skin-side up, in a single layer and add any residual juices from the plate.
  • Cover the braiser and bake until the farro is tender, most of the liquid has evaporated and the chicken is cooked through, 30 to 35 minutes.
  • Meanwhile, add the lemon zest, feta and dill to a small bowl and toss to combine.
  • Remove the braiser from the oven and squeeze the juice of the zested lemon over the top of the dish. Sprinkle with the feta and dill mixture and serve.
