ONE POT TACO PASTA RECIPE
Quick and easy taco pasta recipe, homemade with simple ingredients in one pot over stovetop in 30 minutes. This Mexican pasta is cheesy, creamy, loaded with ground beef.

Steps:
- Heat oil in a large nonstick pot over medium-high heat.
- Add ground beef, ginger, garlic, salt, pepper and mix it together.
- Cook for a few minutes, while stirring occasionally, until beef is cooked through and no longer pink.
- Drain fat.
- Add red beans, corn, salsa, taco seasoning, uncooked pasta, water, additional salt and pepper (if needed) and mix everything together.
- Bring everything to a boil. The, cover and let cook for about 15 minutes or until the pasta is cooked through.
- If the mixture is getting too thick and the pasta still needs some time to cook, add a little more water ( ¼ cup at a time). Then, cover and cook for a few more minutes.
- Remove from heat and mix in 1 cup shredded cheese.
- Garnish with remaining 1/2 cup cheese and additional toppings of your choice and enjoy!

- In a large quart pot over medium-high heat brown the ground beef. Drain fat and return beef to the pot.
- Add taco seasoning, water, diced tomatoes, corn and tomato sauce. Bring to a boil.
- Add uncooked macaroni and reduce heat to low. Cover and simmer for 10-15 minutes (until pasta is cooked through). Stir occasionally.
- Remove from heat. Sprinkle cheese on top and cover.
- Serve once cheese is melted!
- Enjoy!

- Preheat large, deep skillet/saucepan over medium heat.
- Spray cooking spray and add onion, garlic and beef. Season with salt and taco seasoning and cook, stirring occasionally until cooked through.
- Drain excess fat if necessary.
- Stir in corn, beans, salsa, pasta, and 2 cups water.
- Bring to a boil, cover, reduce heat and simmer until pasta is cooked through, 10-15 minutes, stirring occasionally.
- Remove from heat and stir in cheese, tomatoes & cilantro.
- Enjoy!

- In a large pot or skillet (large enough to hold contents of entire recipe), over medium heat cook, cook ground beef until throughly browned.
- Once meat is browned, add enchilada sauce, broth and pasta. Cover and bring to a simmer. Cook for approximately 7-8 minutes than start checking the progress of the pasta*. When pasta starts to reach al dente, add in cream cheese and stir well. Cover and allow to cook for 1-2 more minutes. Stir in corn, and cook for 1-2 minutes.
- When pasta is cooked to the texture you prefer, add in cheese, which can be stirred in or allowed to melt on the top. Sprinkle with any additional ingredients such as tomatoes, green onions or olives. Serve immediately.
