ONE-INGREDIENT BANANA ICE CREAM
This outrageously easy "ice cream" is just the sort of dessert to please everyone at the table - the vegans, the lactose-intolerant, the paleo enthusiasts, the picky children. Just toss four frozen bananas into a blender and give it a good whirl. If you like soft-serve consistency, eat it right away (and adding a few tablespoons of milk to the blender wouldn't hurt, but it's not necessary). For more traditional scoops, freeze it in an airtight container, and dole out as you would the Ben & Jerry's. Consider adding a spoonful of peanut butter, Nutella or honey; a handful of chocolate chips or almonds; or a 1/2 teaspoon of powdered ginger, cardamom or cinnamon.

The easiest one-ingredient ice cream recipe! Banana ice cream is one of my favorite desserts. I like adding a bit of protein powder and nut butter for a more balanced treat but there are endless flavor variations you can try. How about peanut butter, mint chocolate chip, strawberry or matcha? YUM.

- Place the frozen banana in a food processor and pulse a few times to start breaking it down.
- Once it's fairly well broken down, slowly start blending stopping to scrape down the sides as needed. It will seem a little dry and icy at first but continue blending until it forms a smooth, creamy, soft serve ice cream-like texture. Depending on your blender or food processor you may need a little splash of dairy-free milk but for best results, try to use just the banana.
- Scoop the ice cream into a bowl and enjoy right away or place back in the freezer for 30-60 minutes for firmer ice cream.

- Start with a ripe banana-it should be sweet and soft. Peel the banana and cut it into coins. It doesn't matter what shape or size the pieces are in as long as they are chopped up into evenly-sized and somewhat small pieces. Put the banana pieces in an airtight container. Freeze the banana pieces for at least 2 hours but ideally overnight.
- Blend the frozen banana pieces in a small food processor or powerful blender. Pulse the frozen banana pieces. A small food processor or chopper works best. Keep blending-the banana will look crumbly.
- Scrape down the food processor. Keep blending-the banana will look gooey. Scrape down the food processor. Keep blending-the banana will look like oatmeal: It will get smoother but still have chunks of banana in it. Scrape down the food processor.
- Suddenly, as the last bits of banana smooth out, you'll see the mixture shift from blended banana to creamy, soft-serve ice cream texture. Blend for a few more seconds to aerate the ice cream. (If adding any mix-ins, this is the moment to do it).
- Transfer to an airtight container and freeze until solid. You can eat the ice cream immediately, but it will be quite soft.
