TRAIL MIX COOKIES (GLUTEN-FREE)



Trail Mix Cookies (gluten-free) image

A soft and chewy cookie filled with seeds, fruit, and chocolate chips!

Number Of Ingredients 15

3 eggs
¾ cup sugar
¾ cup lightly packed brown sugar
½ cup butter (softened)
1 cup peanut butter
½ tsp salt
2 tsp baking soda
1 tsp vanilla
½ cup unsweeteened flaked coconut
½ cup raisins
½ cup chocolate chips
¼ cup flax seeds (or chia seeds)
¼ cup pumpkin or sunflower seeds
3 cups oats (choose certified gluten-free to be Celiac-friendly)
½ cup almond flour (or all purpose wheat flour if they don't need to be gluten free)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Combine the eggs, sugars, butter and peanut butter until well combined. Then add the salt, baking soda and vanilla. Stir until combined.
  • Then mix in the coconut, raisins, chocolate chips, flax seeds, pumpkin or sunflower seeds, oats, and almond flour.
  • Drop by spoonfuls onto a greased baking sheet or one lined with parchment paper or a silicone mat.
  • Bake for 7-9 minutes. Don't overbake! The cookies are done when they have puffed up and the tops are JUST starting to turn a golden brown.
  • Allow to cool on baking sheet for 5 minutes to firm up and then transfer to a cooling rack. Contrary to most cookies, these ones actually taste better when they've cooled!

A recipe for classic flourless Monster Cookies loaded with peanut butter, oats, mini chocolate chips and M&Ms.

1 cup sugar
1 cup packed light brown sugar
1/2 cup unsalted butter, at room temperature
3 large eggs
1 1/2 cups peanut butter (smooth or chunky)
1 Tablespoon vanilla extract
2 teaspoons baking soda
1/2 teaspoon salt
4 1/2 cups oats (Old Fashioned or Quick)
1 cup mini M&Ms
1 cup mini-chocolate chips
Candy eyes (optional)

Steps:

  • Pre-heat the oven to 350°F. Line two baking sheet with parchment paper or Silpat baking mats.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together the sugar, brown sugar and butter until light and fluffy.
  • Beat in the eggs, one at a time, and then beat in the peanut butter, vanilla, baking soda and salt until well combined.
  • Add the the oats and mix until combined, then add the mini M&Ms and mini-chocolate chips.
  • Scoop 2-to 3-tablespoon mounds of the dough onto the prepared baking sheets, spacing the mounds at least 2 inches apart.
  • Bake the cookies for 12-15 minutes then remove them from the oven and allow them to cool for 5 minutes on the baking sheets before transferring them to a rack to cool completely. (See Kelly's Note.)

2 sticks (1/2 pound) salted butter, softened
1 1/2 cups brown sugar, packed
1/2 cup white sugar
2 whole large eggs
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cup oats (either quick or regular)
1 cup chocolate coated candies, such as M&M's
3/4 cup chocolate chips (milk or semisweet)
1/2 cup pecans, chopped
2 1/4 cups rice cereal, such as Rice Krispies
Cold milk, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Cream the butter with both sugars in a mixing bowl until fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and beat.
  • Combine the flour, salt, baking powder and baking soda. Add to the mixing bowl and mix until combined. After that, add in the oats, chocolate candies, chocolate chips and pecans in whatever quantity you prefer. Add the cereal at the very end, mixing until just combined. Do not over mix!
  • Use a cookie scoop to scoop balls of dough onto a cookie sheet. Bake until golden brown, about 20 to 25 minutes, and then allow to cool on a rack.
  • Serve with glasses of cold milk.
