HOISIN STEAK AND PEPPER STIR-FRY



Hoisin Steak and Pepper Stir-Fry image

1 1/4 lb. boneless sirloin steak (3/4 to 1 inch thick)
1/3 c. hoisin sauce
1/3 c. low-sodium soy sauce
2 tbsp. packed light brown sugar
1 tbsp. rice wine vinegar
2 tbsp. grated peeled fresh ginger
2 tsp. Sriracha, plus more to taste
3 garlic cloves, grated
2 tsp. cornstarch
4 tbsp. peanut or vegetable oil
3 red and/or yellow bell peppers, sliced 1/4 inch thick
White rice, for serving
Sliced scallions and chopped cilantro, for topping

Steps:

  • Thinly slice the steak against the grain and put in a large bowl.
  • Mix the hoisin sauce, soy sauce, brown sugar, vinegar, ginger, Sriracha, garlic and cornstarch in a separate bowl. Add ¼ cup of the sauce to the bowl with the steak and toss. Let marinate for 5 to 10 minutes.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add half of the bell peppers and cook, stirring, until blackened in spots, about 1 minute. Spread out on a baking sheet and repeat with another 1 tablespoon oil and the remaining peppers. Add to the baking sheet. (Spreading out the peppers prevents them from steaming.)
  • Add 1 tablespoon oil to the skillet. Add half of the steak in an even layer. Let cook about 20 seconds so that it starts to color, then toss and continue cooking just until the meat is no longer pink, another 30 seconds. Empty the steak onto a plate. Repeat with the remaining oil and steak.
  • Return the steak and peppers to the skillet and stir in the remaining sauce. Cook, tossing, until everything is well coated, about 1 minute. Serve over rice and top with scallions and cilantro.

This pepper steak stir-fry is how I remember it was at a Chinese restaurant that I worked at while in college. Just onion and green pepper, but I've been known to add fresh mushrooms. Serve on a bed of rice.

1 pound beef tenderloin, sliced across the grain
¼ cup hoisin sauce, or to taste
2 tablespoons sesame oil
1 tablespoon minced fresh ginger root
1 teaspoon minced garlic
1 green bell pepper, sliced into strips
1 medium onion, sliced into strips
½ (8 ounce) package sliced fresh mushrooms
1 tablespoon cornstarch
½ cup beef stock, divided
1 teaspoon toasted sesame seeds

Steps:

  • Paint beef strips with hoisin sauce; let marinate at least 1 hour, or overnight.
  • Heat a wok or large skillet over medium-high heat. Add oil. Saute ginger and garlic for 5 seconds. Add bell pepper, onion, and mushroom. Cook and stir until vegetables are lightly tender, 3 to 5 minutes. Set aside in a bowl.
  • Add beef strips to the hot wok. Saute to desired doneness; for rare, cook until browned on the outside and red in the center, about 2 minutes per side.
  • Mix cornstarch with 1/2 of the stock in a small bowl.
  • Add the vegetables to the steak in the wok; pour in remaining stock. Stir for a few minutes and add the cornstarch mixture. Cook and stir until thickened and bubbly, 3 to 5 minutes. Sprinkle sesame seeds on top to serve.

1 tbsp soy sauce
1 tbsp dry sherry
2 tsp sesame oil
1 fat garlic clove , crushed
1 tsp finely chopped fresh root ginger (or fresh ginger paste in a jar)
200g lean sirloin steak , thinly sliced across the grain
1 tbsp sesame seeds
1 tbsp sunflower oil
1 large carrot , cut into matchsticks
100g mangetout , halved lengthways
140g mushrooms , sliced
3 tbsp hoisin sauce
Chinese noodles , to serve

Steps:

  • Mix together the soy sauce, sherry, sesame oil, garlic and ginger in a shallow dish. Add the steak and leave to marinate for about 20 minutes (or longer, if you have time).
  • Heat a large heavy-based frying pan or wok, add the sesame seeds and toast over a high heat, stirring, for a few minutes until golden. Tip on to a plate.
  • When ready to cook, heat the sunflower oil in a large frying pan or wok until hot. Add the steak with the marinade and stir fry for 3-4 minutes over a high heat until lightly browned. Remove, using a slotted spoon, on to a plate, leaving the juices in the pan.
  • Toss the carrots in the pan and stir fry for a few minutes, then add the mangetout and cook for a further 2 minutes.
  • Return the steak to the pan, add the mushrooms and toss everything together. Add the hoisin sauce and stir fry for a final minute. Sprinkle with the toasted sesame seeds and serve immediately.

1 tablespoon olive oil
1 onion, finely chopped
6 ounces sirloin steaks, cut in very thin strips
1/2 teaspoon five-spice powder
4 ounces water chestnuts, sliced
1 red bell pepper, seeded and cut into thin strips
1/2 teaspoon garlic, crushed
1 green bell pepper, cut in thin strips
2 tablespoons hoisin sauce
1/2 cup beef broth
1 tablespoon cornstarch

Steps:

  • Heat the oil in a wok or large frying pan.
  • Stir fry beef until brown lightly.
  • Add peppers, onion, and stir fry for two to three minutes.
  • Add seasoning, water chestnuts, garlic puree, hoisin sauce, and stir fry for 1 minute.
  • Add the corn starch to beef broth.
  • Slowly stir the broth into the stir fry to thicken.
  • Serve over rice or noodles.
