There are a lot of dimensions to these collard greens: smoky pork, a little bit of acidic vinegar, and sweet cane syrup. That's real, true Southern greens.

1 tablespoon vegetable oil
2 ham hocks, cured and smoked
2 bunches collard greens
1 yellow onion, diced
5 cloves garlic, minced
4 cups chicken stock, plus more as necessary, precise amount will depend on dimensions of your pot
2 tablespoons cane vinegar, can be found at most Asian markets
2 tablespoons cane syrup

Steps:

  • In a heavy-bottomed pot, heat the vegetable oil. Add the ham hocks and sear on all sides. Meanwhile, prepare the collards by ripping the leaf away from the spine. Pile the greens on top of each other and cut into long strips; then cut the strips to make squares. Set aside.
  • When the ham hocks are lightly browned, add the onions and garlic to the pot; stir and sweat them until the onions are translucent and tender, 2 minutes. Add half of the greens and a cup of stock so the greens begin to wilt. Season with a pinch of salt (which will also help the wilting process) and stir to combine. Then, add the remaining greens and another cup of stock and cover to steam, about 2 minutes. Add 1-2 cups more stock, to just cover the greens and ham hocks. Season with more salt and pepper, reduce heat to a simmer, and cover. Cook, 1-1½ hours.
  • After 1-1½ hours, use tongs to remove the ham hocks to cool (they'll be falling off the bone). Add another ½ cup of stock, the cane vinegar, and the cane syrup to the greens. Stir, taste, and adjust seasoning if necessary. When the ham hocks have cooled, pull the meat off the bones, chop finely, and add back into the greens. Serve in a bowl with bits of ham hock and plenty of the "potlikker."

Steps:

  • WASH HAM HOCKS AND PUT IN LARGE POT ADD ALL OTHER INGREDIENTS (EXCEPT GREENS )COVER WITH WATER BRING TO A RAPID BOIL THEN TURN FIRE ON MED HEAT AND COOK UNTIL VERY TENDER ABOUT 2 HRS.
  • WASH GREENS ABOUT 7 TIMES WITH COOL WATER NOW DRAIN WELL AND ADD TO HAM HOCKS COOK ABOUT 45 MIN. ADD 3 TBLS COOKING OIL COOK ANOTHER 10 MIN. SERVE WITH CORN BREAD COOK CORNBREAD AS DIRECTED ON BOX

Steps:

  • Wash the greens thoroughly and drain them by shaking off any excess water. Remove the very thick part of the stems from the greens and coarsely chop the leaves. Cut the cabbage into quarters and cut the core from the cabbage pieces. Coarsely chop the cabbage and set aside. Put the ham hocks and enough cold water to cover them in a 4 quart saucepan over high heat. Heat to boiling, reduce the heat to simmering, and cook the hocks, covered, until almost tender, about 1 and a ½ hours. Stir in the chopped greens, salt, pepper, sugar, and thyme. Cook 30 minutes. Add the cabbage and potatoes and cook until all vegetables are tender, about 30 minutes. Check the seasonings and serve hot.

If you're craving Christmas ham, this is the recipe you need. It's simple, cheap and has a beautiful mustard and treacle caramelised glaze to top it off

4 ham hock , smoked or unsmoked, rind removed (you can ask a butcher to do this)
4 clementines , halved
½ tsp ground allspice
¼ freshly grated nutmeg
2 star anise
3 bay leaves
4 tbsp Dijon mustard
2 tbsp black treacle
6 tbsp soft light brown sugar

Steps:

  • The day before, soak the ham hocks in water overnight in the fridge, to draw out some of the salt (they may have already been soaked by the butcher, so check first).
  • The next day, drain the hocks and pat them dry. Heat oven to 160C/140C fan/gas 3. Mix the allspice, nutmeg and 1/4 tsp freshly ground black pepper together and rub into the hocks. Put them in a deep roasting tin with the clementines, cut-side up . Tuck the star anise and bay around the hocks, and pour in 200ml water. Cover the tin in foil and roast for 3 hrs.
  • Remove the tin from the oven and increase the heat to 180C/ 160C fan/gas 4. Unwrap the tin and drain off the liquid. Squeeze the juice from the clementines over the hocks and return the juiced halves to the tin. Mix the Dijon, treacle and sugar in a bowl and paint half the glaze all over the hocks. Return to the oven for 15-20 mins, turning and brushing with the remaining glaze every 5 mins until the hocks are burnished and caramelised in places. Shred or slice the meat and eat warm or cold. Leftovers will keep in the fridge for up to five days (and make the best sarnies!)

  • Add the ham hock and water and bring to a boil. Adding more water will result in more pot liquor, which some people simply can’t get enough of!
