This tastes like the old-fashioned, watched over fudge but takes no more than 5 minutes to make....you will love it!! You can also leave out the cocoa and it makes delicious peanut butter fudge.

Steps:
- Mix sugar, cocoa and milk in a saucepan. Bring to a rapid boil and boil for exactly one minute. Pour over peanut butter and vanilla and nuts in a bowl and beat until thick -- this only takes about a minute. Immediately pour onto a buttered platter and allow to cool. Cut into squares.
- Tip: Have your peanut butter and vanilla already in a bowl before boiling the mixture as you need to pour it over the peanut butter immediately.

Steps:
- Line 8 or 9 inch square pan with foil.
- Mix sugar, cocoa and salt in a heavy 4-quart saucepan.
- Stir in whole milk.
- Cook over medium heat, stirring constantly until mixture comes to a full rolling boil.
- Boil without stirring until mixture reaches 234 degrees on a candy thermometer or until small amount of mixture dropped into very cold water forms a soft ball.
- Remove from heat and add butter and vanilla. Do Not Stir. Cool at room temperature to 110 degrees.
- Stir in pecans.
- Beat with a wooden spoon until fudge thickens and just begins to loose some of its gloss.
- Quickly spread into prepared pan.
- Cool completely.
- Cut into square.
- Store in a tightly covered container at room temperature.

- Lightly grease a 9x12 baking pan.
- Measure out all the ingredients before starting.
- Melt the butter in a large stock pot over medium heat.
- Add the sugar and evaporated milk, then stir to combine.
- Bring to a rolling boil for 8 minutes. When the temperature reaches 285-degrees F, remove it from the heat.
- Quickly add the vanilla extract, peanut butter, marshmallow fluff, and chocolate chips.
- Beat vigorously for 3 minutes.
- Pour the fudge into the prepared pan and let set for 1 hour until completely set and cooled before cutting.

- Mix in a sauce pan the chocolate, brown and granulated sugars, milk and corn syrup.
- Stir over low heat until sugar is dissolved.
- Cook, stirring occasionally (to prevent scorching) to the soft ball stage (234°-240°F on a candy thermometer), or until mixture forms a soft ball when a small amount is dropped into cold water.
- During cooking, occasionally wash down crystals from sides of pan.
- Remove from heat, add the butter and let stand until mixture is cool.
- Do not jar the pan or stir during cooling.
- When cool, beat until candy begins to lose its glossy appearance.

PEANUT BUTTER CANDY (OLD FASHIONED FUDGE)
Steps:
- Set out a large and small microwave safe bowl. Set out an 8x8 inch baking dish and line it with parchment paper.
- For the peanut butter fudge, place the peanut butter, salted butter, vanilla extract in salt in the larger bowl. Microwave in one-minute increments, stirring in between, until the mixture is smooth and thin. Then stir in the powdered sugar a little at a time to form a smooth fudgy base.
- Move the peanut butter fudge mixture to the prepared pan. Press into an even layer. Use a butter knife to cut ridges/gashes in the top of the peanut butter fudge to create a swirly layer with the chocolate fudge.
- In the smaller bowl, combine the semisweet chocolate chips and butter. Microwave in one-minute increments, stirring in between, until the mixture is smooth. Stir in the powdered sugar and 1 teaspoon of milk. If the mixture is too thick to spread stir in a second teaspoon of milk.
- Pour the mixture over the top of the peanut butter fudge spread and press to work the chocolate fudge down into the crevices of the peanut butter fudge.
- Chill for at least 3 hours. Then lift the fudge out of the pan by the edges of the paper. Cut into 1-inch squares and place in an airtight container. Store at room temperature for up to two weeks.

- Grease the inside of a 9 x 9 baking dish or pan with butter. Line the dish with a piece of parchment paper that is long enough to hang over the sides, so that you can grab it to lift the fudge out later. There is no need to butter the parchment paper again. You can also use foil if desired.
- In a 2 quart heavy saucepan, combine the sugar, cocoa, salt, and milk. Mix and bring to a boil over medium heat. Place a candy thermometer on the side of the pan, if not using the cold water test, and cook mixture over medium heat, stirring slowly but constantly, until mixture reaches a soft ball stage (234 degrees) on a candy thermometer or forms a soft ball when tested in cold water. Immediately remove from heat.
- Add the butter, vanilla, peanut butter, and nuts, if using, and beat with a wooden spoon until thoroughly combined and mixture begins to slightly thicken. This should only take about 30 seconds. Immediately spread candy evenly into a prepared 9 x 9 baking dish. I use an offset spatula to spread it.
