Old Fashioned Molasses Oatmeal Cookies are thick, soft, dark oatmeal cookies made with molasses and oats.

1 1/4 cups all-purpose flour (160 grams)
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 cup vegetable shortening (98 grams do not substitute butter)
3/4 cup brown sugar (150 grams)
1/2 cup molasses (150-160 grams, Brer Rabbit Mild)
2 large or extra-large eggs
1 ½ cups rolled oats (old fashioned)
1 cup raisins
1 cup chopped (toasted pecans)

Steps:

  • In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon and ginger. Set aside.
  • In the bowl of a stand mixer, beat the shortening, brown sugar and molasses until cream. Add the eggs one at a time and beat until light, scraping sides of bowl often.
  • On lowest speed, blend in the flour mixture. When flour mixture is fully blended, stir in the oats, raisins and nuts.
  • Using a ¼ cup measure or a large cookie scoop, scoop out balls of dough onto a parchment lined baking sheet.
  • Bake at 350 degrees for 15 minutes. Let cool on baking sheet for about 3 minutes, then transfer to a wire rack.

1/2 cup butter, room temperature
1/2 cup brown sugar
1/4 cup sugar
1 egg
1 Tablespoon molasses
3/4 cup flour
1½ cups rolled oats
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon cornstarch
1/2 cup chocolate chips (Optional - I love the mini chocolate chips)

Steps:

  • In a small bowl combine - flour, oats, cinnamon, baking soda, salt and cornstarch - set aside
  • In a large bowl with electric mixer cream together the butter, brown sugar, white sugar, egg and molasses
  • Add the dry ingredients to the creamed ingredients and mix to combineAdd the chocolate chips
  • You can make these cookies any size you like - great big or small - baking time will vary depending on how big or small you make the cookies
  • Bake in a preheated 350° ovenGreat big cookies will take approximatly 15-17 minutesSmall cookies will take 8-10 minutes

1 1/2 cups granulated sugar
1 cup shortening
1/2 cup molasses
2 eggs
3 teaspoons baking soda
1/2 cup water
5 1/2 cups Gold Medal™ all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon salt
1 envelope plus 2 teaspoons unflavored gelatin
1 cup cold water
1 cup granulated sugar
2 1/4 cups powdered sugar
1 1/2 teaspoons vanilla
1 teaspoon baking powder
1/8 teaspoon salt

Steps:

  • In large bowl, mix 1 1/2 cups granulated sugar, the shortening, molasses and eggs until well blended. In small bowl, dissolve baking soda in water; stir into molasses mixture. Stir in remaining cookie ingredients until well blended. Cover and refrigerate at least 2 hours.
  • Heat oven to 375°F. Lightly grease cookie sheet. On floured surface, roll dough 1/4 inch thick. Cut with floured 2 3/4-inch round cutter (or cut with clean food can with both ends removed, such as rectangular-shaped pork luncheon meat can). Place about 2 inches apart on cookie sheet.
  • Bake 8 to 10 minutes or until light brown. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
  • In 2-quart saucepan, sprinkle gelatin on cold water to soften; stir in 1 cup granulated sugar. Heat to a rolling boil; reduce heat. Simmer uncovered 10 minutes. In large bowl, place powdered sugar and hot gelatin mixture. Beat with electric mixer on medium speed about 2 minutes or until foamy. Add vanilla, baking powder and salt; beat on high speed 12 to 15 minutes or until soft peaks form. Frost bottoms of cookies with frosting. Let stand until frosting is dry, 2 to 3 hours, before storing.

1 cup unbleached flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
14 tablespoons unsalted butter (1 3/4 sticks at room temp)
1 cup granulated sugar
1/4 cup light brown sugar (packed)
1 large egg
1 teaspoon vanilla
2 1/2 cups old fashioned oats (old fashioned type no instant stuff)

Steps:

  • Heat oven to 350°F - you will need 3 baking sheets lined with parchment paper (again the parchment keeps the cookie from burning and makes clean up faster).
  • Whisk together flour, baking powder, soda and salt.
  • Beat together with mixer at low speed - butter and sugar until the sugar granules are not visible. Increase speed and beat 1 minute longer, scrape sides as needed and add egg, beat another 30 seconds. Add flour mixture 1/3 at a time and incorporate well over med speed until mixture is smooth. Add oatmeal and stir into the dough using your rubber spatula.
  • Divide into 24 equal portions and bake for 13 to 16 minutes placing only one cookie sheet in the oven at a time and rotating the cookie sheet half way through your cooking time -- these are the best and the thinnest cookies and very crispy.

This was my Grandmother's recipe from the 1940's. These cookies use molasses in place of brown sugar, which was one of the items rationed during the war (and harder to get than white sugar, they tell me). To me they're better than regular oatmeal cookies!

2 cups all-purpose flour
2 cups oatmeal
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup sugar
¾ cup shortening
2 eggs, beaten
5 tablespoons light molasses
2 teaspoons vanilla extract
½ cup chopped walnuts
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together the flour, oatmeal, baking soda, baking powder, and salt.
  • In another large bowl, beat the sugar with the shortening until smooth and creamy; mix in beaten eggs, molasses, and vanilla. Gradually mix in the dry ingredients. Stir in walnuts and raisins. Drop by teaspoonfuls onto ungreased baking sheets.
  • Bake for 10 to 12 minutes, or until slightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I also made them for a very sweet older friend who said she hadn't tasted these since her mother made them when she was little, They make a ton and stay fresh for quite awhile. This works perfectly for Christmas or large amounts of company!

1 cup sugar
1 cup packed brown sugar
2 large eggs
1 tablespoon molasses
2 teaspoons vanilla extract
2 cups all-purpose flour
2 cups quick-cooking oats
1-1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup each raisins and chopped pecans
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, molasses and vanilla; beat well. , Combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture and mix well. Stir in the raisins, pecans and chocolate chips. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. , Bake at 350° for 9-10 minutes or until lightly browned. Cool on pans for 2 minutes before removing to wire racks.
