Applesauce Oatmeal Cake with Broiled Coconut Topping image

1 1/4 cups applesauce
1 cup old-fashioned oats
1/2 cup butter or margarine, softened
1 cup granulated sugar
1 teaspoon vanilla
2 eggs
1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup flaked coconut
1/2 cup packed brown sugar
1/3 cup chopped pecans or walnuts
1/4 cup butter or margarine, melted
3 tablespoons milk

Steps:

  • In 1-quart saucepan, heat applesauce to boiling over medium-high heat. Stir in oats. Let stand 20 minutes.
  • Heat oven to 350°F. Grease bottom and sides of 9-inch square pan with shortening. In large bowl, beat 1/2 cup butter and granulated sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until fluffy. Beat in applesauce mixture just until mixed. Stir in flour, baking soda, cinnamon, nutmeg and salt, scraping bowl once, just until blended. Pour into pan.
  • Bake 40 to 50 minutes or until toothpick inserted in center comes out clean.
  • Meanwhile, in small bowl, mix all topping ingredients until well blended. Spread topping over hot cake. Broil cake with top 6 inches from heat 1 to 2 minutes or until top is golden and bubbly. Cool 30 minutes. Serve warm.

  • In large bowl, beat granulated sugar, 1 cup brown sugar and 1/2 cup butter with electric mixer on medium speed until light and fluffy, scraping bowl occasionally. Beat in vanilla and eggs. Beat in oat mixture and remaining cake ingredients until well blended, scraping bowl occasionally. Spread batter evenly in pan.
  • Bake 35 to 45 minutes or until toothpick inserted in center comes out clean.
  • Set oven control to broil. In small bowl, beat 2/3 cup brown sugar, 1/4 cup butter and the half-and-half with electric mixer on high speed until smooth. Stir in coconut and nuts. Spoon over warm cake; spread to cover.
  • Broil 4 to 6 inches from heat 1 to 2 minutes or until bubbly and light golden brown. Cool completely, about 1 hour.

1 cup oatmeal (I use quick oats)
1/2 cup shortening or 1/2 cup margarine
2 eggs, beaten
1 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking powder (optional)
1 cup brown sugar
1 cup white sugar
1 cup margarine
1 teaspoon vanilla
1 teaspoon baking soda
1 pinch salt
6 tablespoons melted butter
2/3 cup brown sugar
1 cup coconut
1 cup chopped nuts
1/4 cup canned milk (may need 1/4 c more if to dry)
1 teaspoon vanilla

Steps:

  • Pour boiling water over oatmeal. Let it cool, and add all other ingredients 1 at a time.
  • Bake at 350 for 30 minutes.
  • While cake is baking, mix all topping ingredients together, when cake comes out of oven, top w/ the topping mixture and put it under the broiler for 3 minutes---be careful not to burn, watch it!
  • Serve warm or cooled.

1 1/4 cups boiling water
1/2 cup butter, (softened)
1 cup packed light brown sugar
3/4 cup granulated sugar

3/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder

Steps:

  • In a small bowl combine oats and boiling water. Let sit 15 minutes.
  • In a medium bowl, whisk together all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  • With electric mixer, beat butter until creamy. Add 1 cup light brown sugar and 3/4 cup granulated sugar. Beat until mixed well.
  • Beat in eggs one at a time.
  • Beat in vanilla.
  • With mixer on low speed, add flour mixture, alternating with oatmeal, mixing just until incorporated. Pour batter into prepared pan. Bake for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean.
  • In a medium saucepan, melt 1/2 cup butter. Stir in 1 1/3 cup light brown sugar and half-and-half and stir until sugar is melted. Remove from heat and stir in coconut, pecans, and 1/2 teaspoon vanilla extract.
  • Pour icing on top of hot cake. Place under broiler until icing is bubbly and starting to brown, about 2 to 3 minutes. Cool in pan. Serve warm or at room temperature.

1 cup (97g) rolled oats (old fashioned)
1/2 cup (113g) unsalted butter, (softened)
1/2 cup (105g) packed light brown sugar

1/4 tsp ground nutmeg

Steps:

  • Remove cake from oven once cooked through and pour and spread mixture evenly over top.
  • Preheat oven to broil then return cake to oven (in center) and broil until mixture is bubbly and coconut is just starting to toast on ends, about 1 - 2 minutes (don't walk away from it while broiling!).
  • Let cool on a wire rack for at least 20 minutes then cut into slices and serve.
