OLD FASHION CUCUMBER SALAD
I have always loved cucumbers in vinegar. My grandmother used to fix them and this tastes like hers. I can remember her saying that she started hers like her pickles so getting most of the water out of the cucumbers must be the trick. I can remember her putting left over onions and tomatoes into the vinegar mixture after a meal. Laura and I love this in the summer.

Steps:
- Place sliced cucumbers in bowl;sprinkle every few layers with salt.
- Cover cucumbers with a plate and weight them down with a heavy can.
- Let stand at room temperature for 2 hours.
- Drain cucumbers and press out remaining liquid.
- Stir together vinegar and sugar; pour over slices.
- Cover and refrigerate at least 4 hours.

GRANDMA'S CREAMY CUCUMBER SALAD
Steps:
- Finely slice the cucumber and finely dice the onion. All really, really fine :-)
- Add to a bowl and mix in the cream.
- Finish off the salad with the vinegar, sugar and salt.
- Mix well and let the salad rest for at least 2 hours for maximum taste.
- Enjoy!

CUCUMBER SALAD
Classic Southern cucumber and Vidalia onion salad in a sweet and tangy vinegar dressing

- To begin, we are going to make the brine or dressing if you prefer. Add the white vinegar (you can also use apple cider if that's your preference) and hot water to a mixing bowl.
- Add the sugar and kosher salt to the mixing bowl and whisk until completely dissolved. The liquid will be clear when everything is dissolved well.
- Allow the brine mixture to cool for half and hour.
- After the brine has cooled, peel the cucumbers. If desired, use the tines of a fork to score the sides of the cucumber. Scoring the cucumber makes a nicer presentation for me but it's completely optional.
- Slice the cucumber and add the slices to the brine. I slice the cucumbers about 1/4" or less while some prefer very thin slices, such as those you'll get from using a mandolin.
- Add the thinly sliced Vidalia onions to the brine with the cucumbers. Stir to combine everything together.
- Add cracked black pepper and fresh dill if desired.
- Cover and refrigerate one to three hours.
- Use a slotted spoon to remove salad from brine mixture before serving.

CREAMY CUCUMBER SALAD RECIPE
Steps:
- Line a baking sheet or wide bowl with 1-2 paper towels.
- Scatter CUCUMBER slices on paper towel in a single layer and lightly sprinkle SEA SALT over the surface. Repeat this with a second layer.
- Allow cucumbers to rest 15 minutes (this brings moisture to the surface). Use a towel to pat the resting cucumbers dry, then transfer to a mixing bowl.
- For the dressing: In a separate mixing bowl, whisk together SOUR CREAM, GARLIC, DILL, BLACK PEPPER, and WHITE VINEGAR.
- For the salad: Add RED ONIONS and DRESSING to the sliced cucumbers and toss until well-combined. Serve immediately or refrigerate in an airtight container until ready to serve.

- Slice the cumbers into thin rounds and place in a large bowl.
- Slice the onion into thin rounds and then slice those rounds in half (for thin "half-moon" shaped strings), and place them in the bowl with the cucumber slices.
- Now add the dill, vinegar, water, sweetener, salt, and pepper.
- Toss everything together with your hands, cover the bowl, and then chill in the fridge overnight (or at least 8-12 hours).

MY MOTHER'S EASY CUCUMBER SALAD WITH TOMATOES AND CHIVES
This is the way my mother made a very tasty salad for us, mostly in the summertime. We didn't have the English cucumbers that are available now but use them if you wish. The chives grew in our Chicago suburb garden and volunteered every year -- right next to the old fashioned green rhubarb. The tomatoes came from our "Victory Garden" -- anyone remember those? What memories this salad evokes!

- Peel the cucumber. Sometimes we just dragged a fork down the unpeeled cucumber over and over to create a striped design. Chop the cucumber into quarter-inch pieces. We always included the seeds in the regular cucumbers, but nowadays, chefs would probably leave them out.
- Combine the cucumber, vinegar and chives in a medium bowl. My mother used plain white vinegar, but you may wish to experiment with one of the many vinegar varieties.
- Chop the tomato into roughly the same size pieces as the cucumber pieces. Add to the bowl and salt to taste.
- Refrigerate about 4 hours until nicely chilled and serve with a slotted spoon.
