HOT SPINACH AND CRAB DIP

2 tablespoons unsalted butter
1 small onion, finely chopped
1 clove garlic, finely chopped
Kosher salt and freshly ground black pepper
8 ounces cream cheese
1 teaspoon Worcestershire
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1/8 teaspoon cayenne
1 pound frozen chopped spinach, thawed and squeezed very dry
8 ounces lump crabmeat, picked through for bits of shell
1/2 cup shredded Monterey Jack
3 tablespoons grated Parmesan
2 tablespoons panko breadcrumbs
Crackers, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Melt the butter in a medium pot over medium heat. Add the onion and garlic, season with salt and pepper and cook, stirring occasionally, until softened, about 6 minutes. Add the cream cheese, Worcestershire, dry mustard, paprika and cayenne, and stir until melted. Add the spinach and crabmeat, and stir until warm and bubbling. Stir in the cheeses and season with salt and pepper.
  • Transfer the dip to a small baking dish and top with the panko. Place the baking dish on a baking sheet and bake until bubbling and golden, about 15 minutes.
  • Serve hot with crackers.

It's an easy one-dish meal in the oven for this baked crab dip.

1 package (8 ounces) cream cheese, softened
1 cup mayonnaise
2 tsps old bay seasoning
1/2 tsp McCormick® Mustard, Ground
1 pound lump crabmeat
1/4 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350°F. Mix cream cheese, mayonnaise, Old Bay Seasoning and ground mustard in medium bowl until well blended. Add crabmeat; toss gently.
  • Spread in shallow 1 1/2-quart baking dish. Sprinkle with Cheddar cheese and additional Old Bay Seasoning, if desired.
  • Bake 30 minutes or until hot and bubbly. Serve with assorted crackers or sliced French bread.

I'm always experimenting and came up with this a few years ago. It is always a hit at get togethers. It is versatile also, you can add more or less of any of the ingredients to your liking or omit the spinach if you prefer. I love it as is though. Thanks and enjoy!

8 ounces cream cheese, softened
1/4 cup sour cream
2 -2 1/2 teaspoons Old Bay Seasoning
1/2 teaspoon onion powder
1/4 teaspoon fresh cracked black pepper
3 -4 ounces chopped fresh spinach, hard stem removed
8 ounces imitation crabmeat, cubed small
3 ounces extra-sharp cheddar cheese, cubed small

Steps:

  • Mix cream cheese, sour cream, Old Bay Seasoning, onion powder, and black pepper together in a bowl until well blended (Tip: try using lesser amount of the Old Bay Seasoning until your desired preference is reached).
  • Mix in the spinach. (Tip: Once I blended the spinach in a food processor to speed up the time but I did not like how it turned out this way. I recommend taking the few minutes to chop it by hand into about 1/4 inch pieces.).
  • Mix in the crab and cheddar cheese. (I like Cabot or McAdam cheeses).
  • Serve with crackers or chips.

7 1/2 ounces crabmeat, drained and flaked with a fork
1/2 cup parmesan cheese, grated
1/4 cup onion, finely chopped
2 tablespoons milk or 2 tablespoons half-and-half
1 teaspoon prepared horseradish
1 teaspoon Old Bay Seasoning
1/3 cup slivered almonds, toasted

Steps:

  • Mix all ingredients EXCEPT almonds until well blended in a bowl.
  • Pour mixture in a greased 9" pie plate or oven-proof serving dish. Top with almonds.
  • Bake for 15 minutes at 375 degrees. Serve with crackers, crostini or fresh veggies!

1/3 cup finely chopped sweet onion
2 garlic cloves, minced
1 package (8 ounces) softened cream cheese, cubed
1 package (5.2 ounces) Boursin garlic and fine herbs cheese
1/4 cup 2% milk
1/4 cup half-and-half cream
1/4 cup white wine or chicken broth
1 tablespoon seafood seasoning
2 teaspoons Worcestershire sauce
1 teaspoon Louisiana-style hot sauce
1/8 teaspoon crushed red pepper flakes, optional
2 cans (6 ounces each) lump crabmeat, drained and picked over
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 cups shredded cheddar cheese

Steps:

  • In a large nonstick skillet, heat oil over medium heat. Add onion and garlic; cook 3 minutes. Stir in cream cheese and Boursin until melted. Add milk, cream and wine, stirring constantly., Add seafood seasoning, Worcestershire, hot sauce and red pepper flakes. Stir in crab, spinach and cheddar cheese until cheese melts and mixture is bubbly. Serve warm with blue tortilla chips.

Baked Crab Dip With Old Bay and Ritz Crackers image

This crab dip is inspired by a recipe called "ritzy dip" from the "Three Rivers Cookbook," a Pittsburgh community cookbook published in 1973, in which canned crab is mixed with cream cheese, topped with Ritz crackers and baked. Fresh lump crab meat is the star in this updated version, with lemon juice, scallions and plenty of Old Bay seasoning to spice things up. This recipe doubles easily for larger groups, and the whole thing can be assembled and refrigerated up to a day in advance before being baked.

8 ounces fresh lump or jumbo lump crab meat
4 ounces cream cheese, softened
1/2 cup grated Parmesan
3 tablespoons mayonnaise
1/2 teaspoon fresh lemon zest plus 2 tablespoons lemon juice
1 scallion, trimmed and minced, plus more for serving
3/4 teaspoon Old Bay seasoning, plus more for serving
1/2 teaspoon kosher salt
1/4 cup crushed Ritz crackers (from about 7 crackers), plus more whole crackers for serving
Sliced English cucumbers and other crackers, for serving

Steps:

  • Heat the oven to 375 degrees and grease a shallow, 2-cup capacity baking dish or ovenproof skillet with butter.
  • In a medium mixing bowl, combine the crab meat, cream cheese, 1/4 cup Parmesan, mayonnaise, lemon zest and juice, scallion, Old Bay and salt; mix with a fork until thoroughly combined. Scrape the mixture into the prepared baking dish and smooth into an even layer.
  • In a small bowl, combine the remaining 1/4 cup Parmesan and the crushed Ritz crackers; sprinkle the mixture evenly over the dip.
  • Bake for about 25 minutes, or until bubbling and golden brown on top. Dust lightly with Old Bay, sprinkle with a few minced scallions, and serve hot with sliced cucumbers and crackers.
